WISCONSIN BEEF AND CHEDDAR BRATS WITH BEER-BRAISED ONIONS



Wisconsin Beef and Cheddar Brats with Beer-Braised Onions image

4 tablespoons butter
2 red onion, thinly sliced
1 yellow onion, thinly sliced
1 (12-ounce) bottle beer
8 beef and Cheddar brats (recommended: Hillshire Farms)
8 dark rye sesame rolls
Stone-ground mustard

Steps:

  • Set up grill for direct cooking over high heat. Oil grill grate when ready to start cooking.
  • Place a large skillet on a grill or side burner and add butter. When butter has melted, add onions. Cook until softened, about 10 minutes. Add beer and cover; cook an additional 10 minutes.
  • Remove cover from skillet and let simmer until most of the liquid has evaporated, about 5 minutes.
  • Turn the heat on the grill down to medium. Place brats on oiled grill grates and cook 4 to 5 minutes per side
  • Serve brats hot on toasted rolls smothered with onions and topped with mustard.
  • INDOOR: In a large skillet over medium heat melt butter add brats and brown 10 minutes, turning them occasionally as they brown. Remove the brats and set aside. Add the onions and cook for 10 minutes, stirring frequently until softened. Pour in the beer and scrape up any brown bits in the bottom of the pan. Return the brats to the pan and cook over medium heat for 15 minutes or until beer has all but evaporated.

Top the grown-ups' burgers with the caramelized onions with barbecue sauce and be sure to have mayonnaise and mustard on hand. Serve corn on the cob and the baked potato wedges to the whole crowd.

Yield Makes 8 child-size and 4 adult-size burgers

3 1/2 pounds lean ground beef
1/2 cup purchased barbecue sauce
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon ground black pepper
1 cup grated cheddar cheese
12 sesame-seed hamburger buns, lightly toasted
Lettuce leaves
Sliced tomatoes

Steps:

  • Mix first 4 ingredients in large bowl until blended. Mix in pepper. Shape half of meat mixture into eight 1/2-inch-thick patties. Shape remaining meat mixture into four 1-inch-thick patties. (Can be made 8 hours ahead. Cover and chill.)
  • Prepare barbecue (medium-high heat). Grill patties to desired doneness, topping with cheese for last minute of cooking, about 4 minutes per side for medium-rare 1/2-inch-thick patties, and about 6 minutes per side for medium-rare 1-inch-thick patties. Place burgers on bottom halves of buns. Top with lettuce, tomatoes and upper halves of buns.

1 lb lean (at least 80%) ground beef
1 box Hamburger Helper™ Cheddar cheese melt
1 2/3 cups milk
1 1/3 cups hot water
1/4 cup barbecue sauce
1 tablespoon dried minced onion
1 cup crushed barbecue-flavored potato chips

Steps:

  • In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain.
  • Stir in uncooked pasta and sauce mix (from Hamburger Helper box), milk, hot water, barbecue sauce and onion. Heat to boiling, stirring occasionally. Reduce heat; cover and simmer about 10 minutes, stirring occasionally, until pasta is tender. Remove from heat.
  • Cover; let stand 5 minutes (sauce will thicken as it stands). Top with chips just before serving.
