Delicious! This can be prepared ahead of time by making the simple syrup and chopping the fruits, just refrigerate seperately and then combine just before serving.

1/2 cup sugar
1/2 cup water
1/2 cup basil leaves, packed
1 tablespoon lime rind, grated
4 cups pineapple, cubed
3 cups strawberries, quartered
4 kiwi, peeled and sliced
2 cups mangoes, peeled and cubed

Steps:

  • Make the simple syrup by combining the sugar and water in a saucepan. Bring to a boil. Cook for a minute until the sugar is dissolved.
  • Remove pan from heat, stir in the basil and lime rind. Cool. Strain to discard the solids.
  • Combine the fruits in a large bowl. Drizzle with the simple syrup. Toss gently.

A refreshing summer dish that I stole off of the Davita web site. The basil adds a touch of that extra something a fruit salad needs. Hope you enjoy!

4 cups fresh pineapple
3 cups fresh strawberries
1/4 cup sugar
1/2 cup packed basil leaves
1 tablespoon lime zest
1/2 cup fresh blueberries

Steps:

  • Cube pineapple and quarter strawberries.
  • Combine sugar with 1/2 cup water in a saucepan; bring to a boil. Cook 1 minute.
  • Remove from heat and stir in basil and lime zest.
  • Cool to room temperature then strain through a fine strainer into a bowl; discard solids.
  • Combine pineapple, strawberries and blueberries in a large bowl. Drizzle with sugar mixture and toss to coat. Chill until ready to serve.

I created this salad because I had lots of fresh veggies and herbs from my garden that needed using up. It is so good, and because it makes its own dressing, it's very healthy as well. The flavor is best when left in the fridge overnight.

2 cups fresh baby spinach
2 tablespoons chopped fresh basil
1 pound campari tomatoes, seeded and minced
2 large seedless cucumbers, peeled and minced
1 large red onion, minced
3 cloves garlic, minced
1 teaspoon salt, or to taste
1 teaspoon cracked black pepper, or to taste

Steps:

  • Run spinach and basil through a food processor until finely chopped.
  • Mix spinach mixture, tomatoes, cucumbers, red onion, garlic, salt, and pepper together in a large bowl with an air-tight lid. Cover bowl and refrigerate salad, 8 hours to overnight.

I wanted to make a fruit salad, but needed to use the fruits currently in season (and on sale). Strawberries are the only ingredient that *just* went out of season. Try to serve this the same day it's made, as the cherries tend to turn everything red after a while.

1 lb bing cherry, pitted and halved
1 lb green grape, halved
6 nectarines, pitted and sliced
1 quart strawberry, capped and quartered
1 pint blackberry
1 pint blueberries
2 kiwi, peeled and and sliced
1/2 cup honey
2 limes
5 basil leaves
1 tablespoon Splenda sugar substitute

Steps:

  • Wash and prepare all the fruit and place in to a large bowl.
  • Zest the lime and place the zest into a small bowl.
  • Mince basil leaves and add to the lime zest.
  • Add the honey, the juice of both limes, and the Splenda to the mixture.
  • Whisk together and pour over the fruit.
  • Mix lightly and refrigerate at least an hour before serving, to allow the flavors to meld.
