1 1/2 lbs ground beef
1 onion, chopped
salt, to taste
pepper, to taste
garlic powder, to taste
6 slices gluten free bread, cubed
1/2 cup milk
1 egg
2 tablespoons yellow mustard, divided
1/2 cup ketchup, divided
2 tablespoons brown sugar

Steps:

  • Preheat oven to 350.
  • Mix ground beef, onion, salt, pepper and garlic powder in a bowl.
  • Mix in bread, milk, egg, 1 tbsp mustard, and 1/4 cup ketchup.
  • Press mixture into a loaf and put in baking dish.
  • In a small bowl, stir together 1 tbsp mustard, 1/4 cup ketchup and 2 tbsp brown sugar. Pour on top of the meat loaf within the last 20-30 minutes of cooking.
  • Bake for about an hour until it's cooked through.

Meatloaf can be casual, for a weeknight dinner, or fancy, for a Sunday feast. It can be made of turkey or beef, pork or veal. It is relatively cheap to make and, when combined with mashed potatoes, provides about the ultimate in comfort food. Whichever protein you use, though, the idea is to stretch it with a filler - bread or oatmeal, rice or crackers - and scent it with vegetables and spices. You need a basic recipe to start. Here it is.

1/2 cup finely chopped raw or sauteed vegetables (onions, leeks, peppers, tomatoes, zucchini, mushrooms, etc.)
1 cup bread crumbs or other grain filler (par-cooked rice, rolled oats, mashed potatoes or soft bread)
1 1/2 pounds lean ground beef
1 large egg
Dried and/or fresh herbs to taste
Spices or other seasoning to taste
Salt to taste

Steps:

  • Preheat oven to 350 degrees.
  • Mix the vegetables with the bread crumbs or other filler. Mix these ingredients thoroughly with the meat. Mix in the egg.
  • Add the seasonings, taking care not to underseason the mixture. If you do not want to taste the mixture raw to check the seasonings, cook a spoonful of it in a nonstick pan for a few minutes until it loses its redness, allow it to cool slightly, then taste.
  • Shape mixture into a loaf and place in shallow baking dish or pack ina four-cup loaf pan. Bake 90 minutes. Serve hot or cooled.

3 slices bread, crumbled or torn in small pieces
1 large egg
1 cup milk
1/4 cup onion, finely chopped
1 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon pepper
1/4 teaspoon sage
1/8 teaspoon garlic powder
1 tablespoon Worcestershire sauce
1 cup barbecue sauce or 1 cup condensed tomato soup

Steps:

  • Heat the oven to 350 degrees F.
  • In large bowl, combine all ingredients together (except the topping) using your hands to mix and combine is the best way.
  • Spread the meat mixture into an ungreased loaf pan, 9 X 5 X 3-inches or shape into a loaf in an ungreased baking pan.
  • Spoon topping choice onto the loaf and bake, uncovered, for 1 to 1 1/4 hours or until done.
  • Drain off the excess fat and allow the loaf to sit about 10 minutes before removing from loaf pan or slicing because it will fall apart.
  • Slice loaf into serving sizes and serve on heated platter.
  • POTATO-TOPPED MEAT LOAF: For four 1/2-inch slices of meat loaf, prepare some instant mashed potatoes, enough for 4 servings, as directed on the package and set aside. Set the oven control at broil/or 550 degrees F. Broil the slices with the tops 3 to 4 inches from the heat for 5 minutes. Spread the potatoes on the slices and sprinkle with shredded Cheddar cheese. Broil until the cheese is melted, about 2 minutes and serve hot.
  • SOUPED-UP MEAT LOAF: For four 1/2-inch slices of meat loaf, mix 1/2 to 1 can of your favorite condensed cream soup, such as cream of mushroom, (10 3/4 oz size) and 1/4 to 1/2 cup of milk in a skillet. Heat to boiling, stirring frequently. Reduce the heat and place the slices in the skilled, turning to coat all sides with the sauce. Cover and simmer until the meat is hot, 10 to 15 minutes and serve.

1 medium onion, peeled and cut into 1-inch chunks
1 large carrot, peeled, trimmed, halved and cut into 1/2-inch lengths
3 small cloves garlic, smashed and peeled
2 medium ribs celery, peeled with a vegetable peeler and cut into 1-inch chunks
1 1/3 pounds ground round
2/3 cup unseasoned dried bread crumbs
2/3 cup plus 4 tablespoons ketchup
1 teaspoon kosher salt
Few grinds black pepper
8 oil-packed anchovies, minced
20 calamata olives, rinsed, pitted and coarsely chopped
4 heaping teaspoons capers, rinsed and coarsely chopped
2 tablespoons Worcestershire sauce
Additional ground black pepper

Steps:

  • Place a rack in the center of the oven, and heat to 350 degrees.
  • Put onion, carrot, garlic and celery in the bowl of a food processor, and pulse until the vegetables are chopped medium fine; there should be about 1 2/3 cups of chopped vegetables.
  • Combine all of the ingredients, reserving 4 tablespoons of the ketchup.
  • Add optional ingredients, if desired. Divide the mixture into 4 equal parts. Form into mounded ovals that do not touch in a 9-by-13-inch heatproof glass baking dish. Bake for 30 minutes. Spread 1 tablespoon of ketchup over the top of each loaf, and bake for 10 minutes. Remove from oven, and let rest for 5 minutes. Using a pancake turner, remove each loaf and serve on individual plates.

BASIC TRUSTWORTHY MEATLOAF

I have been making meatloaf for years and years, always the same way with minor variations, but always with saltine cracker crumbs as the binder. Recently, I tried oats. Well! Quick-cooking oats (not instant) make a surprisingly good substitute for either cracker crumbs or bread crumbs in a meatloaf. I have also made this meatloaf without any garlic, and it's just as good. Make sure the onions are chopped up fairly small; the texture of the meatloaf is best that way. Also, don't use extra-lean ground beef as you risk having a dry meatloaf rather than a moist one. Leftovers make a wonderful cold sandwich!

5 strips lean bacon, finely chopped
6 cloves garlic, minced
2 medium onions, finely chopped
1 medium carrot, finely chopped
2 pounds very lean ground beef sirloin
2 large eggs
1/2 cup milk
1 cup finely ground fresh bread crumbs
1/4 cup Dijon mustard
1/4 cup barbecue sauce
1 tablespoon bottled horseradish, well drained
1/2 cup finely chopped fresh flat-leaf parsley
2 tablespoons coarse salt
1 tablespoon freshly ground black pepper
1 teaspoon finely minced fresh thyme (or 1/4 teaspoon dried thyme)
2 to 3 cups croutons
10 whole, unpeeled, garlic cloves
4 bay leaves
1 sprig fresh thyme

Steps:

  • Preheat the oven to 375 degrees.
  • Place the bacon in a medium sauté pan over medium-low heat. Sauté the bacon for about 5 minutes, or until it has begun to crisp and most of the fat has rendered out. Add the garlic, onion, and carrot and continue to sauté for about 4 minutes, or until the vegetables are soft and the onions are translucent but have not taken on any color. Remove the pan from the heat and allow the vegetables to cool (see Note).
  • Place the ground sirloin into a large mixing bowl. Add the eggs and milk and, using your hands, work the liquid into the meat. Add the bread crumbs and continue to work the liquid and crumbs into the meat. Add the cooled vegetables, mustard, barbecue sauce, and horseradish along with 1/4 cup of the parsley, salt, pepper, and thyme. Using your hands, gently work all of the ingredients into the meat until well combined.
  • Place one-half of the croutons into a shallow baking dish at least 14 inches long.
  • Transfer the meatloaf mixture onto a clean, flat surface and, again, using your hands, shape it into a loaf about 3 1/4 inches wide X 2 1/2 inches high X 12 inches long (or into a round, breadlike form, a letter of the alphabet, an oval, or into several small loaves). Press the remaining croutons into the loaf, making sure that they are partially pressed down into it.
  • Gently press the unpeeled garlic cloves into the top of the meatloaf. Carefully lay the loaf on top of the croutons in the baking dish (you might need to use a couple of spatulas to facilitate this), reforming the shape with your hands, if necessary. Pierce the meatloaf with the bay leaves and thyme sprig. Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reads 165 degrees on an instant-read thermometer and the top is nicely browned.
  • Remove the pan from the oven. Allow the meatloaf to rest for about 5 minutes before transferring it to a serving platter. Remove the bay leaves and thyme sprig and sprinkle the remaining parsley over the top of the loaf and around the platter. Cut crosswise into 1-inch, or thicker, slices and serve.

This is a meatloaf recipe that I really like by Diana Rattray, that I found on About.com. This recipe appeals to anyone that can appreciate a basic meatloaf with a southern style flare. And, any leftovers are really good sliced on sandwiches the following day. Diana suggests that you may wish to substitute 1/2 cup of ketchup or barbecue sauce (topping) in place of bacon according to your taste; I usually choose ketchup to avoid the extra calories!

Then I add wet ingredients and incorporate together really well. I usually add less milk or add extra bread crumbs to preferred consistency).
  • Pack into a lightly greased loaf pan or form into a loaf and place on a lightly greased baking sheet with sides, such as a jelly roll pan. (I form into a loaf in a 9 X 13 pyrex baking dish).
  • Top meatloaf with sliced bacon, or your choice of ketchup or barbecue sauce.
  • Bake at 350° for 1 1/2 - 1 3/4 hours, or till 170 to 180 degrees.
  • Dianna suggests serving meatloaf with heated tomato sauce or gravy. (I suggest serving with garlic mashed potatoes and mixed vegetables for a comfort style meal).

1 egg, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil over medium heat in a sauce pan. Add the onions, carrots, dried herbs, pepper, salt, and bouillon granules, and cook over medium-low heat for 8-10 minutes until onions are translucent but not brown. Add the white wine and let cook until most of the liquid had evaporated.Off the heat, add the Worcestershire sauce, stock, and tomato paste. Allow to cool slightly. In a large bowl, combine the ground meat, onion and carrot mixture, oatmeal or bread crumbs, and egg and mix lightly. Don't mash the mixture and stop mixing as soon as the majority of ingredients have been integrated. Shape into a rectangular loaf on an ungreased sheet pan. Spread ketchup over the top. 1 small onion

  • Heat oven to 350 degrees Fahrenheit. Break up the beef into small pieces in a large bowl, using a fork or spoon. Peel and finely chop the garlic. Peel the onion, and chop enough of the onion into small pieces to measure 3 tbsp. Wrap remaining piece of onion, and refrigerate for another use. add the garlic and onion to the beef. Tear the bread into small and add to beef mixture. Add the milk, Worcestershire sauce, sage, salt, mustard, pepper, and egg to the beef mixture. Mix with a fork, large spoon or your hands until the ingredients are well mixed. Place the bee mixture in the ungreased baking pan. Almost any size pan with work; just be sure the pan has sides on it to catch the juices that will accumulate while the meatloaf bakes. Shape the mixture into an 8x4-inch loaf in the pan, and spread ketchup over the top. Bake uncovered 50-60 minutes or until beef in center of the loaf is no longer pink. A meat thermometer inserted in the center of the loaf should read 160 degrees. Let the loaf stand 5 minutes, so it will be easier to remove from the pan. cut the loaf into slices.

BASIC MEATLOAF

You can experiment by putting a bit of spinach, or sweet peppers chopped finely, or bits of pineapple and ham, or whatever you have in the fridge that you think would go well with this recipe. If you like it more firm, you can do one or more of the following: increase the eggs or breadcrumbs, uncover while cooking, use leaner meat, drain the loaf of any fat halfway through cooking. If you like a moist but firm meatloaf, just follow the directions!
