We like to make kabobs, chicken and turkey breast burgers with this recipe. A whole combo of fun! The burgers are AWESOME w/King Hawaiian Bread or sweet yeast buns-yummers.

olive oil flavored cooking spray
1/2 cup brown sugar
1/2 cup lime juice
1/3 cup soy sauce
1/3 cup cpt morgan spiced rum
1/2 cup water
1/4 teaspoon cayenne pepper
6 chicken breasts, boneless, skinless

Steps:

  • To Bake: Spray a 9 X 13 glass cooking dish with olive oil cooking spray coating it entirely.
  • Combine all ingredients in a glass baking dish, cover and marinate overnite.
  • Bake in the same dish, covered @ 375 for 45 minutes, stir. Cover and continue baking for another 45 minutes. Stir and continue baking for additional 10 minutes, uncovered.
  • Serve over Jasmine rice.
  • To BBQ: Spray a 9 X 13 glass cooking dish with olive oil cooking spray coating it entirely.
  • Combine all ingredients in a glass baking dish, cover and marinate overnite.
  • Spray BBQ grill with olive oil cooking spray and grill chicken for 5 minutes on each side, until chicken is no longer pink & juices run clear. Be sure to baste continuously with Caribbean marinade. Enjoy!

1 tsp. ground allspice
1/2 tsp. ground cinnamon
1/2 tsp. garlic powder
1/4 tsp. ground red pepper (cayenne)
8 small boneless skinless chicken breasts (2 lb.)

Steps:

  • Mix all ingredients except chicken until blended. Pour half over chicken in shallow dish; turn to evenly coat both sides of each breast. Refrigerate 1 hour to marinate.
  • Heat grill to medium heat. Remove chicken from marinade; discard marinade.
  • Grill chicken 6 min. on each side. Brush with half of the remaining barbecue sauce mixture; grill 2 min. or until chicken is done (165ºF), turning and brushing with remaining barbecue sauce mixture after 1 min.

2 garlic cloves, minced
1/2 cup chili sauce
3 tablespoons brown sugar
2 teaspoons salt-free seasoning blend, divided
3/4 teaspoon cayenne pepper, divided
2 teaspoons ground mustard
2 teaspoons chili powder
8 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a small saucepan, heat oil over medium heat. Add garlic; cook and stir 1 minute. Add chili sauce, brown sugar, 1 teaspoon seasoning blend and 1/4 teaspoon cayenne.
