BASIC CREAM PIE FILLING WITH VARIATIONS

I used to work in a bakery and we made lots of cream pies. We made a basic filling, divided into amounts for each pie and added the various flavors to fill the pie case. Variations are endless.

Number Of Ingredients 7

3 c water
1 c sugar
1 c cold water
3/4 c dry milk powder
3 oz cooked type dry vanilla pudding mix
1/2 c cornstarch, plus 2 tablespoons
1 large egg

Steps:

  • 1. Bring 3 cups water and sugar to a boil in a saucepan.
  • 2. In a bowl, combine the 1 cup cold water and the remaining ingredients with a whisk until smooth.
  • 3. When the sugar syrup has come to a boil and the sugar is completely dissolved, whisk the milk mixture and add to the pan and cook over medium heat, stirring constantly with the whisk until the mixture thickens (only takes a few minutes).
  • 4. Remove from heat and stir in your favorite flavoring or use plain for vanilla cream pie or pudding.
  • 5. Pour into baked pie shell. Chill and top pie with whipped cream, if desired, when cold. Makes enough for one pie.
  • 6. Variations:( Add to hot pudding) German Chocolate - stir in 1 cup chocolate chips, top with german chocolate cake frosting and whipped cream. Dark Chocolate - stir in 1 cup chopped dark chocolate, such as Hershey's special dark. Peanut Butter - stir in 1 cup peanut butter. Banana - stir in 2 sliced bananas and 1/4 teaspoon banana extract. Coconut - stir in 1 cup coconut and 1/4 teaspoon coconut extract. Pina Colada - stir in 1/2 cup coconut and 1/2 cup well drained crushed pineapple. Rum raisin - stir in 1 cup raisins and 1 teaspoon rum extract. Reese's - stir in 1/2 cup chocolate chips and 1/2 cup peanut butter. Banana split - stir in 1 chopped banana, 1/2 cup drained crushed pineapple, 1/2 cup sliced strawberries. Top with whipped cream and drizzle with chocolate sauce and chopped nuts. Hawaiian - stir in 1 sliced banana, 1/2 cup drained crushed pineapple and 1/2 cup coconut. Cheesecake - stir 3 oz. softened cream cheese into hot filling until melted. Top cooled pie with cherry pie filling or other favorite fruit topping. Stir in anything else that sounds good.

1 c sugar, granulated
2 c milk
dash of salt
1/2 stick butter
4 Tbsp flour (level tbs.)
2 egg yolks
1 tsp vanilla

Steps:

  • 1. Mix flour and sugar in your sauce pan. Then add milk, salt, butter; slightly whip egg yolks until incorporated together and add to other ingredients in pan. Cook over medium heat, stirring constantly with a whip tool. When the mixture thickens and starts to come to a boil, remove from heat; add vanilla. Pour into pie shell.
  • 2. Variations: Chocolate pie - add 3 tbs cocoa to flour and sugar. For coconut, add 1 cup of coconut after removing from heat. For pineapple, add 1 small can drained, crushed pineapple after removing from heat. For lemon, add lemon juice to your "taste".
  • 3. Pour filling into baked pie shell. Serve with whipped cream, or top with Marshmellow Creme Meringue* and bake until meringue is lightly browned. *Posted on JAP

1/3 cup flour
2/3 cup sugar
1/4 teaspoon salt
2 cups milk, scalded
2 tablespoons butter
3 egg yolks, beaten
1/2 teaspoon vanilla

Steps:

  • Mix flour, sugar, and salt. Add the scalded milk.
  • Cook over oduble boiler until thick.
  • About 15 minutes.
  • Add the butter.
  • Pour this mixture over the egg yolks and stir again.
  • Cool.
  • Last, add the vanilla.
  • Please use the previous recipe for Cream Filling to fulfill for the following recipes: CHOCOLATE FILLING: Following directions for the cream filling; add 2 ounces of baker's unsweetened chocolate to the scalded milk.
  • INCREASE the sugar to 1 cup.
  • COCONUT CREAM FILLING Following directions for the cream filling, add 1 cup of shredded coconut. COFFEE FILLING Following directions for the cream filling, add 1/4 cup of instant coffee BEFORE scalding the milk.
  • DATE CREAM FILLING Following directions for the cream filling, add 1/4 pound of chopped dates and 1 tsp grated lemon rind to milk before it is added to the cream filling recipe.

Yield Makes 1 1/4 cups, enough to fill about 60 sandwich cookies of various sizes

1/2 stick unsalted butter, softened
1 1/2 cups confectioners' sugar
1/4 cup granulated sugar
2 teaspoons pure vanilla extract
1 to 2 tablespoons whole milk, if needed

Steps:

  • Beat butter with a mixer on medium-high speed until light and fluffy, about 3 minutes. Reduce speed to low, and gradually add sugars, beating until thoroughly combined. Beat in vanilla. If filling is too thick to spread, beat in milk, 1 tablespoon at a time, until spreadable.

Yield Makes about 5 cups (enough to frost one 8- or 9-inch layer cake)

Number Of Ingredients 6

6 egg whites
1 1/4 cups (8 3/4 ounces) sugar
1/4 teaspoon cream of tartar
2 cups (1 pound) unsalted butter, at room temperature, cut into small cubes
2 teaspoons pure vanilla extract
1/8 teaspoon fine sea salt

Steps:

  • Using a hand whisk, whisk together the egg whites, sugar, and cream of tartar in the clean bowl of a stand mixer. Place the bowl over (not in) a saucepan of simmering water. The egg white mixture will be gloppy and thick, but as the mixture begins to warm up, it will become more fluid. Continue to gently whisk the mixture until it is very hot to the touch (130°F on a candy thermometer).
  • Move the bowl to the stand mixer and, using the whisk attachment, whip the whites on medium-high speed until they have tripled in volume and are thick and glossy and hold stiff peaks (like meringue), 3 to 4 minutes. Turn the mixer down to medium-low speed until the mixing bowl is just cool to the touch, 1 to 2 minutes. Kick the mixer back up to medium-high speed and add the butter one piece at a time, adding the next piece just as the previous one has been incorporated. Stop the mixer every so often to scrape down the escaping buttercream from the sides of the bowl. At some point, the buttercream will take on a curdled appearance; don't worry, this is normal. Just keep on mixing until it comes together. Once all the butter is incorporated and the frosting is fluffy and creamy, blend in the vanilla and salt until fully combined.
  • Covered with plastic wrap, buttercream will last 2 days at room temperature or 7 days in the refrigerator. If refrigerated, the buttercream must be brought to room temperature before you use it. Either way, the buttercream must be rewhipped-either by hand if kept at room temperature or with a mixer if refrigerated-before you frost a cake with it.
  • Raspberry Buttercream:
  • Mash and strain 4 cups (10 ounces) of raspberries, fresh or frozen, through a fine mesh sieve to catch the seeds. (If using frozen berries, measure them before thawing.) Discard the seeds and set aside the puree while you follow the method for making Basic Buttercream. Add the berry puree at the end of the recipe, with the vanilla and the salt.
