Makeover a family favorite by topping pieces of ham steak with zesty baked beans. Ready in less than 30 minutes!

1 teaspoon vegetable oil
1 center-cut ham steak (about 1 lb)
1 small green bell pepper, chopped (1/2 cup)
1 small onion, chopped (1/4 cup)
1 can (16 oz) baked beans
1/4 cup barbecue sauce

Steps:

  • In 12-inch nonstick skillet, heat oil over medium heat. Cook ham steak in oil 6 to 8 minutes, turning once, until browned and hot. Remove steak to deep serving platter; cover to keep warm.
  • In same skillet, cook bell pepper and onion over medium heat 2 to 4 minutes, stirring frequently, until crisp-tender. Stir in beans and barbecue sauce. Heat until bubbly. Pour beans over ham.

These are the best! Not being a Fan of limas I just adore these. It may be the hot cheese or the sweetness of the brown sugar. I don't know but it's just too GOOD! It's a great side or serve over rice for a main meal. You can also skip the bacon if you're not into meat! You can add liquid smoke!

1 lb frozen lima beans, you can do a mixture of beans as I did in the picture limas and red beans
1/3 lb bacon
1 large chopped onion
2 -4 minced garlic cloves
2 tablespoons olive oil
1 tablespoon chili powder
1 (28 ounce) can diced tomatoes with garlic (Contadina)
1 1/2 cups shredded monterey jalapeno jack cheese (you can skip the jalapenos if you like it mild)
1 teaspoon Worcestershire sauce (If making this recipe vegetarian, use vegetarian Worcestershire sauce.)
1 teaspoon soy sauce
2 teaspoons honey mustard
1/4 cup dark brown sugar
1 teaspoon salt
pepper

Steps:

  • In a casserole dish (I use cast iron pot) brown bacon till crisp.
  • Set bacon aside.
  • Add oil to bacon fat and fry onions and garlic about 5 minutes.
  • Crumble bacon.
  • Add all the rest of the ingredients to pot.
  • Bake at 350°F for 2 hours.

1 pound dried black beans, picked over
1 tablespoon canola oil
1/2 pound thick double-smoked bacon, cut into small dice
1 medium Spanish onion, cut into small dice
1 medium carrot, cut into small dice
4 cloves garlic, finely chopped
1 cup dark rum
1/4 cup honey
2 tablespoons molasses
1 1/2 cups chicken stock, homemade (page 240) or store-bought, plus more if needed
1 1/2 cups Mesa Grill Barbecue Sauce (see Sources) or store-bought barbecue sauce
1/2 cup coarsely chopped fresh cilantro
Kosher salt and freshly ground black pepper

Steps:

  • Cover the beans by at least 2 inches with cold water and let soak for at least 8 hours or overnight.
  • Drain the beans, place in a large saucepan, and cover by 2 inches with cold water. Bring to a boil over high heat, reduce the heat to medium, cover the pot slightly, and cook until very tender, 1 to 1 1/2 hours. Drain the beans and place in a large bowl.
  • Preheat the oven to 325°F.
  • Heat the oil in a large sauté pan over high heat. Add the bacon and cook until golden brown and crisp, about 8 minutes. Transfer with a slotted spoon to a plate lined with paper towels. Add the onion and carrot to the pan and cook until soft, about 5 minutes. Add the garlic and cook for 1 minute. Add the rum, bring to a boil, and cook until almost completely evaporated, 5 minutes. Add the mixture to the beans along with the honey, molasses, stock, barbecue sauce, bacon, and half of the cilantro. Season with salt and pepper and mix gently to combine.
  • Transfer the mixture to a 10-inch round baking dish, cover, and bake for 20 minutes. Check to see if the mixture is dry; if it is, add a little more stock. Continue baking for another 20 minutes. Remove the lid and bake until golden brown on top, another 15 minutes.
  • Remove from the oven and let sit for 10 minutes. Garnish with the remaining cilantro before serving.

1/4 cup dark brown sugar
1/2 cup sweet red barbecue sauce
4 tablespoons butter, cut into 8 pieces
2 slices bacon, precooked, cut into 8 pieces
fresh ground black pepper, to taste

Steps:

  • Cut off onion stems and peel. Hollow out onions leaving base intact. Finely chop pieces removed from onions.
  • In mixing bowl, combine BUSH'S Country Style Baked Beans, onions, brown sugar and barbecue sauce.

1 pound California small white beans
1/2 cup onions, finely chopped
1/2 cup celery with leaves, finely chopped
1/4 cup green bell pepper, chopped
1 tablespoon garlic, minced
3 tablespoons olive oil
1 16-ounce can tomato sauce or 6 large fresh tomatoes chopped and stewed for 1hour
1/4 cup dark brown sugar
1/4 cup thick molasses
1 tablespoon dry mustard
3 tablespoons Worcestershire sauce
1/2 teaspoon ground cloves
chicken, veal, or pork stock (optional)
2 bay leaves
1 teaspoon salt
1 teaspoon cracked black pepper
1 teaspoon fresh thyme
1 cup country cured slab bacon, diced

Steps:

  • Wash beans, place in large pot and cover with cool water, boil for 5 minutes,and remove from heat; let sit for 1 hour with tight lid. In cast-iron skillet, sauté onions, celery, bell pepper, and garlic in olive oil on a high flame for 4 minutes or until onion is translucent. Add tomato sauce, sugar, molasses, mustard, Worcestershire sauce, and cloves, and simmer for 30 minutes. Pour off water from beans and replace with 3 1/2 cups (approximately) fresh cool water or meat stock. Add bay leaves, salt, pepper, and thyme. Let simmer, covered, until beans are tender. Sauté bacon cubes; drain. Drain liquid from beans and reserve. Combine beans and tomato sauce in Dutch oven or bean pot. Top with bacon and bake in 300-degree oven for 3 to 5 hours. Stir beans now and then, adding reserved liquid when needed.

1 lb navy beans or 1 lb great northern bean, rinsed
1 medium onion, finely chopped
1/2 cup tomato sauce
1/2 cup apple cider
1/4 cup molasses
2 tablespoons Bourbon
2 tablespoons brown sugar
1 tablespoon dry mustard
1 tablespoon Worcestershire sauce
1/2 teaspoon salt (or to taste)
1/4 teaspoon fresh ground pepper (or to taste)
8 ounces smoked ham, finely diced

Steps:

  • Soak beans overnight in plenty of cold water; or boil 2 minutes, cover, and let stand 1 hour.
  • Drain beans and transfer to large saucepan. Add enough cold water to cover beans generously. Stir in onion. Boil uncovered 10 minutes. Reduce heat to medium-low; simmer uncovered until beans are tender, 1 to 1-1/2 hours.
  • Combine all remaining ingredients except in ham in mixing bowl and set aside.
