3/4 cup milk

2 cups seafood or 2 cups poultry

Steps:

  • Preheat oven to 350 degrees Farenheit.
  • Beat eggs in a large mixing bowl.
  • Add filling and milk and mix well.
  • Pour mixture into frozen pie crust.
  • Place quiche on cookie sheet and bake on the middle oven rack for 45-50 minutes, or until top is browned and a knife inserted in center comes out clean.
  • Serve with a crisp green salad or maybe some fresh fruit on the side.

6 eggs, at room temperature
2 cups grated cheddar cheese (or the lesser known Emmenthal or Cantal cheese) or 2 cups gruyere cheese (or the lesser known Emmenthal or Cantal cheese)
2 cups half-and-half or 2 cups whole milk, gently heated just until warm
1/2 teaspoon salt
1/4 teaspoon cayenne

Steps:

  • Preheat oven to 425°; prick the crust all over with a fork.
  • Line it with tin foil and weight the bottom with a pile of dried beans, rice, or other weights that will sit flat on the surface.
  • Bake 12 minutes; remove from the oven and carefully remove the weight and foil; turn the oven to 325°.
  • In a bowl, combine the eggs, cheese, cream, and seasonings; beat until well blended.
  • Place the baked crust on a baking sheet; pour the egg mixture into the crust, right to the top.
  • Carefully transfer the baking sheet to the oven; bake 30-40 minutes, until the mixture is set but still moist; it should still jiggle just a little in the middle (cover pie crust edges with foil if getting too brown).
  • Cool on a rack; serve warm or at room temperature.

2 cups half-and-half cream
⅛ teaspoon salt
¼ teaspoon white pepper

4 ounces Jarlsberg cheese, shredded
2 ounces mozzarella cheese, shredded
1 (9 inch) unbaked pie shell

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, whisk together eggs and half-and-half. Season with salt, white pepper and nutmeg. Place shredded Jarlsberg and mozzarella in the pie shell. Pour egg mixture over cheese.

BASIC CRUSTLESS QUICHE

This is my go to base for a quiche. I always do crustless. You can add really anything to this. We love sauteed veggies with onion and garlic with ham or tomatoes and bacon. If you cook the veggies, let them cool before adding to quiche mix because of the eggs. Spinach and ham is classic with added swiss. This is really great for when you have random veggies and leftover meat or deli meat in the fridge! Scale back the mozzarella to a 1/2 cup and put1/2 cup any other kind of cheese in, I use cheddar, swiss, provolone, parmesean frequently. I have also used cottage cheese with the ricotta.

  • 1. Preheat oven to 375 degrees.
  • 2. Combine eggs, flour, cream, salt and pepper in a blender until mixed well or mix well with a hand mixer. Set aside.
  • 3. Layer your ingredients of choice in the pie crust... ***You can use 2 reg. size pie crusts instead of the one deep dish, it works out well, especially since there always seems to be extra egg mixture. Perhaps I just use to many ingredients in the quiche...lol ***You can also use mini pie crusts and make mini quiches, using many flavors. Making everyone at the table happy!

BASIC QUICHE
1 pie crust, store bought is fine
6 eggs (or 4 whole eggs and 2 whites)
1 c whole milk
2/3 c cream or half-n-half
1 c grated sharp cheese (swiss, cheddar, gruyere or crumbled feta)
1 pinch grated nutmeg (optional)
1 tsp fresh thyme
pinch of salt and pepper
OPTIONAL ADDITIONS:
1 medium onion, chopped and sauteed
1 c mushrooms, sliced and sauteed
1 c ham, diced
3 slice bacon, cooked and crumbled
3/4 c cooked spinach or broccoli, drained well and chopped
3/4 c hash brown potatoes

Steps:

  • 1. Preheat oven to 425 degrees. If using fresh pie crust, line a deep pie plate or quiche dish with it.
  • 2. Whisk the eggs in a large bowl and add the milk and cream. Whisk together thoroughly and then stir in the herbs and seasonings.
  • 3. Sprinkle grated cheese on bottom of crust. If using any of the optional ingredients, sprinkle them on the bottom of the pie crust, too. Make sure your pie plate is large enough to hold everything. You may need to cut back on the cheese or a little of the milk if you use a lot of optional ingredients.
  • 4. Pour the mixture into the pie crust and bake for 30 minutes. If the quiche still has a liquidy and jiggly center, bake for another 10 minutes. If firm, remove from the oven and allow it to cool slightly before serving. Quiche can be served at room temperature.
  • 5. If crust edges get dark, cover them with foil or a pie crust guard and keep cooking until the center of the quiche is set. I normally have to cook mine for 35-40 minutes in a deep-dish quiche plate.

1/2 teaspoon kosher salt
1 stick cold unsalted butter (1/4 pound), cut in 1/8-inch pieces
3 tablespoons ice water

Steps:

  • Put flour and salt in the bowl of a stand mixer or food processor. Add butter and quickly cut it into flour until mixture resembles coarse meal. 2. Add ice water and mix briefly, about 30 seconds, to form a soft dough. Remove dough, shape into a thick disk, wrap in plastic and refrigerate for at least 2 hours or overnight. Bring to cool room temperature before rolling. 3. To roll, lightly flour dough and counter. Roll out gradually, periodically letting dough rest for a moment before continuing. This makes rolling easier and will keep dough from shrinking back during baking. 4. Roll dough to a thin round approximately 13 inches in diameter, then trim to make a 12-inch circle (refrigerate and save trimmings for patching). Lay dough loosely into a 9 1/2-inch fluted tart pan with removable bottom, letting it relax a bit. Fold overlap back inside to make a double thickness, then press firmly against the pan so the finished edge is slightly higher than the pan. Refrigerate or freeze for an hour before pre-baking.

Love to make this for lunch or brunch with friends - it's always a big hit. Even my husband likes this rich, filling, quiche. Customize any way you like - add sauteed asparagus, fresh spinach, mushrooms, colored peppers, broccoli. Use ham or bacon instead of Canadian bacon.

FILLING
8 oz canadian bacon, diced
1 Tbsp canola or olive oil
1 c shredded gruyere or baby swiss cheese, or a combination
4 large eggs
1 1/2 c half & half
1/4 tsp white pepper
3/4 tsp sea salt
pinch ground nutmeg
dash cayenne pepper
CRUST
1 1/4 c all purpose flour
1/4 tsp sea salt
7 Tbsp unsalted butter, chilled
1 1/2 - 2 Tbsp ice water

Steps:

  • 1. Prepare the crust. Using a food processor with the metal blade, whisk together the flour and salt.
  • 2. Cut the cold butter into tablespoon-sized pieces and drop into the flour mixture. Process until the dough is crumbly.
  • 3. Add 1 1/2 tablespoons ice water and process. If the dough begins to form a ball and move around the processor bowl, you have enough water. If it is still crumbly, add more ice water until it does form a ball.
  • 4. Turn the dough out onto a piece of plastic wrap and pat it into a round about an inch thick. Wrap well and refrigerate for at least an hour. You can make the dough one day and bake it the next.
  • 5. Saute the bacon and 1/2 cup finely diced onions in a skillet with 1 tablespoon oil just until the onions are softened. Add a teaspoon of dried rosemary and saute another minute. Add the salt, white pepper, cayenne pepper, and nutmeg. You can do this step the day before as well if you like. Refrigerate if you do.
  • 6. When you are ready to make the quiche, preheat the oven to 425 degrees F. Roll out the dough and fit it into a 9"- quiche or pie pan. Cover the pastry with aluminum foil, fill with pie weights or dried beans and bake for 10 minutes. Remove the foil and pie weights and bake 3 more minutes. Reduce heat to 325 degrees F.
  • 7. Beat the 4 eggs in a large mixing bowl. Add the half & half and blend well. Stir in the bacon/onion mixture. Fold in the grated cheese.
  • 8. Pour the filling into the pie shell and return to the oven. Bake 45-50 minutes until the pie is set firm.
  • 9. May be eaten hot or cold.

  • In a blender or food processor, process the tofu, soy milk and salt and pepper until smooth.
  • Mix together the tofu and veggies and add the vegan cheese. Gently pour into baked pastry.

Beat together eggs, half/half, and seasonings.
  • 2. Place drained cooked meat in bottom of pie crust. Layer your vegies on next and sprinkle on grated or cubed cheeses. Add beaten egg mixture. Bake 35 min's or until center is firm. Let set 5-10 min's before serving.

1/2 pint whipping cream
1 frozen pie shell (do NOT thaw)

  • Preheat oven to 350 degrees.

  • Beat eggs then add in the whipping cream.
  • Mix until incorporated.
  • Add remaining cheese and stir lightly.

You can also add a bottom crust if you prefer more of a crust on your quiche. I acquired this recipe from my daughter in law. She has given me such wonderful recipes over the years.

4 - eggs, beaten
1 cup(s) milk
1, 1/2 cup(s) grated cheese of your choice

- :choose a meat: ham pieces, sausage, bacon in bits, pepperoni, etc.
- i usually add more cheese to top

Steps:

  • In a large bowl mix your eggs, milk, cheese and salt and pepper with a whisk. After beating your egg mixture you can add your meats and veggies of your choice by folding them through mixture until blended. Pour in greased pie pan, add 1/2 cup cheese on top and bake for 45 minutes at 350 degrees. After finished baking I usually let my cool for 15 minutes.
  • Note: Make sure the quiche is cooked all the way through. Check the center to see if firm to the touch.
