8 slices bacon
4 boneless chicken breasts, skin on
½ teaspoon salt
½ teaspoon pepper
¾ cup Heinz Tomato Ketchup
⅓ cup maple syrup
2 tablespoons grainy Dijon mustard
2 tablespoons lemon juice
1 clove garlic, minced
Lemon wedges
Chopped fresh chives

Steps:

  • Cook the bacon until just opaque. Blot on paper towels. Sprinkle chicken evenly with salt and pepper. Wrap each chicken breast in bacon, securing strips in place with toothpicks. Set aside. Preheat the grill to medium-high.
  • Blend ketchup with maple syrup, mustard, lemon juice and garlic. Brush half the sauce all over chicken. Place chicken on grill and turn heat down to medium. Grill, turning and basting twice with remaining sauce until bacon is almost crisp, about 15 minutes or until chicken is cooked through.
  • Squeeze lemon wedges over chicken and sprinkle with chives. Remove toothpicks before serving.

I created this recipe from necessity! I had a craving for jalapeno poppers and had a pack of boneless skinless chicken thighs I needed to cook.(I mean, who hasn't had that dilemma?!)

8 boneless skinless chicken thighs
4 jalapenos, split length-wise in half seeded
1/2 lb hickory smoked bacon
1 (8 ounce) package cream cheese
1/2 cup of your favorite barbecue sauce

Steps:

  • Flatten each chicken thigh with a heavy pan or meat hammer or whatever you have.
  • Stuff each jalapeno halve with about a T of cream cheese.
  • Place the jalapeno in the chicken thigh and roll it up (doesn't matter if it closes all the way).
  • wrap each chicken thigh with 2 strips of bacon.
  • Bake in 325 oven for about an hour
  • For best results setup charcoal grill for indirect cooking (charcoal on one side meat on the other).
  • Cook low n slow for about 2 hours.
  • Baste with bbq sauce the last 30 minutes.

My love affair with bacon is never ending! Who can resist bacon, cheese and BBQ sauce?? This is something I came up with when I wanted something with a lot of flavor but wanted it to be simple. Enjoy!!

4 large boneless, skinless chicken breasts
12 slice bacon
1 c favorite bbq sauce, i love sweet baby ray's original
1 c shredded sharp cheddar cheese

Steps:

  • 1. Preheat oven to 350 degrees. Line a large jellyroll pan (or large cookie sheet with rim) with foil so it's hanging over a little. Line up bacon side by side in jellroll pan (may overlap a bit) and bake for 12 minutes. You want to partially cook it and still have it limp. Do not drain off bacon grease from jellyroll pan, you will need this later in the pan. Increase oven temp to 400 degrees.
  • 2. Trim your chicken breasts of excess fat, if any, and slice chicken breasts in half lengthwise so you have two large tenders from each whole breast. Take 4 of your pieces of bacon and cut in half. Wrap 1 whole and 1 half piece of bacon around each chicken breast tender making sure ends of bacon are tucked under bottom of chicken piece.
  • 3. Place all of your bacon wrapped chicken in same jellyroll pan you cooked the bacon in with reserved bacon grease. Baste chicken pieces with BBQ sauce, using about 1/2 cup of sauce. Bake in oven for 20 minutes, check for doneness. Remove from oven and baste chicken with remaining BBQ sauce. Turn oven to broil and broil chicken for 3~4 minutes to crisp up the bacon and carmalize the BBQ sauce slightly. Keep an eye on it so it doesn't burn.
  • 4. Remove from oven and place chicken on serving platter. Sprinkle the cheddar cheese over all of the chicken and let melt. Enjoy!!

8 slice(s) bacon
4 - boneless, skinless chicken breasts
3/4 cup(s) jack daniels bbq sauce

Steps:

  • Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. Spray a lg skillet w/ cooking spray and place over medium heat.
  • Cook bacon in skillet until almost crispy. Drain on paper towels. Brush some of the bbq sauce on each chicken breast.
  • Wrap each chicken w/ 2 slices of bacon in an X shape. Place chicken in pan. Bake 30 mins. Spread chicken w/ remaining bbq sauce. Bake 10 more mins, or until chicken is cooked through.
