1 package (1 ounce) Williams Chili Seasoning
1/3 cup olive oil
1/3 cup lime juice
4 boneless skinless chicken breast halves
4 Hamburger buns
Chopped tomatoes, optional
Shredded Monterey Jack cheese, optional

Steps:

  • 1 Combine Williams Chili Seasoning, olive oil and lime juice. Place chicken in plastic food bag; pour seasoning mixture over chicken. Seal bag, refrigerate, and allow to marinate 1 hour. 2 Heat grill and allow coals to burn down to white ash. Drain chicken and discard marinade. Place chicken on grill and cook about 15 minutes or until chicken is fully cooked, juices run clear and meat thermometer registers 170 degrees, turning midway through cooking. 3 Serve chicken on hamburger buns, and garnish with chopped tomatoes and shredded cheese, if desired.

2 (4 pound) whole chickens, cut up
1 ½ cups ketchup
¾ cup prepared mustard
5 tablespoons brown sugar
5 tablespoons minced garlic
5 tablespoons honey
¼ cup steak sauce
4 tablespoons lemon juice
3 tablespoons liquid smoke flavoring
salt and pepper to taste
12 hamburger buns
3 cups prepared coleslaw

Steps:

  • Place chicken in a large pot with enough water to cover. Bring to a boil, and cook until chicken comes off the bone easily, about 3 hours. Make sauce while the chicken cooks.
  • In a saucepan over medium heat, mix together the ketchup, mustard, brown sugar, garlic, honey, steak sauce, lemon juice, and liquid smoke. Season with salt and pepper. Bring to a gentle boil, and simmer for about 10 minutes. Set aside to allow flavors to mingle.
  • When the chicken is done, remove all meat from the bones, and chop or shred into small pieces. Place in a pan with the sauce, and cook for about 15 minutes to let the flavor of the sauce soak into the chicken. Spoon barbequed chicken onto buns, and top with coleslaw if you like.

2 slices white sourdough bread
1 skinless chicken breast half (6 ounce)
1 slice monterey jack pepper cheese
1/4 cup barbecue sauce
2 -3 tablespoons guacamole
1 teaspoon sour cream
tomatoes
lettuce

Steps:

  • Cut a pocket in chicken breast half. Fill with cheese; secure with metal or soaked wooden skewers.
  • Grill chicken, covered, over medium heat for 6-8 minutes on each side (you can pull out the skewers after turning) until juices run clear to desired doneness.
  • Toast bread, place sliced tomato on bread, lettuce and chicken.
  • Spread sour cream/guacamole mixture on top of bun and place on top of sandwich.

1/2 cup diced celery
1 garlic clove, minced
1 tablespoon butter
1/2 cup salsa
1/2 cup ketchup

1/2 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups shredded cooked chicken
6 hamburger buns, split and toasted

Steps:

  • In a large saucepan, saute the onion, celery and garlic in butter until tender. Stir in the salsa, ketchup, brown sugar, vinegar, Worcestershire sauce, chili powder, salt and pepper. , Stir in chicken. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. This is a chicken sandwich that we like to grill in the summer. It is an attempt to have a homemade version of the Carl's Jr. sandwich. Sometimes we substitute pepper jack for the cheese. Sometimes we add tomato slices or red onion..have fun with it!

4 boneless skinless chicken breast halves
1 cup teriyaki marinade (Lawry's is best)
1/4 cup mayonnaise
1/4 teaspoon paprika
1/4 teaspoon curry powder
1/4 teaspoon cayenne pepper
1 pinch salt
4 whole wheat hamburger buns
lettuce
1 (7 ounce) can whole green chilies
4 slices American cheese

Steps:

  • Marinade the chicken in the marinade in a shallow glas bowl or pan for 30 minutes to 1 hour.
  • Preheat your barbecue to a medium heat. Pound the chicken to an even 1/2 inch thickness. Grill the chicken for 5-8 minutes per side or until done.
  • In a small bowl, combine mayo, paprika, curry powder, cayenne pepper and salt.
  • Brown the cut side of the hamburger buns in a hot pan. I usually lightly butter them first.
  • Spread a tablespoon on the cut faces (top and bottom) bun. On the bottom, place a lettuce leaf. Cut open a chile and place it on top of the lettuce so that is covers most of the lettuce. Place the chicken on the chile then the slice of cheese, then the top bun.
