Chinese BBQ Pulled Pork Sliders with Pickled Cukes and Carrots and Sweet-and-Hot Mustard Sauce image

1/4 cup light brown sugar
2 tablespoons salt
1 tablespoon ground black pepper
1 tablespoon Chinese five-spice powder
1 tablespoon garlic powder
1 tablespoon ground ginger
1 tablespoon onion powder
1 boneless pork butt or shoulder, fat cap scored deep (about 5 pounds)
Butter, for griddling
12 slider rolls, preferably King's Hawaiian
Pickled Cukes and Carrots, for serving, recipe follows
Sweet-and-Hot Mustard Sauce, for serving, recipe follows
Sweet Chile Sauce, for serving, optional
2 cups rice vinegar
1/4 cup sugar
2 teaspoons kosher salt
1 cup shredded carrots
1 cup half-moon slices English cucumber
1 teaspoon crushed red pepper
1/4 cup dried mustard
1/4 cup boiling water
2 tablespoons honey
1 tablespoon toasted sesame oil
1 tablespoon vegetable oil
1/2 teaspoon kosher salt
1/2 cup rice vinegar
1/4 brown sugar
1/4 teaspoon table salt
1 to 2 tablespoons crushed red pepper
1 tablespoon fresh grated ginger
1 clove garlic, grated

Steps:

  • Mix the brown sugar, salt, pepper, five-spice powder, garlic powder, ground ginger and onion powder in a bowl, and then rub all over the pork. Place on a wire-racked baking sheet. Cover with plastic wrap and let it sit for 2 hours, or preferably overnight in the refrigerator.
  • Preheat the oven to 325 degrees F with the oven rack in the middle position.
  • Remove the plastic wrap and cover the pork with a layer of parchment paper. Then seal over the top with aluminum foil. Roast for 3 hours. Remove, uncover and drain any liquid fat. Return the pork to the oven and roast until the pork registers 200 degrees F on an instant-read thermometer and the pork is well browned, about 1 1/2 hours more. Transfer the pork to a large dish, cover with foil and let rest for 20 minutes.
  • Sandwich Build: Using two forks or your hands, pull apart the warm pork into shreds and chunks. Butter and griddle the rolls until golden brown. Place ample quantities of pork on the bottom buns, then top with Pickled Cukes and Carrots and Sweet-and-Hot Mustard Sauce or Sweet Chile Sauce if desired.
  • Bring 1 cup water, the vinegar, sugar and salt to a boil in a saucepan until the sugar and salt are dissolved. Take off the heat, and add in the carrots, cucumbers and crushed red pepper and let sit for at least 30 minutes.
  • Mix the mustard, water, honey, sesame oil, vegetable oil and salt in a bowl until smooth.

  • Bring the vinegar, sugar and salt to a boil in a saucepan and cook until dissolved. Simmer until thickened and reduced by half, about 15 minutes. Stir in the crushed red pepper, ginger and garlic, and serve.

1 small onion
1/4 cup butter
salt and pepper

Steps:

  • Peel and slice carrots into bite-size pieces. Cut onion into rings.
  • Place into a metal 8x8 cake pan. Preferrably an old pan that you don't use.
  • Dot with butter and sprinkle with salt and pepper. Cover with foil.
  • Cook over med-low heat for approximately 20-30 minutes, turning often so as not to burn carrots.

These baby carrots are all grown up with a barbecue rub, the perfect char, and a cooling homemade sauce. We're going to treat the carrots as you would a barbecued brisket by coating them in a homemade rub and quickly charring them on the grill. You won't look at baby carrots the same again.

1/2 cup packed dark brown sugar
1/3 cup kosher salt
4 tablespoons hot smoked paprika
1 tablespoon ground black pepper
1 tablespoon granulated garlic
1 tablespoon onion granules or onion powder
1/2 tablespoon celery salt
1 tablespoon cayenne pepper
1 tablespoon ground cumin
1 cup plain Greek yogurt
2 tablespoons chopped fresh dill
1 tablespoon lemon juice
1/4 cup buttermilk
Salt and pepper to taste
1 pound baby carrots, cleaned and halved
1 tablespoon extra-virgin olive oil
1 cup barbecue rub, plus extra 1T
1/4 cup toasted pecans, crushed
2 tablespoons dill yogurt sauce

Steps:

  • FOR THE BARBECUE RUB: Combine all dry ingredients in a large bowl, mixing well. Place the baby carrots in a large bowl and coat with olive oil. Shake the bowl gently to ensure the oil covers all of the carrots. Add three tablespoons of the barbecue rub and shake to incorporate. Set aside for use. Note: You can store the remaining rub in an airtight container for future use.
  • FOR THE DILL-YOGURT SAUCE: In a medium bowl, combine the yogurt, dill, lemon juice and buttermilk. Whisk well. Season with salt and pepper. Reserve for use.
  • Light the charcoal using a chimney starter. Place real wood charcoal into the chimney. Place several sheets of loosely crumpled newspaper under the bottom of the chimney. Ensure the charcoal is red hot, should take approximately 20-25 minutes.
  • Spoon the carrots onto a grill screen over direct heat. Note: If you reserved the carrots in the fridge and they have released moisture, add another teaspoon of barbecue rub to the carrots before grilling. Cover grill for 5 minutes. Remove cover and check for doneness. They should be tender (when squeezed they should forgive). If not, cover and cook for another 3-5 minutes. It will take about 8-10 minutes total.
  • TO MAKE HOMEMADE TOASTED PECANS: Spread pecans on a sheet tray and place in a 350 degree oven for 8-10 minutes. Coarsely chop. Arrange finished carrots in a serving bowl. Garnish with pecans and dill yogurt sauce.

One Pan BBQ Chicken or Ribs with Potatoes and Carrots Recipe - (3/5) image

Very forgiving recipe, you can add more or less ingredients, depending on the size dish you need.
3 lbs of chicken pieces (your choice) or Country style ribs
6 to 8 potatoes, peeled (more if needed for larger group)
I leave my potatoes whole.
1 lb pkg of carrots, peeled, can leave whole.
2 large onions, whole or cut in half or quartered
2 bottles of your favorite BBQ sauce
2 empty BBQ bottles filled with water and sloshed around to release left in BBQ sauce.
Salt and pepper to taste

Steps:

  • Place chicken or ribs in large roasting pan, add all vegetables and salt and pepper. Pour BBQ sauce evenly over all, then pour in the 2 bottles of water. Cover with aluminum foil completely. Bake at 350 for 1 1/2 hours, reduce heat to 300 for about 1 hour, reduce heat to 275 for another hour or two. I usually let mine cook most of the afternoon til supper time. Serve with sauce from pan.
