BASIC CHICKEN AND RICE SOUP
A no-frills, delicious soup that I am often asked to make. You can substitute noodles for the rice, but rice is our preference.

Steps:
- Boil chicken with poultry seasoning, butter, celery flakes, chicken soup, salt, and black and cayenne peppers.
- Reserve broth and debone and chop chicken into pieces.
- Add chicken back to broth along with onion, bell pepper, and rice.
- Cook covered until rice is done, approximately 20-30 minutes.

CHICKEN, RICE AND CARROT SOUP
A very easy soup the whole family will love. Perfect if you have leftovers and little time!

- Cook stock in soup pan on a medium heat
- Add chicken, onion, carrots and rice stirring well
- Cook on a low/medium heat for 60 mins until carrots are soft and rice is cooked
- Add salt and pepper to taste and serve with warm crusty bread!

Steps:
- In a large saucepan, heat oil over medium-high heat; saute carrot, celery and onion until tender. Add garlic; cook and stir 1 minute. Stir in rice, seasonings and broth; bring to a boil. Reduce heat; simmer, covered, until rice is tender, about 15 minutes., Mix flour and milk until smooth; stir into soup. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in chicken; heat through.
