COFFEE BAVARIAN CREAM



Coffee Bavarian Cream image

This is a wonderful,smooth and creamy filling for your cream puffs, donuts, or filling for your cakes. You can add more coffee granules if you like or even less, it's still great! FYI-heavy cream has 36-40% milk fat content; it's also known as heavy whipping cream. Don't compare it to British double cream. Hint: put your beaters (for your hand mixer) and also the bowl in the freezer for about 30 minutes before you beat the cream. You can garnish this dessert with extra whipped cream or chocolate covered coffee beans as a classy touch.

1/4 cup water
1/4 ounce unflavored gelatin, plus
1 teaspoon unflavored gelatin (1 envelope plus 1 tsp.)
1 1/2 cups whole milk
1 tablespoon instant coffee granules
5 large egg yolks
7 tablespoons sugar
1 cup heavy cream

Steps:

  • Pour the water into a small bowl and sprinkle the gelatin over it. Let stand until ready for use.
  • Pour the milk into a small saucepan and whisk in the coffee granules. Place the saucepan over medium-high heat and bring the milk just to the boil, whisking to dissolve the coffee.
  • Put the egg yolks into a bowl and whisk just to blend them. Add the sugar and continue to whisk.
  • Gradually whisk the hot milk into the egg yolks. Note: when you whisk in the hot milk, be sure to do it very slowly, or you will have scrambled eggs. Pour the mixture back into the saucepan and place over medium low heat.
  • Cook, stirring constantly and scraping the bottom of the pan, until mixture thickens and reaches 165°-170°F on an instant-read thermometer. If you don't have a thermometer, dip a metal spoon in the sauce and run your finger down the middle of the the back of the spoon. It should leave a clear trail.
  • Remove from heat and whisk in the gelatin until it is completely dissolved.
  • Pour the mixture into a large bowl and allow to cool to room temperature.
  • Place the bowl in the refrigerator and stir about every 5 minutes. After 20 minutes remove the mixture.
  • Whip the cream until soft peaks form. Gently fold the cream into the custard.
  • Lightly oil a 4-5 cup mold. Pour the custard into the mold and refrigerate, until set, at least every 2 hours.

1/3 cup non-dairy powdered coffee creamer
1/3 cup sugar
1/3 cup instant coffee
2 tablespoons cocoa
5 peppermint candies, hard, finely crushed

Steps:

  • In small bowl combine nondairy creamer, sugar, instant coffee, and cocoa. Set aside.
  • Finely crush candies in food processor, blender, or with tenderizing mallet. Add to dry mixture.
  • Store in airtight container and if giving as a gift, include a label that says to use 2 to 2½ teaspoons per cup of boiling water.

1 c granulated sugar
1 tsp rounded loose, dried peppermint leaves
2/3 c nondairy creamer

Steps:

  • 1. Crush the peppermint leaves to a powder. Mix thoroughly all the ingredients. Place in a jar and add a tag on how to use.
  • 2. To use: Add approximately 2 rounded teaspoons per cup of boiling water, or less, to suit your own taste.

1 (8 ounce) carton sour cream
1 teaspoon cinnamon

Steps:

  • Mix crust ingredients like pie crust.

  • Pour over crust mixture.

I first had this drink at a ski lodge in Breckenridge Colorado and I was hooked! This drink is a real warmer and delicious too! Normally I am not crazy about mint but Peppermint Schnapps is surely an exception!

1/2 ounce peppermint schnapps
1 ounce Kahlua
6 ounces hot black coffee
1 teaspoon sugar (optional if you don't like your coffee really sweet like I do!)
whipped cream (I like a lot!)
chocolate shavings

Steps:

  • Add Peppermint Schnapps, Kahlua, and coffee to a large mug.
  • Stir in sugar - if desired.
  • Place mug in microwave oven and heat for 20 seconds or until desired warmth is achieved.
  • Float the whipped cream on top (I actually stir some in first, then float some on top).
  • Top whipped cream with chocolate shavings (if desired).

1/3 cup sugar
1/4 cup coffee freeze-dried granules
2 tablespoons unsweetened cocoa
4 peppermint candies crushed

  • * "Take advantage of a large empty coffee can. Cover can with foil wrapping paper. Put coffee mix in a plastic reclosable bag. Line can with tissue, tuck in a small coffee mug with recipe for using mix, fill with small amaretti cookies (or favorite homemade treats), and add bag of coffee mix. Place lid on can and top with a bow." In a small bowl, mix coffee creamer, sugar, coffee granules, cocoa powder, and candy. Store in an airtight container.To use, stir mixture before measuring.
