BBQ Bacon Wrapped Chicken Bites are simple, quick , and delicious. Chicken smothered in barbecue sauce and wrapped in bacon make for a popular appetizer at any gathering!

2-3 boneless, skinless, chicken breasts (cut into 1-inch pieces)
8 oz bacon (cut into thirds)
1/2 - 1 cup BBQ sauce (We love Sweet Baby Ray's)
toothpick

Steps:

  • Line a large baking sheet with aluminum foil and lightly spray with cooking spray.
  • Wrap each piece of cubed chicken with a small strip of bacon. Secure with a toothpick and place on your baking sheet. Brush with desired amount of BBQ sauce.
  • Bake at 350 for 45 minutes - 1 hour. Remove from oven and add more BBQ sauce as desired. Serve warm.

Sweet smoky bacon wrapped around tender chicken bites is the perfect appetizer.

3 chicken breasts (boneless, skinless )
1 lb bacon
1 cup barbecue sauce
1/2 cup brown sugar

Steps:

  • Preheat oven to 375 degrees F.
  • Cut chicken into 1 inch or bite sized cubes. Cut the bacon package in thirds.
  • Take one cut strip of bacon and lay a cube of chicken on top. Roll the bacon/chicken up and secure with a toothpick.
  • Combine the BBQ sauce with the brown sugar. Brush the roll ups with the mixture (see note below).
  • Place the chicken/bacon rolls on a parchment lined baking sheet and bake for 10 minutes.
  • Turn them over, baste with remaining BBQ sauce and place in oven for another 10-15 minutes or until cooked through.
  • If you'd like a crispier finish you can broil for a few minutes before serving.

12 bacon strips, halved
10 ounces boneless skinless chicken breasts, cut into 24 cubes
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup orange marmalade
1/4 cup soy sauce
2 garlic cloves, minced
1 teaspoon grated fresh gingerroot
Sweet-and-sour sauce, optional

Steps:

  • Place bacon on a broiler rack. Broil 4 in. from the heat for 1-2 minutes on each side or until partially cooked; cool. , Wrap a piece of bacon around a chicken cube and water chestnut slice; secure with a toothpick. In a large resealable plastic bag, combine the marmalade, soy sauce, garlic and ginger. Add wrapped chicken; seal and carefully turn to coat. Refrigerate for 2 hours., Drain and discard marinade. Broil chicken for 3-4 minutes on each side or chicken is no longer pink and bacon is crisp. Serve warm with sweet-and-sour sauce if desired.

CHICKEN BITES
non stick cooking spray
2 boneless, skinless chicken breasts, cut into 1-inch cubes
8 oz bacon, cut into thirds
1/2 c spicy sweet bbq sauce (recipe below), or your favorite
21 toothpicks
SPICY SWEET BBQ SAUCE
1 1/2 c brown sugar
1/2 c chile sauce
1/2 c captain morgan spiced rum
1/4 c low-sodium soy sauce
1/4 c ketchup
1/4 c worcestershire sauce
2 clove garlic, crushed
1 tsp ground dry mustard
black pepper, to taste

Steps:

  • 1. Wrap chicken pieces in bacon.
  • 2. Combine all sauce ingredients in a medium saucepan over low heat. Bring to a boil.
  • 3. Reduce heat and simmer chicken & bacon for 30 minutes, or until chicken is cooked and sauce is thickened as desired. Stir occasionally.
  • 4. Use immediately as you wish, or store in refrigerator until ready to use.
