Number Of Ingredients 13

1 pound lean ground beef (90% lean)
1/4 cup chopped onion
1 garlic clove, minced
1 can (14-1/2 ounces) reduced-sodium beef broth
1 can (8 ounces) tomato sauce
1 cup water
2 small carrots, chopped
1 small tomato, seeded and chopped
1 small zucchini, chopped
1 cup medium pearl barley
2 teaspoons Italian seasoning
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the broth, tomato sauce and water; bring to a boil. Stir in the remaining ingredients. Reduce heat; cover and simmer until barley is tender, about 20-25 minutes.

1 pound lean ground beef (90% lean)
1 small onion, chopped
1/4 cup chopped celery
1/4 cup chopped green pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/2 cups water
3/4 cup quick-cooking barley
1/2 cup chili sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon dried marjoram
1/8 teaspoon pepper
Chopped parsley, optional

Steps:

  • In a large skillet, cook beef, onion, celery and green pepper over medium-high heat until beef is no longer pink and vegetables are tender, breaking up beef into crumbles, 5-7 minutes; drain. Stir in remaining ingredients. Bring to a boil; reduce heat. Simmer, uncovered, until barley is tender, 5-10 minutes. If desired, top with chopped parsley.

1/2 cup onion, chopped
1/4 cup celery, chopped
1/4 cup bell pepper, chopped
1 1/4 teaspoons salt
1/8 teaspoon pepper
1/2 teaspoon marjoram
1 teaspoon sugar
1 teaspoon Worcestershire sauce
1/2 cup chili sauce
2 cups canned tomatoes, broken up
1 1/2 cups water
3/4 cup quick-cooking barley

Steps:

  • Saute in skillet first four ingredients.
  • Drain off excess fat and stir in remaining ingredients.
  • Bring to a boil.
  • Reduce heat to simmer, cover and cook about 35 minutes for quick cooking barley or 1 hour for pearl barley.

I have been making this for so long I can't remember how many years! My father-in-law loved when I would make this before he passed. It is quick, fairly cheep, and hearty delicious-ness!

3/4 lb ground beef
1 medium onion, chopped
1 green bell pepper, chopped
2 c beef broth
3/4 c quick cooking barley
1 can(s) diced tomatoes
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
2 tsp brown sugar
1 Tbsp white vinegar

Steps:

  • 1. In a deep skillet, cook beef, onion, and bell pepper until beef is no longer pink. Drain.
  • 2. Stir in rest of ingredients. Bring to a boil. Reduce heat to a simmer and cook 20-25 minutes, or until barley is tender. Enjoy!
