SPICY GRILLED FISH

Grilled fish with spicy and garlic sauce made with Chinese doubanjiang, garlic sauce and sichuan peppercorns

1 whole fresh fish
10 Shitake mushroom
2 ~3 fresh chili peppers sliced
1 onion sliced
1 handful coriander
1 teaspoon cumin powder
1 teaspoon five spice powder
1 teaspoon chili powder
1 tablespoon doubanjiang ( , chili bean paste)
1 teaspoon Sichuan peppercorn
2 cloves garlic sliced
1 section of ginger sliced
1 tablespoon shallots sections
2 teaspoons Salt

Steps:

  • Clean the fish. Cut several cuts on both sides of the fresh. Sprinkle some salt to add flavor to the meat inside.
  • Wash all the vegetable ingredients listed above. In a large container, add salt and mix thoroughly.
  • Cut fresh pepper and onions into slices as well as the Shitake mushrooms.
  • Prepare a pan and heat up some cooking oil and then add garlic,shallots and ginger to stir fry until the aroma can be smelled. Then put doubanjiang and sichuan peppercorn in to stir-fry until the oil becomes red. Turn off the fire. Put the pan aside.
  • Put the fish cleaned in the middle of ovenware, and then lay the vegetables around the fish.
  • Pour the sauce made in above steps onto both sides of the fish. Marinade for around 1 hour.
  • Sprinkle five spice powder and cumin powder on top.
  • Preheat the oven to 220 degree centigrade; Oven 30 minutes.
  • Get the ovenware out and sprinkle some coriander on top to add fresh aroma.

This is a really tasty, economical and different way to enjoy fish! Lots of flavor from the marinade and easy clean up! Winners in my book. I am sure this would work very well on any firm, mild fish. When I made this I was a little crunched in the time department so I only got to marinade it for 1 hour and it was delicious. Plan ahead! This is best marinated for at least an hour but no more than 2 hours. In a pinch, just let it marinate while the grill is heating.

24 ounces catfish fillets or 24 ounces other mild fish
1/4 cup lemon juice
1/4 cup vegetable oil
2 tablespoons low sodium soy sauce
2 tablespoons fresh ginger, finely chopped or 2 teaspoons ground ginger
6 garlic cloves, finely chopped, about 1 Tbsp
3 green onions, chopped, green and white parts
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper, adjust to taste
lemon wedge (optional)
parsley, chopped (optional)

Steps:

  • Combine lemon juice, soy sauce, vegetable oil, ginger, garlic, green onions, minced onion, paprika and cayenne pepper and stir to mix well.
  • Place fish in a zipper seal bag and pour liquid mixture over it. Seal and marinate in the refrigerate for about 1 to 2 hours.
  • Oil grill grate or fish basket really well and preheat grill to medium high. Grill fish for 4 minutes on each side. Flip the fish only once and brush with reserved marinade when flipped.
  • NOTE: Fish is completely cooked when the color turns from translucent to opaque (white) or has reached a 150 degree F internal temperature. Resist the temptation to over-cook fish until it "flakes," which indicates the fish is becoming dry.

4 (8 ounce) white fish fillets, firm
1/4 cup butter, melted
1/2 teaspoon salt
2 teaspoons ground sweet paprika
1/2 teaspoon white pepper
1/2 teaspoon ground cayenne pepper
1/4 teaspoon ground oregano
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder

Steps:

  • Dry fish fillets with paper towels and brush with melted butter, set aside.
  • To make the dry marinade: Combine all the dry spices and sprinkle over the buttered fish fillets.
  • Cook the fillet on a lightly greased grill for 8-10 minutes, tuning once during cooking time.
  • Note: You may find it easier to make a double quantity of this dry marinade and store the remaining mixture for later use. Store in a covered airtight jar in the freezer for best results. It adds flavor to seafood, poultry and beef.

2 pounds haddock fillets, each cut into thirds
6 tablespoons butter, melted
1 limes, juiced (with pulp)
1 tablespoon dried dill weed
1 teaspoon kosher salt
1 teaspoon red pepper flakes
1 onion, sliced crosswise 1/8-inch thick

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Lay 4 8x10-inch pieces of aluminum foil onto a flat work surface and spray with cooking spray.
  • Arrange equal amounts of the haddock into the center of each foil square.
  • Stir butter, lime juice, dill, kosher salt, and red pepper flakes together in a small bowl; drizzle evenly over each portion of fish. Top each portion with onion slices.
  • Bring opposing ends of the foil together and roll together to form a seam. Roll ends toward fish to seal packets.

SPICY COD WITH GRILLED LIME



Spicy Cod with Grilled Lime image

1/4 cup mirin
1/4 cup sake
3 tablespoons sugar
1/4 cup brown miso
2 tablespoons sriracha
1 tablespoon rice vinegar
Four 8-ounce black cod fillets, skin on
Vegetable or canola oil, for the grill
3 limes, halved

Steps:

  • Set up your grill for medium heat.
  • In a small saucepan, combine the mirin, sake and sugar and bring to a simmer on the grill. Whisk until smooth and the sugar is dissolved. Remove from the grill and whisk in the miso, sriracha and rice vinegar. Cool.
  • Place the cod fillets into a zip-top bag. When the miso mixture has cooled, pour over the cod, seal the bag and marinate in the refrigerator for 1 to 3 days. The longer fish marinates, the better.
  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Allow the temperature to reach 400 to 450°F.
  • Liberally grease the grates of your grill with the oil.
  • Remove the fish from the marinade and allow the excess to drain off.
  • Meanwhile, place the limes, cut-side down, onto the direct heat side of the grill and grill until charred, 3 to 4 minutes. Remove from the grill and set aside.
  • Place the fish, skin-side down, on the indirect heat side of the grill. Cover the grill and cook until the fish is flaky and cooked through, 8 to 10 minutes.
  • Transfer the fish to a serving platter and squeeze 1 of the grilled limes all over the fish. Serve with the remaining grilled limes.
