2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1/2 cup plus 1 tablespoon extra-virgin olive oil
3 large ears yellow corn, husked
1 cup chopped green onions
2 1/4 cups water
1 1/2 cups basmati rice*
1/2 teaspoon salt
1 1/4 cups coarsely chopped toasted pecans
3 bunches watercress (about 12 ounces total), stems discarded

Steps:

  • Whisk red wine vinegar and mustard in large bowl to blend. Gradually whisk in 1/2 cup oil. Season vinaigrette to taste with salt and pepper.
  • Using large sharp knife, cut corn kernels from cobs. Heat 1 tablespoon oil in heavy large skillet over medium heat. Add green onions; sauté 30 seconds. Add corn; sauté until corn is crisp-tender, about 5 minutes. Season with salt and pepper. (Vinaigrette and corn mixture can be prepared 1 day ahead. Cover separately; chill. Rewarm corn mixture over medium heat and rewhisk vinaigrette before using.)
  • Bring 2 1/4 cups water to boil in heavy medium saucepan. Rinse rice in strainer. Add rice and § teaspoon salt to boiling water. Reduce heat to low. Cover and cook until water is absorbed and rice is tender (do not stir), about 20 minutes. Remove from heat. Let stand 5 minutes. Fluff with fork.
  • Mix rice, corn mixture and pecans in large bowl. Mix in vinaigrette and watercress. Season with salt and pepper. Serve warm or at room temperature.

Steps:

  • Combine 4 cups water and rice in large saucepan. Bring to boil. Cover; reduce heat and simmer until tender, about 35 minutes. Drain if necessary. Transfer rice to large bowl. Fluff with fork. Cool. Mix in green onions, celery, parsley, pecans, currants and walnuts.
  • Whisk olive oil, lemon juice, soy sauce and cumin in small bowl to blend. Pour over rice salad; toss to coat. Season to taste with salt and pepper and serve.

3 tablespoons peanut oil, plus 1 tablespoon for the cashews
1 medium yellow onion, peeled, halved and thinly sliced
1 clove garlic, chopped
1 tablespoon grated fresh ginger
2 cups basmati rice, rinsed several times in cold water and drained well
Salt and freshly ground pepper
1/4 cup raw cashews, halved
2 cups unsweetened coconut milk
2 cups water
1/2 cup thinly sliced green onion
1/4 cup grated fresh coconut

Steps:

  • Heat oil in a medium saucepan. Add onion, garlic and ginger and cook until soft. Add the drained rice, salt and pepper and cook for 3 to 4 minutes.
  • While the rice is cooking, heat the remaining tablespoon of oil in a small saute pan over medium heat. Add the cashews and cook until lightly golden brown. Drain on paper towels.
  • Place coconut milk and water in a medium saucepan and bring to a simmer. Add the hot liquid to the rice and bring to a boil. Reduce the heat, cover and cook for about 15 to 20 minutes. When the rice is cooked, remove from the oven and fold in the green onion, and coconut. Spoon the rice onto a platter and garnish with the toasted cashews.

1 quart water
8 ears corn, kernels cut from cob
3 tablespoons corn oil
1 lemon, juiced
½ cup red wine vinegar
½ cup corn oil

salt and pepper to taste
3 tomatoes - peeled, seeded and diced
1 large red onion, diced
6 green onions, chopped

Steps:

  • In a medium pot, bring the basmati rice and water to a boil. Reduce heat to low, cover, and simmer 20 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). In a bowl, toss the corn kernels with 3 tablespoons corn oil. Spread the corn on a large baking sheet. Bake 15 minutes, stirring occasionally, until lightly browned. remove from heat, and cool.
  • In a bowl, mix the lemon juice, red wine vinegar, 1/2 cup corn oil, sugar, basil, salt, and pepper.
  • In a large bowl, toss together the cooked rice, cooked corn, tomatoes, corn oil mixture, red onion, and green onions. Cover, and chill at least 1 hour before serving.

2 cups basmati rice, rinsed until water runs clear and drained well
3 tablespoons vegetable oil
1 large onion, thinly sliced
2 cloves garlic, chopped
1 cinnamon stick
1 bay leaf
2 cloves
1 cardamom pod
1/2 teaspoon cumin
3 1/2 cups boiling water
1/2 cup golden raisins
Salt and freshly ground pepper
1/2 cup cashews

Steps:

  • Heat oil in a medium saucepan over medium-high heat, add the onions and garlic and cook until soft. Add the cinnamon, bay leaf, cloves, cardamom and cumin and cook for 1 minute. Add the boiling water and raisins and season with salt and pepper to taste. Let the water come back to a boil, stir once, cover the pot, reduce the heat and let cook for 12 to 15 minutes. Remove from heat and let sit 10 minutes. Remove lid and fluff with a fork, fold in cashews and reseason with salt and pepper to taste. Serve at room temperature.

1 medium yellow onion, halved and thinly sliced
1 clove garlic, finely chopped
1 tablespoon finely grated fresh ginger
6 cardamom pods
1 cinnamon stick
2 cloves
3 1/2 cups water or vegetable stock
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Pinch saffron
2 cups basmati rice, rinsed and drained well
3/4 cup frozen peas
1/2 bunch cilantro, leaves coarsely chopped
4 scallions, coarsely chopped

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onions and cook until they are lightly golden brown, stirring occasionally. Add the garlic and ginger and cook for 1 minute. Increase the heat to high, add the cardamom pods, cinnamon stick, cloves, water, salt, black pepper and saffron and bring to a boil. Stir in the rice, cover, reduce the heat and simmer until the rice is tender. Stir in the peas, cover, and let the pan sit off the heat for 5 minutes. Fluff with a fork and stir in the cilantro and scallions. Discard the cardamom pods, cinnamon stick and the cloves. Transfer the rice to a serving bowl and serve.

4 cups cold water
4 teaspoons salt
1/2 cup wild rice
1 1/2 cups basmati rice
2 inches fresh ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cumin
2 -3 tablespoons fresh lemon juice
1/2 cup peanut oil
salt & freshly ground black pepper
1/2 cup chopped green onion
1/2 cup dried currant, soaked in
1/2 cup marsala, until soft (20 minutes)
1/3 cup toasted pine nuts

Steps:

  • To cook the rice, bring 1 1/2 cups of the water and 2 teaspoons of the salt to a boil in a medium saucepan.
  • Add the wild rice, reduce heat to low, cover and simmer until the rice is tender, about 1 hour.
  • Combine the basmati rice and the remaining 2 1/2 cups water in a medium saucepan.
  • Let sit for 1 hour.
  • Then bring to a boil, add the remaining 2 teaspoons salt and the ginger, reduce heat to low, cover and simmer until the rice has absorbed all of the water and is tender, about 15 minutes.
  • Discard the ginger.
  • To make the vinaigrette, combine the nutmeg and cumin in a small bowl and whisk in the lemon juice.
  • Add the oil and season with salt and pepper.
  • To finish the salad, combine the wild rice and basmati rice while still warm in a large bowl.
  • Toss the vinaigrette with the rice, then stir in the green onions, currants and any remaining Marsala, and nuts.
  • Adjust the seasoning.
  • Serve at room temperature.

1 1/2 c basmati rice, rinsed and drained
3 c water
1 1/2 Tbsp butter
1 tsp salt
1 can(s) (15 oz) mandarin orange slices with juice
1/2 c currants or raisins
2 Tbsp white wine vinegar
2 Tbsp oil
1/2 c slivered almonds, toasted

Steps:

  • 1. Place water, salt and butter in medium saucepan. Bring to a boil. Add Basmati rice. Return to boil, reduce heat, cover and simmer for 15 minutes. Then remove from heat and let stand about 5 minutes. Fluff with a fork and allow to cool.
  • 2. Drain mandarin orange, reserving the juice. (You need about 3/4 cup of liquid. If you don't have enough, add a little orange juice, water or white wine to make up the difference)
  • 3. In a small saucepan, heat juice just to boiling. Add currants or raisins and set aside to cool. When cooled, mix in vinegar and oil.
  • 4. In a large bowl, toss together rice, currants, juice, oil and vinegar.
  • 5. Just before serving, add mandarin orange slices and slivered almonds. Best served at room temp.

LIMA BEAN AND BASMATI RICE SALAD

1 cup plain nonfat yogurt
3 teaspoons minced garlic
3 teaspoons olive oil (preferably extra-virgin)
1 cup basmati rice
1 1/2 teaspoons curry powder
1 teaspoon turmeric
2 cups water
1 teaspoon salt
1 10-ounce package frozen baby lima beans, unthawed
Tomato-Onion Topping

Steps:

  • Mix yogurt and 1 1/2 teaspoons garlic in small bowl. Cover and chill 1 hour. Heat 1 teaspoon oil in heavy medium saucepan over medium heat. Add rice; stir until coated with oil, about 2 minutes. Add curry powder, turmeric and 1 1/2 teaspoons garlic and stir 1 minute. Add 2 cups water and salt and bring to boil. Add lima beans. Reduce heat to medium-low; cover and simmer until rice is tender and water is absorbed, about 15 minutes. Season with salt and pepper. Cool. Stir in remaining olive oil.
  • Transfer rice mixture to large bowl. Spoon Tomato-Onion Topping over. Top with 1/4 cup yogurt mixture. Serve, passing remaining yogurt mixture separately.

225g basmati rice
450ml fish or vegetable stock (a cube is fine)
350g smoked haddock , skinned
150g pack sugar snap peas
3 spring onions , finely sliced
150g punnet cherry tomatoes , halved
50g bag rocket

Steps:

  • Put the rice and stock into a pan and bring to the boil, cover, reduce to a simmer and cook for 6 mins.
  • Cut the fish into chunks, arrange on the rice and cook for 2 mins. Sprinkle with sugar snaps and spring onions, cover and cook over a low heat for 2 mins more.
  • Gently fork the tomatoes and rocket into the rice.

2 cups basmati rice
1/2 cup clarified butter or vegetable oil
1 cup chopped yellow onions
2 teaspoons sliced garlic
1 teaspoon minced fresh ginger
Seeds from 6 cardamom seed pods, crushed to release the small seeds (discard pods)
1 cinnamon stick, broken in half
1 bay leaf
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon turmeric
1/2 teaspoon ground cumin
1/8 teaspoon cayenne
3/4 cup golden raisins
1/2 cup toasted slivered almonds
1/2 cup cooked chickpeas, drained
1/2 cup fresh peas, or defrosted frozen peas
1/2 cup chopped fresh cilantro

Steps:

  • Place the rice in a colander and rinse under cold running water. Place the rinsed rice in a large bowl and cover with 4 cups of water. Let soak 30 minutes. Drain and reserve the water for cooking. In a large pot, heat the butter over medium-high heat. Add the onions and cook, stirring, for 3 minutes. Add the garlic and ginger, and cook, stirring, for 45 seconds. Add the cardamom seeds, cinnamon sticks, bay leaf, salt, pepper, turmeric and cumin, and cook, stirring, until fragrant, about 45 seconds. Add the rice and cook, stirring, for 2 minutes. Add the reserved soaking liquid and raisins, and bring to a boil. Reduce the heat to low, stir, cover, and simmer until the water is absorbed and the rice is tender, about 20 minutes. Remove from the heat and let sit, covered, for 15 minutes. Fluff the rice with a fork and transfer to a large bowl. Combine with the remaining ingredients, and remove the cinnamon pieces and bay leaf. Serve warm or at room temperature.
