2 oz. Pina Colada Mix
1 oz. Dark Rum
1 oz. Cream of Coconut
1/2 Banana (sliced)
2 cups ice
Cool Whip (optional)
Maraschino Cherries (optional)

Steps:

  • Place all ingredients in blender and mix.
  • Add cool whip and maraschino cherries, optional.

4 ounces full-fat coconut milk
4 ounces Irish cream liqueur
2 ounces dark rum, plus a rum floater, optional
2 teaspoons instant coffee
3 frozen bananas

Steps:

  • Add the coconut milk, Irish cream liqueur, dark rum, instant coffee, bananas and 1 cup ice to a blender and puree until smooth. Pour into glasses and add a rum floater by pouring a shot of rum over the top. Serve!

BBC Cocktail (Baileys, Banana, Coco Lopez) is a decadent frozen dessert drink. They are perfect for summer blended with ice. My co-worker introduced these to me. Think she first discovered them on a cruise vacation then recreated them back at home. They are the latest rage amongst our circle of friends now. Some people add a dash of pineapple juice too, but haven't done that yet. Also, can be made with fresh banana blended in as well.

1 ounce Baileys Irish Cream (Liquor)
1 ounce banana liqueur
1 -2 ounce Coco Lopez
1/2 cup ice
1 tablespoon chocolate syrup (Hershey's Brand for Garnish)

Steps:

  • In blender, combine all ingredients except the chocolate syrup. Blend until smooth. You can adjust amount of alcohol vs. Coco Lopez & ice to suit your liking to make it more or less strong.
  • Serve immediately in chilled Martini glasses drizzled with the chocolate syrup.

2 bananas, broken into chunks
6 fluid ounces banana liqueur
6 fluid ounces Irish cream liqueur
6 fluid ounces coconut cream
6 cups crushed ice

Steps:

  • In a blender combine the bananas and banana liqueur; blend until smooth. Blend in the Irish cream and coconut cream (Note: Make sure the coconut cream is at room temperature, or you will not be able to pour it). Finally, add the ice and blend until smooth.

6 chocolate brownies (about 250g/9oz), broken up, or use crumbled chocolate biscuits or loaf cake
3 bananas , sliced
500g pot vanilla custard
6 tbsp toffee sauce
25g chocolate , grated

  • Mix the cream with 1 tbsp Baileys, and set aside. Divide the brownie pieces between 6 glasses, then drizzle each with 1 tbsp Baileys. Top with the sliced bananas, custard and Baileys cream, dividing equally, then drizzle with toffee sauce and finish with grated chocolate. Can be made a few hours ahead.

2 lbs medium shrimp (peeled and deveined)
1 cup onion, finely chopped
1/4 cup butter
1/4 cup flour
3/4 cup cream of coconut (Coco Lopez)
2 1/2 cups half-and-half
1 tablespoon curry powder (or more to suit your taste)
1 teaspoon salt
1/2 teaspoon fresh ginger, finely grated
1/4 cup fresh lemon juice
cilantro (to garnish) (optional)
chopped macadamia nuts (to garnish) (optional)
hot cooked rice

Steps:

  • In a large skillet, add butter, onions and ginger -- cook until tender. Stir in flour; gradually adding half and half - whisk until smooth. Add cream of coconut, curry, salt and pepper. Cook over medium heat until thickened. Add lemon juice, reduce heat and simmer uncovered 20 minutes. Add shrimp and cook 5-10 minutes (just until shrimp are pink - don't over cook). Serve over rice and garnish with cilantro. You could add some chopped macadamia nuts on top as well.
