1/4 cup white balsamic vinegar
2 tablespoons olive oil
2 teaspoons country-style grainy mustard
1 pound cooked ditalini pasta
1/2 cup diced roasted red peppers (from water-packed jar)
1/4 cup chopped fresh basil leaves
Salt and ground black pepper
2 cups small mozzarella balls

Steps:

  • In the bottom of a large bowl, whisk together balsamic vinegar, oil and mustard. Add cooked pasta, red peppers and basil and toss to combine. Season, to taste, with salt and black pepper. Fold in mozzarella cheese.

2 tablespoons fresh basil, chopped or
2 teaspoons dried basil, crumbled
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1/2 teaspoon sugar
1/4 teaspoon pepper
2 tablespoons mozzarella cheese
2 teaspoons parmesan cheese

Steps:

  • For salad, arrange tomato slices on a large plate or platter. Sprinkle with basil.
  • In a small bowl, whisk together dressing ingredients. Pour over tomatoes.
  • Sprinkle with cheeses. Cover and refrigerate until ready to serve.

1 medium onion
3 -4 large garlic cloves
1/4 cup fresh basil leaf (tightly packed)
2 teaspoons dry basil
2/3 cup rice vinegar
1/2 cup balsamic vinegar
2 teaspoons honey
1/2 cup water
1/4 cup prepared mustard (coarse)
1/2 cup extra virgin olive oil

Steps:

  • Peel the onion and garlic cloves then mince together with the fresh basil leaves. Put in a jar and add remaining ingredients. Shake up and season as needed with salt and pepper. Store in a cool place. Each night simply shake it up and pour over a salad.
  • Variations:
  • For Thai-style dressing that is good over rice noodles, grains or vegetable salads, blend 1/2 cup dressing with 1 tbls. minced fresh chile, 1/4 cup minced fresh cilantro, 1 tbls. brown sugar, 1/2 cup crushed peanuts.
  • For ranch dressing: blend 1/3 cup of dressing with 1/3 to 1/2 cup buttermilk.

8 oz spaghetti, broken into thirds
6 oz mozzarella cheese, diced (1 1/4 cup)
1 1/2 c diced tomatoes
1/2 c diced Vidalia onion
DRESSING
1/4 c olive oil, extra virgin
1/4 c balsamic vinegar
5-6 fresh basil leaves, chopped
1 garlic clove, minced
1 tsp sugar
1/4 tsp Italian seasoning blend
1/4 tsp salt
freshly ground black pepper to taste

Steps:

  • 1. Cook pasta to desired doneness as directed on the package.
  • 2. Drain and rinse with cold water.
  • 3. In a bowl, combine cooked and cooled pasta with the remaining salad ingredients.
  • 4. In a small jar with lid, combine dressing ingredients. Shake well.

This is my go-to dressing, glaze and marinade. I make it weekly to always have on hand. It is a most versitile dressing/marinade that is perfect for any protien or salad on your lazy BBQ day. Just marinate the day before (or the hour) or drizzle on top of field greens. My favorite is to grill up several chicken breasts with this marinade then serve the chicken over field greens with this dressing. This also works well as a glaze and keeps in the fridge for several weeks.
