BONELESS COUNTRY STYLE PORK RIBS RECIPE
Melt-in-your-mouth tender, bathed in a sweet and tangy homemade barbecue sauce, these country style pork ribs are truly something special!

Steps:
- Preheat oven to 500°F.
- Combine all the ingredients except the pork ribs in a saucepan. Cover and simmer for 10 minutes.
- Place ribs in bottom of a roasting pan or 9X13 baking pan.
- Pour sauce over the meat.
- Cover the pan with foil and bake at 500 degrees for 10 minutes.
- Reduce heat to 325 degrees and bake for an additional 1 to 1 ½ hours. Check them at the 45-minute mark and turn them in the sauce.
- When the ribs are tender, remove the foil and cook for 15 minutes without the foil, just enough to slightly reduce and thicken the sauce.
- Ribs are done when the meat is tender and pulls apart easily.
- Remove the BBQ ribs from the sauce to serve. The sauce can be put in a small bowl to serve on the side.

- Optional: Brine first if you have time. 2 cups water, 1 tablespoon table salt, and 1 tablespoon brown sugar for 1-4 hours in the refrigerator. Rinse well and use a rub without salt.
- Clean and oil grill grates then preheat grill to a grill surface temperature of 450°-500°.
- Trim ribs of any excess fat. Deepen the cuts that are already in the ribs to about 75% through.
- Coat both sides of ribs with a rub of your choice. Be sure to get in the cuts. Rub in and let rest for 10 minutes while preheating grill.
- Place over direct heat and close lid. Flip about every 5 minutes and grill until an internal temperature of about 145°-150°. About 20 minutes depending on grill and the thickness of the meat. Always cook to the final internal temperature and never by time alone.
- The last few minutes, coat with sauce on both sides and grill until brown. Let stand for 5 minutes before cutting.

- Preheat oven to 350° convection or 375° conventional oven. Trim one slab (about 1 1/2 lb) country-style boneless ribs of fat cap and any silverskin.
- Deepen the cuts to a little over half the thickness of the slab.
- Heat a cast-iron skillet or another oven-safe pan with a teaspoon or two of oil over medium-high heat. Place in the pan and sear for 2-3 minutes per side. Get near the final color you want when done.
- Remove from heat and brush the top (not the bottom) generously with BBQ sauce of your choice. Be sure to get the slices.
- Place in the oven and bake until internal temp of about 145°-150°. About 15 minutes, but time will vary some. Let rest for 5 minutes before cutting.

- Place ribs in a large pot with enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil, and cook ribs until tender.
- Preheat oven to 325 degrees F (165 degrees C).
- Remove ribs from pot, and place them in a 9x13 inch baking dish. Pour barbeque sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160 degrees F (70 degrees C).

- Sprinkle ribs with onion salt, pepper and paprika. Select saute setting on a 3- or 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown meat on all sides; remove from pressure cooker. Add water to pressure cooker. Cook 30 seconds, stirring to loosen browned bits from pan. Press cancel.
