CINNAMON-BASIL ICE CREAM
I started experimenting with herbal ice creams when I was teaching classes at our local college. Not only were the ice creams popular with my students, but my family loved them as well! One of our favorites is made with a variety of basil called cinnamon basil; however, unless you grow the variety yourself, it can be rather difficult to find. - In a small saucepan, heat milk to 175°. Remove from the heat; add basil and cinnamon stick. Cover and steep 30 minutes. Strain, discarding basil and cinnamon stick., Return to the heat; stir in sugar until dissolved. Whisk a small amount of the hot mixture into egg yolks. Return all to the pan, whisking constantly. Cook and stir over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, stirring constantly. Do not allow to boil. Remove from heat immediately., Quickly transfer to a large bowl; place bowl in a pan of ice water. Stir gently and occasionally until cool, about 5 minutes. Stir in cream and vanilla. Press plastic wrap onto surface of custard. Refrigerate several hours or overnight., Fill cylinder of ice cream maker no more than two-thirds full; freeze according to manufacturer's directions. (Refrigerate any remaining mixture until ready to freeze.) , Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze until firm, 2-4 hours. , If desired, sprinkle with ground cinnamon.

BASIL ICE CREAM

- Bring milk, basil, 1/4 cup sugar, and a pinch of salt to a boil in a 2-quart heavy saucepan, stirring, then remove from heat and let steep 30 minutes. Transfer to a blender (reserve saucepan) and blend until basil is finely ground, about 1 minute.
- Beat together yolks and remaining 1/4 cup sugar in a medium bowl with an electric mixer until thick and pale, about 1 minute. Add milk mixture in a stream, beating until combined well. Pour mixture into reserved saucepan and cook over moderate heat, stirring constantly with a wooden spoon, until mixture coats back of spoon and registers 175°F on thermometer (do not let boil). Immediately remove from heat and pour through a fine-mesh sieve into a metal bowl. Set bowl in a larger bowl of ice water and stir until cold, 10 to 15 minutes.
- Stir in cream and freeze in ice cream maker. Transfer ice cream to an airtight container and put in freezer to harden, at least 2 hours.
LEMON AND BASIL ICE CREAM

Steps:
- Heat the milk just to the boiling point, then add the basil leaves and lemon rind. Take off the heat and leave to infuse for 1 hour.
- Beat the sugar and yolks together until pale and fluffy. Strain the milk, pressing the basil and lemon rind to extract any last bits of flavour. Stir this into the egg and sugar mixture.
- Put your bowl on top of a sauce pan of simmering water. Stir the liquid in the bowl constantly until it thickens slightly. If you scrape the back of a spoon through the mixture and it leaves a path, your custard is ready. Immediately pour it into another bowl and leave to cool.
- When cool, add the lemon juice to the custard. In a separate bowl, beat the cream lightly. When the cream has thickened, add to the custard mixture.
- Freeze in an ice cream maker, stopping three times during the freezing process to beat the mixture with an electric beater.

SWEET-CORN AND BASIL ICE CREAM

- Combine milk, cream, corn, and basil in a medium saucepan. Bring to a simmer over medium-high heat, remove from heat, and cover. Let steep 10 minutes.
- Whisk together egg yolks, sugar, and salt in a large bowl. Gradually whisk in half of milk mixture. Pour egg-milk mixture back into pan and cook over medium heat, stirring constantly, until thick enough to coat the back of a wooden spoon, 6 to 8 minutes.
- Pour custard through a fine sieve into a bowl set in a larger bowl of ice water; discard solids. Let cool, stirring occasionally. Cover and refrigerate until cold, at least 1 hour; custard can be refrigerated up to 2 days ahead.
- Chill a loaf pan in freezer at least 10 minutes. Freeze and churn custard in an ice cream maker according to manufacturer's directions, then transfer to pan. Cover with plastic wrap and freeze until hardened, at least 2 hours; ice cream can be frozen up to 2 weeks ahead.
MINT OR BASIL ICE CREAM

- In a food processor, pulse together mint or basil leaves and sugar until pulverized and bright green.
- In a small pot, simmer heavy cream, milk, herb sugar and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream.
- Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer). Remove from heat and allow custard to steep for 30 minutes.
- Strain through a fine-mesh sieve into a bowl. Cool mixture to room temperature. Cover and chill at least 4 hours or overnight.
- Churn in an ice cream machine according to manufacturer's instructions. Serve directly from the machine for soft serve, or store in freezer until needed.

HOMEMADE STRAWBERRY BASIL ICE CREAM RECIPE - (4.1/5)

- Cook the strawberry mixture over med-low heat, stirring often, till the strawberries are softened, approx. 4-5 min. Mash with a potato masher or the back of a fork till they are roughly mashed. Reduce heat & simmer till the mixture is reduced slightly. Pour into a sm. liquid measuring cup, cover & refrigerate. Add the cream, milk, sugar & sea salt to a pot. Finely chop the basil, bruising & pressing it to release the oils. Add it to the pot. Warm the mixture over med-low heat, stirring often. Cook till the sugar is dissolved, approx. 5 min. Remove from heat & let steep for 15-20 min. Pour the mixture through a fine sieve into a lg. liquid measuring cup to strain out the basil. Press the basil leaves with a wooden spoon to release any extra liquid & as much flavor as possible. Cover & refrigerate. Refrigerate till the ingredients are very cold; at least afew hours or overnight. Begin by churning & freezing the base till it reaches about the halfway point (approx. 10 min.). Then add in the strawberry mixture & continue to churn till it reaches the desired consistency (approx. 10 more min.). Place in a freezer container & freeze for another few hours or overnight before serving.
BASIL ICE CREAM
Steps:
- Place the half-and-half, basil, sugar, salt and egg yolks in a blender. Blend until completely smooth.
- Transfer the mixture to a double boiler, and heat, stirring constantly, until the eggs just begin to thicken and the sugar has dissolved. Remove from the heat and strain through a fine-mesh sieve into a metal bowl. Set the bowl in an ice water bath to rapidly chill.
- Churn in an ice cream machine according to manufacturer's instructions. Freeze until ready to use.
LEMON BASIL ICE CREAM RECIPE - (4.4/5)

- Put the ice cream container from your ice cream maker in the freezer. Heat the milk and cream with the zest and basil along with a pinch of salt. Bring it up to a gentle boil, then shut of the heat and let it infuse. Make sure to stir so the bottom doesn't scorch. Let sit and infuse until no longer hot, but still warm. Separately, whisk together the egg yolks and the sugar until they are light in color from the air that you've incorporated. Set aside. Mix the basil milk in a blender until uniform. Temper the yolks by adding a bit of the warm liquid to them gradually. Keep stirring constantly, scraping down the sides to avoid scrambled eggs. Return it all to the sauce pan and stir it constantly over low heat until it thickens to the point where you can leave a track with your finger on the spatula. Let it cool for 10-15 minutes, then pour the liquid into the frozen ice cream container and run it through the ice cream maker for 50-60 minutes. -
CINNAMON BASIL ICE CREAM
This recipe is from the Herbfarm, a local restaurant outside of Seattle, WA. Nothing at this establishment tastes poorly.

Steps:
- Bring the milk to a simmer in a medium-sized saucepan.
- Stir in the basil and cinnamon stick, cover, and remove from heat.
- Steep 15 minutes, then pour the milk through a sieve, pressing down on the solids to extract all the liquid.
- Whisk together the egg yolks and sugar in a large mixing bowl.
- Whisk the cinnamon-basil flavored milk.
- Pour it back into the saucepan and stir constantly with a rubber spatula over medium heat just until the custard thickens enough to coat the back of a spoon (180 degrees) but no further or it may curdle.
- Pour the custard back into the mixing bowl and cool, either over ice or in the refrigerator, until the custard is very cold.
- Whisk in the heavy cream.
- Freeze in an ice cream maker.
- Store in a covered container in the freezer until firm enough to scoop.

STRAWBERRY BASIL ICE CREAM

- Place strawberries and basil in a bowl and let macerate in refrigerator for one hour. Combine the heavy cream, milk, half and half, sugar, vanilla and salt in another bowl and whisk or beat with an electric mixer until sugar is dissolved, about 2 minutes. Pour in strawberries, basil and the remaining juices. Whisk until just combined. Pour the mixture into the freezer bowl of an ice cream maker and freeze according to the manufacturer's instructions. BASIL ICE CREAM

- Blanch the basil leaves in boiling salted water for 5 seconds, then place in an ice bath. Drain and wring the basil dry in a dish towel. Chop coarsely.
- In a food processor, puree the basil with salt, vitamin C and just enough softened ice cream to make a puree (about 3 tablespoons). You should have about 1 cup basil puree. Add the remaining ice cream and puree. Quickly take the finished pureed ice cream and transfer it from the processor back to the freezer container. Add chocolate and mix in thoroughly. Place container in freezer. Freeze for at least 1 hour.
MR. AND MRS. MISCELLANEOUS BASIL-CHIP ICE CREAM
A gallon-size ziptop bag is the perfect vessel for storing the base while it chills.

- Set a large metal bowl inside another large bowl filled with ice water. Lightly beat egg yolks in a medium bowl. Bring cream, whole milk, and sugar to a simmer in a medium saucepan. Whisking constantly, gradually stream half of cream mixture into yolks. Return egg mixture to saucepan and cook over medium-high heat, stirring constantly with a wooden spoon, until mixture coats spoon, 2-3 minutes. Strain through a fine-mesh sieve into prepared bowl. Stir in condensed milk and salt. Let cool, stirring occasionally, 20-30 minutes, then stir in buttermilk.
- Using an immersion blender, mix base until smooth and silky. Add basil; mix until finely chopped. Cover and chill 2 days.
- Blend base with immersion blender; strain into an ice cream maker. Process according to manufacturer's directions.
- Meanwhile, grate chocolate on the large holes of a box grater into a large bowl. Add ice cream and fold to evenly incorporate chocolate. Transfer to an airtight container. Cover and freeze at least 2 hours before scooping.
