2 cups canned sweetened condensed milk (21 ounces)
1 (9-inch) round of refrigerated pie dough (from 15-ounce package)
3 large bananas
1 1/2 cups chilled heavy cream
1 tablespoon packed light brown sugar
Special Equipment
a 9-inch pie plate (preferably deep dish)

Steps:

  • Put oven rack in middle position and preheat oven to 425°F.
  • Pour condensed milk into pie plate and stir in a generous pinch of salt. Cover pie plate with foil and crimp foil tightly around rim. Put in a roasting pan, then add enough boiling-hot water to reach halfway up side of pie plate, making sure that foil is above water. Bake, refilling pan to halfway with water about every 40 minutes, until milk is thick and a deep golden caramel color, about 2 hours. Remove pie plate from water bath and transfer toffee to a bowl, then chill toffee, uncovered, until it is cold, about 1 hour.
  • While toffee is chilling, clean pie plate and bake piecrust in it according to package instructions. Cool piecrust completely in pan on a rack, about 20 minutes.
  • Spread toffee evenly in crust, and chill, uncovered, 15 minutes.
  • Cut bananas into 1/4-inch-thick slices and pile over toffee.
  • Beat cream with brown sugar in a clean bowl with an electric mixer until it just holds soft peaks, then mound over top of pie.

225g digestive biscuits
150g butter , melted
397g can caramel or 400g dulce de leche
3 small bananas , sliced
300ml double cream
1 tbsp icing sugar
1 square dark chocolate (optional)

Steps:

  • Crush the digestive biscuits, either by hand using a wooden spoon, or in a food processor, until you get fine crumbs, tip into a bowl. Mix the crushed biscuits with the melted butter until fully combined. Tip the mixture into a 23cm loose bottomed fluted tart tin and cover the tin, including the sides, with the biscuit in an even layer. Push down with the back of a spoon to smooth the surface and chill for 1 hr, or overnight.
  • Beat the caramel to loosen and spoon it over the bottom of the biscuit base. Spread it out evenly using the back of a spoon or palette knife. Gently push the chopped banana into the top of the caramel until the base is covered. Put in the fridge.
  • Whip the cream with the icing sugar until billowy and thick. Take the pie out of the fridge and spoon the whipped cream on top of the bananas. Grate the dark chocolate over the cream, if you like, and serve.

2 ½ medium bananas, diced
1 (9 inch) graham cracker pie crust
½ (12 ounce) jar caramel syrup
2 cups heavy whipping cream
2 tablespoons confectioners' sugar
2 teaspoons vanilla extract

Steps:

  • Place a whisk and mixing bowl in the freezer to cool, 10 to 20 minutes.
  • Place bananas in the bottom of the pie crust and drizzle 5 ounces caramel syrup over top. Reserve remaining caramel syrup for garnish.
  • Remove whisk and mixing bowl from the freezer. Place whipping cream, confectioners' sugar, and vanilla in the chilled bowl. Mix rapidly with the whisk until peaks form leaving a stiff whipped cream; do not overmix.
  • Spread whipped topping over the bananas and pie crust. Drizzle remaining caramel over top in a circular or zigzag motion for effect. Place in the refrigerator or freezer until whipped topping has firmed up, 15 to 30 minutes before serving.

Two cans of 300 ml sweetened condensed milk
Pinch of salt
9 inch deep dish pie crust, baked
3 bananas
1 1/2 cups whipping cream
1 tbsp brown sugar
1/4 tsp instant coffee granules + extra for garnish
Banana chips to taste

Steps:

  • Pour condensed milk into 9 inch deep dish pie plate. Stir in salt Cover pie plate with foil and crimp foil tightly around edge. Put in roasting pan. Add enough water to cover half way up side of pie plate. Bake 45 minutes, or until milk is smooth, set and caramel coloured. ( this is your toffee.) Scrape into medium bowl. Cool 45 to 60 minutes. Spread evenly over cooled , baked pie crust. Refrigerate uncovered 30 minutes or until chilled. Cut bananas into 1/4 inch slices. Pile over toffee. Whip cream with brown sugar and 1/4 tsp of coffee with electric mixer at high speed until stiff peaks form. Mound on top of pie. Crumble and sprinkle a tiny amount of coffee granules on to centre of cream. Decorate top with banana chips.

10 tablespoons butter, softened
2 (14-ounce) cans sweetened condensed milk
3 large bananas
1 1/2 cups heavy whipping cream
1/3 cup confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Mix graham cracker crumbs with softened butter and press mixture into 9-inch pie plate. Bake for 5 to 8 minutes. Lower the oven to 300 degrees F for the toffee filling. To create toffee filling, caramelize the sweetened condensed milk. Pour the condensed milk into a 9 by 12 by 2-inch glass baking dish. Cover with foil and place dish inside a larger poaching pan. Add water to poaching pan until half way up sides of baking dish. Bake for 1 1/2 hours. Once both the crust and toffee filling are cooled, spread half of the filling evenly inside crust. Slice the bananas and layer on top of filling. Pour remaining half of filling over bananas, spreading evenly. Whip the cream with the confectioners' sugar and vanilla and spread on top of toffee filling and bananas.

3/4 cup all purpose flour
6 tablespoons (3/4 stick) chilled unsalted butter
2 tablespoons sugar
1/4 teaspoon salt
1/2 cup dry-roasted macadamia nuts
1 large egg yolk
1 teaspoon vanilla extract
For filling
2 14-ounce cans sweetened condensed milk
1/2 cup whipping cream
1 tablespoon dark rum
1 tablespoon vanilla extract
4 bananas, peeled, sliced
For topping
3 tablespoons instant coffee crystals
1 tablespoon water
2 cups chilled whipping cream
1/2 cup sugar

Steps:

  • For crust:
  • Combine flour, butter, sugar and salt in processor. Blend until mixture resembles coarse meal. Add nuts; process using on/off turns until nuts are finely chopped. Add yolk and vanilla; process until moist clumps form. Press dough onto bottom and up sides of 9-inch-diameter glass pie dish. Freeze 1 hour.
  • Preheat oven to 350°F. Bake crust until golden and cooked through, about 20 minutes. Cool on rack.
  • For filling:
  • Simmer sweetened condensed milk in heavy medium saucepan over medium heat until very thick and color of peanut butter, stirring frequently, about 25 minutes. Remove from heat; stir in whipping cream, dark rum and vanilla extract (mixture will be sticky and candy-like). Transfer warm filling to crust, spreading evenly. Cool completely. (Can be prepared 1 day ahead. Cover loosely and refrigerate.) Top pie with sliced bananas, covering filling completely. for topping: Stir instant coffee and 1 tablespoon water in small bowl until coffee dissolves. Combine coffee mixture, cream and sugar in large bowl; beat until peaks form. Spoon coffee whipped cream into pastry bag fitted with large star tip. Pipe whipped cream rosettes decoratively atop pie, covering completely. (Can be prepared 2 hours ahead. Chill.) Cut pie into wedges and serve.

½ pint heavy whipping cream
2 tablespoons white sugar

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Pour condensed milk into a pie pan and cover tightly with foil for the caramel. Place in a larger pan. Add hot water to the pan but keep it below the top of the pie pan; you don't want to get any water into the milk.

An absolutely decadent banana-toffee pie, recreated after a trip to England. This is a fairly common dessert in Britain, with layers of banana, gooey caramel, and whipped cream on a graham crumb crust. It's very sweet, so a small piece goes a long way! The cooking time may seem long, but that is simply the condensed milk caramelizing on the stove. Top with chocolate curls if desired.

1 (14 ounce) can sweetened condensed milk, or more to taste

1 teaspoon grated lemon peel

1/8 teaspoon ground cloves
1/2 cup (1 stick) chilled unsalted butter, cut into pieces
1 large egg
1 tablespoon banana liqueur or brandy
Filling
2/3 cup (packed) golden brown sugar
1/2 cup (1 stick) unsalted butter
1/4 cup whipping cream
1/2 teaspoon vanilla extract
3 large bananas, peeled, sliced
2 tablespoons banana liqueur or brandy
Whipped cream

Steps:

  • For crust:
  • Finely grind almonds in processor. Add flour, sugar, lemon peel, cinnamon and cloves and process briefly to combine. Add butter and process using on/off turns until mixture resembles coarse meal. Beat egg and banana liqueur in small bowl to blend. Gradually add enough egg mixture to form moist clumps. Gather dough into ball; flatten to disk. Wrap dough in plastic and refrigerate 2 hours.
  • Preheat oven to 350°F. Roll out dough on lightly floured surface to 13-inch round. Transfer to 10-inch-diameter tart pan with removable bottom. Trim to fit. Freeze crust 15 minutes.
  • Line pie crust with aluminum foil. Fill with dried beans or pie weights. Bake 15 minutes. Remove foil and beans and bake until crust is golden brown, about 10 minutes. Transfer pan to rack and cool completely.
  • For filling:
  • Stir brown sugar, butter and 1/4 cup whipping cream in heavy medium saucepan over medium heat until sugar dissolves and butter melts. Continue cooking until mixture is thick, stirring constantly, about 3 minutes. Remove saucepan from heat. Stir vanilla extract into toffee mixture.
  • Toss bananas with banana liqueur in medium bowl. Arrange bananas in single layer in crust. Pour warm toffee mixture over bananas. Refrigerate pie until cool, about 1 hour. (Can be prepared 6 hours ahead. Cover and keep refrigerated.)
  • Serve pie with whipped cream.
