BBQ Chicken Burgers with Caramelized Onions image

These juicy BBQ Chicken Burgers with Caramelized Onions are easy to make and perfect for summer parties. Everyone will love how flavorful these ground chicken burgers are!

1.25lbs. of ground chicken
1 teaspoon of dried oregano
1 egg
salt & pepper
1 red onion, sliced
1 tablespoon of olive oil
1/2 teaspoon of salt
1/4 teaspoon of pepper
1 tablespoon of butter
4 whole wheat buns
1 avocado, sliced
4 leafs of butter lettuce
1-2 roma tomatoes, sliced
BBQ Sauce (I used Sweet Baby Rays Honey BBQ)

Steps:

  • Heat a medium skillet to medium high heat, add olive oil and sliced onions. Saute onions for 10 minutes, stirring on occasion. Add butter, salt, and pepper. Stir until butter is melted and soaked into onions, about 3-4 minutes. Set aside.
  • In a large bowl mix, ground chicken, egg, oregano, salt, and pepper. Using your hands mix until it is all combined. Form into four patties.
  • Heat the grill to medium high heat, spray grates with PAM or rub with olive oil. Add chicken patties to the grill.
  • Grill for 4 minutes per side, until cooked through.
  • Remove from grill, let sit while you toast the buns.
  • Add buns to grill, inside on the bun face down. Grill for 1 minute, remove from grill.
  • Assemble burger: bottom bun, lettuce, 2 slices of tomato, chicken burger, 2-3 slices of avocado, 1-2 tablespoons of caramelized onions, 1-2 tablespoons of bbq sauce, top bun.
  • Devour!

2 tablespoons olive oil
2 large onions, cut into 1/8-inch-thick slices
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/3 cup canned beef broth
1/2 cup purchased barbecue sauce
1 1/2 tablespoons apple cider vinegar or white vinegar

Steps:

  • Heat oil in large skillet over medium-high heat. Add onions, salt and pepper; cook until onions begin to brown, stirring frequently, about 8 minutes. Add broth, barbecue sauce and vinegar. Reduce heat to medium; simmer until sauce thickens, stirring occasionally, about 15 minutes. (Can be made 1 day ahead. Cover; chill. Rewarm before serving.)

Early in the writing of this book, I struggled to get my ruminations on paper. Although I hesitate to call my temporary impasse writer's block, I can't imagine much worse. Words wouldn't come. And the ones that did weren't smart or engaging or funny. After an eternity of fretting, I began making burgers for lunch. My intent was to cook my way through the recipes I planned for the book. This onion burger was the first thing I tried. After 2 days of oniony repasts, the dark cloud lifted and the words came.

1 pound ground chuck
2 onions, shaved (use a mandoline or a very sharp knife to make the thinnest possible slices)
American or pimento cheese
6 buns, split
Mustard

Steps:

  • Place a heavy skillet over medium-high heat. Leave it there for 5 minutes. Loosely gather a handful of ground beef and slip it into the pan. Repeat 6 times. The burgers should be freeform lumps.
  • With the side of a spatula, push the burgers into a semblance of a round. After about a minute, pile on all the onions and then, with as much force as you can manage, smash the onions into the meat. Again, work the sides of the patties into a semblance of a round. Cook another minute and then flip. Season with salt. Smash the burgers again, hard.
  • Place burger on bottom half of the bun and spread with mustard. Spread the cheese on top half of the bun and place on the burger.

1 large sweet onion, sliced
1 tablespoon butter, melted
1 teaspoon dry mustard
1 teaspoon honey
1 1/2 lbs lean ground beef
1/4 cup Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
6 onion rolls or 6 kaiser rolls
6 leaves lettuce
6 slices tomatoes

Steps:

  • For onions, tear a large piece (36x18-inches) of heavy duty foil.
  • Fold in half to make a double thickness of foil (18x18-inches).
  • Place onions in the center of the foil.
  • Combine the melted butter, mustard and honey; drizzle over onions.
  • Bring up two opposite ends of foil and seal with a double fold.
  • Then fold the remaining ends to completely enclose the onion mixture.

2 tbsp olive oil
3 large onions (red or white), sliced
pinch of salt
2 tbsp soft brown sugar
1-2 tbsp balsamic vinegar

Steps:

  • Heat the oil in a large deep frying pan over a low heat.
  • Add the onions with a generous pinch of salt and cook slowly for 30-40 mins. Stir occasionally to prevent them from sticking or burning until they become soft and golden. If the onions start to catch, add a splash of water to the pan and mix well.
  • Add the sugar and vinegar to give them a sweet, slightly sharp chutney flavour. Keep cooking on a low heat for another 5 mins, stirring occasionally until the mix is sticky, the sugar has dissolved and the vinegar has reduced. The onions are now ready to serve, or use in a recipe.

1/3 cup plus 1/2 cup barbecue sauce, divided
1 pound ground beef
4 bacon strips, halved
1 large sweet onion, sliced
4 tablespoons butter, divided
4 hamburger buns, split
4 slices cheddar cheese

Steps:

  • Place 1/3 cup barbecue sauce in a small bowl. Crumble beef over barbecue sauce and mix well. Shape into four patties., In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain. In another skillet, saute onion in 2 tablespoons butter until softened.
