Steps:
- Pour 1 1/2 cups water into a multi-functional pressure cooker (such as Instant Pot®). Insert the trivet.
- Remove tough outer leaves and core from the cabbage. Place cabbage, core-side down, on the trivet.
- Close and lock the lid, and set vent to sealing. Select Manual function according to manufacturer's instructions; set timer for 9 minutes. Allow 10 to 15 minutes for pressure to build.
- While cabbage is cooking, combine rice and 1/2 cup water in a small bowl. Combine beef, pork, veal, 1/3 cup tomato sauce, onion, garlic, parsley, salt, and pepper in a separate bowl.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Transfer cabbage to a plate. Drain water from pot insert. Add remaining tomato sauce from the opened can and 1 teaspoon salt. Replace the trivet in the pot.
- Drain rice and add to the bowl with the meat mixture.
- Separate cooked cabbage leaves carefully and shave off the tough veins. Place a cabbage leaf on a work surface; fill with 2 tablespoons meat mixture and roll up, tucking in the sides. Place rolled leaf on the trivet in the pot. Continue with remaining leaves and filling, placing the first layer facing the same way and the second layer facing the opposite way. Pour the remaining can of tomato sauce over the rolls.
- Close and lock the lid. Select the Stew/Meat function according to manufacturer's instructions; set timer for 22 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

BASIC GRANARY BREAD DOUGH (FOR ROLLS OR A LARGE LOAF)

- Mix the flours and salt together in a large bowl, then stir in the sugar and yeast. Make a well in the centre of the flour and pour in the warm milk, beaten egg, olive oil and enough of the water to form a soft, wet dough.
- On a lightly floured surface, knead dough for 10 mins until smooth. Put the dough in a lightly oiled bowl, cover with oiled cling film, then leave to rise in a warm place until doubled in size. The dough is now ready to be shaped.
- To make 12 rolls, divide the dough into 12 pieces and shape into rolls. Lightly flour 3 baking sheets. Place the rolls onto the sheets and cover loosely with oiled cling film. Set aside in a warm place for 30 mins or until they have doubled in size.
- Heat oven to 200C/fan 180C/gas 6. Brush the bread with beaten egg and sprinkle with sesame and poppy seeds. Bake for 15-20 mins until deep golden brown and well risen.
- To make a flowerpot loaf, leave the dough to rise for about 1 hour, or until doubled in size. Soak one large or eight small terracotta flowerpots in cold water for about 30 mins. Dry thoroughly, then brush the inside of the pots with oil and line with parchment paper. Shape dough into a smooth round with a roughly pointed shape at one end so it half-fills the pot. Leave until doubled in size.
- Heat oven to 190C/fan 170C/gas 5. Brush the top of the loaf with beaten egg, sprinkle with poppy or sesame seeds and bake for 45-50 mins (15-20 mins for small loaves) until golden. Let it sit for 5-10 mins, then take out of the pot and leave to cool on a wire rack.

- Cook rice for 5 minutes; then drain.
- Remove core from cabbage and place in a large pot of boiling salted water.
- Boil until large outer leaves get slightly limp and separate from head (10 minutes); then remove and de-vein (save 2 cups cabbage water for sauce).
- Mix together meat, 1/2 cup tomato sauce, partially cooked rice, garlic salt, and pepper.
- Place about 4 tablespoons rice mixture (or according to size of leaf) on each cabbage leaf, fold the ends in over the filling and roll up.
- Stack tightly in a large pot or dutch oven.
- Add water saved from boiling cabbage and pour remaining tomato sauce on top.
- Cover and cook over medium heat for 2 hours (check occasionally to make sure the bottoms aren't scorching; turn heat down if they start to).
- Serve hot.

This is a basic recipe for dinner rolls. The dough can be refrigerated for up to 2 hours, if needed. Just let it warm up/rise before baking. Also, this dough can be used to make cinnamon rolls.

Steps:
- Measure water into a warm bowl.
- Dissolve yeast into water.
- Add sugar, butter, egg, and salt.
- Add enough flour to make the dough easy to handle (not sticky).
- Knead the dough until it becomes smooth and elastic (about 10 minutes).
- Place in a greased bowl to rise until double in size (about 1 hour).
- Divide the dough into small balls and place in greased muffin cups (for clover-leaf rolls, place 3 balls in each muffin cup; for regular dinner rolls, place 2 balls in each muffin cup).
- Brush with butter, if desired.
- Let rise again until double in size, about another hour.
- Bake at 375 for 10 - 15 minutes.

- 1. In a large bowl put warm water, yeast and 1 TBSP sugar. Let sit until yeast is dissolved and foaming up around 5-10 minutes.
- 2. Add the remaining sugar, buttermilk, oil and egg.
- 3. Add half of the flour and mix until totally smooth, add remaining flour until you have nice soft dough.
- 4. Turn dough out on to a floured surface and knead for a few minutes until the dough is nice and smooth.
- 5. Place dough in a oiled bowl and cover to let it rise approximately 2 - 3 hours depending on temperature, let rise till it doubles in size.
- 6. Once dough has risen take a few minutes to mix sugar and cinnamon in a small bowl.
- 7. Once again turn the dough out on to a floured surface and stretch lightly and use your hands to spread out in to a rectangle, a big one!!
- 8. Use your hands and butter the whole thing completely on top.
- 9. Sprinkle with cinnamon and sugar mixture and cover the entire dough!
- 10. Roll the dough as tightly as possible, then cut into 1 inch slices. Place into a greased pan, cover and set in a warm, dry place until they double in size. (mine didnt quite double, but I think I cut my to short lol)
- 11. Bake at 350 for approximately 19 minutes. Check them when you get close to 20 minutes, oven temps vary.
- 12. While the cinnamon rolls are baking make your glaze/icing mix sugar, vanilla and a little bit of water at a time, until glaze reaches the consistency of your choice.
- 13. Once the cinnamon rolls are done make sure you add the glaze/icing while they are hot! That's it they are finally done!!
CARRIE'S RICH ROLLS OR BREAD (BASIC RECIPE) WITH VARIATIONS
This is my mother's bread recipe. She made it so often that she never had to look at any recipe - she knew it by "feel". She finally wrote it down and we are so glad she did since she passed away in 1980 at the age of 45. This recipe is pretty much in her own words - it is a guideline for all kinds of yeast bread items. Several variations follow the main recipe. Be sure to read it through before trying them out. She was a beautiful woman and a wonderful mother. Not a day goes by that I don't think of her. Whenever I make yeast bread, I think of her. I love you, Momma!

- Put the warm milk in a pan large enough to hold all ingredients.
- Add sugar and yeast; stir until dissolved.
- Stir in 3 cups of flour, mix well.
- Cover and let rise until full of bubbles - (about 45 minutes).
- Add eggs (beaten until light), salt, and butter to the mixture.
- Blend well, and add remaining flour.
- Cover and let rise (about 1 1/2 hours).
- "Now the dough is ready to use and what finger paints are to a child, this bread recipe can be for you. Your imagination can run riot and the things you can do will amaze you" (Quoting directly from her instructions).
- Flour your breadboard or counter where you intend to knead the bread and put your dough on it.
- The theory is that the more you knead the dough, the better the bread will be. But don't let it run away with you. Quite a small amount of kneading will result in excellent dough (Bread or rolls) My theory is the more you knead the dough (need the dough$$), the poorer you are. Ha! Seriously, it doesn't make that much difference whether you knead it half a day or about 5 minutes. It turns out real good at 5 - 10 minutes.
- FROM THIS POINT, YOU DECIDE WHAT TO MAKE WITH YOUR DOUGH AND GO FROM THERE.
- TO MAKE BASIC BREAD LOAVES: After you've kneaded the dough the final time, take about half as much as your loaf pan holds. Roll it roughly into the shape of a pie. Starting at any edge roll it up. Tuck up the ends under so that the roll now fits your loaf pan. The rolled "seam" should be on the bottom of the pan. Bake at 325 for 1 hour. This recipe should make 2 loaves.
- Don't stop now! Here are some variations you can easily do!.
- TO MAKE COFFEE CAKE recipe: Anyway, after you've kneaded the dough, you take half as much dough as your bread pan holds and roll out about the size of a pie pan. Spread butter (about 1/2 stick) over entire top. Sprinkle with sugar and cinnamon (about 1/2 cup sugar - 1 teaspoon cinnamon). I have used apple pie spices instead and it came out fine. Roll up very tightly and tuck ends in if they are too long for your pan. Put in a warm place and let rise to double its original size - about an hour. Bake at 325 degrees F. for 1 hour.
- TO MAKE PARKERHOUSE ROLLS, When making Parkerhouse rolls, remembering that your rolls will be twice the size of your original dough! Butter your muffin tins well and put 3 equal siaed rolls of your dough in each tin. Let rise to double in size. Bake at 375 degrees F. for about 25 minutes or until golden brown. Will make about 2 doz. rolls.
- TO MAKE BUTTERFLAKE ROLLS: Roll dough very thin, cut small rounds and put about 5 in each muffin tin, endways. Let these also rise to double in size before baking at 375 degrees F for about 25 minutes or until golden brown. Makes about 2 dozen.
- YOU CAN ALSO MAKE SOME VERY GOOD PECAN ROLLS: Substitute brown sugar for the white sugar in the original recipe. Butter 2 muffin tins. In the bottom of each muffin cup add these ingredients: 1 heaping teaspoon of Light Brown Sugar, 1 to 2 teaspoons of chopped nuts or 3 pecan halves. After the final rising, shape your dough into a long roll or into two 1 foot rolls. Cut the roll into 1" slices and place each slice into a muffin cup. Let them rise until double in size and bake them at 375 degrees F. for about 2 to 30 minutes. Turn them upside down onto Aluminum foil or wax paper to cool.

PERFECT BASIC DINNER ROLLS
These rolls come out soft and chewy, in less then an hour. I've done them with just about every add in you can think of, and they always come out perfect.

Steps:
- Add water, yeast and sugar in mixing bowl, allow to bubble (about 4 min).
- Add salt and flour slowly, checking for consistency. You may need to use as much as 1/2 a cup extra flour- dough should be firm but slightly sticky.
- Place in greased bowl and allow to double (15-30 minutes).
- Flour your hands and separate into 12 rolls on greased pan. Allow to rise 15 minutes more.
- Bake at 350°F for 15 minutes.
