1 cup white sugar
½ cup butter, softened
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 ½ teaspoons ground allspice
3 overripe bananas, thinly sliced
½ cup banana-flavored yogurt
3 tablespoons white sugar
1 teaspoon ground cloves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x4-inch loaf pan.
  • Combine 1 cup sugar and butter in a bowl; beat with an electric mixer until creamy. Beat in eggs and vanilla extract. Mix in flour and allspice gradually until batter is blended. Fold in bananas and banana-flavored yogurt.
  • Pour batter into the prepared loaf pan.
  • Mix 3 tablespoons sugar and cloves together in a small bowl; sprinkle over batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

After trying several recipes for banana bread that had some but not all of the things I wanted in it, I tweaked a few together and came up with this version with Greek yogurt. I made 8 loaves before declaring it a success (and the comments from family and coworkers sealed the deal).

2 cups mashed bananas
½ cup plain Greek yogurt
¾ cup butter
⅔ cup white sugar
⅔ cup brown sugar
2 eggs, beaten
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup oat flour
1 cup rolled oats
2 teaspoons baking soda
1 ½ teaspoons baking powder
1 teaspoon salt
1 cup chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.
  • Mix mashed bananas and yogurt together in a bowl.
  • Combine butter, white sugar, and brown sugar in a large bowl; beat using an electric mixer until creamy. Add eggs and vanilla extract and stir to combine. Add banana mixture and mix well.
  • Stir flour, oat flour, rolled oats, baking soda, baking powder, and salt together in a bowl. Add to the banana-butter mixture and stir just until combined. Don't overmix. Fold chocolate chips and walnuts into the batter. Divide batter between the prepared pans.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, 50 to 60 minutes. Remove from the oven and cover loosely with aluminum foil for 5 minutes. Remove from the pans and allow to cool completely.

This is an adaptation of Sour Cream Banana Bread which I posted, then found out it was a duplicate. The difference is you use yogurt instead of sour cream. You may use plain, or be adventurous and try vanilla, lemon, or your choice of flavors! Or go ahead and use sour cream if you wish. I even used part mayonnaise once in a pinch. For the nuts, use whatever nuts you wish. So here is the recipe,I hope you enjoy! I used to make this for the Colonial Pines Inn in Highlands, NC. It was always well received, and the customers could buy a loaf to take home, which they frequently did!

1 cup sugar
2 eggs
1/2 cup margarine (you may substitute half applesauce to make it healthier!) or 1/2 cup butter (you may substitute half applesauce to make it healthier!)
1 1/2 teaspoons vanilla
1/2 cup plain yogurt or 1/2 cup sour cream
3/4 cup white flour (or try oat flour)
3/4 cup whole wheat flour (or use all white flour if you wish)
1 tablespoon wheat germ (optional)
1 tablespoon wheat bran or 1 tablespoon oat bran
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe banana (about 2-3)
1/2 cup chopped walnuts (optional)
1/2 cup chocolate chips (optional)

Steps:

  • Grease one 5x9-inch loaf pan, or use 3 mini loaf pans. Some people even double the recipe and bake it in a bundt pan. Spray with cooking spray to coat pans.
  • Cream margarine, sugar, eggs and vanilla.
  • Add dry ingredients, then mashed bananas, nuts, and yogurt or sour cream. Add chocolate chips, if using. Mix well.
  • Bake at 350°F for 1 hour. If using mini loaf pans, cook for about 45 minutes. Enjoy!

I got this recipe from Cooking Light, but modified it to suite my needs (and the family's). My requirements were for it be lower in fat, healthier. My family's requirements was that it had to have chocolate chips. So we compromised and I came up with this alternative. I always cook my loaves in smaller loaf pans as they cook better and they cut easier when they are frozen. Leftover batter can be put in muffin tins.

1 cup whole wheat flour
3/4 teaspoon baking soda

I came up with this recipe to use up some extra bananas and yogurt, but since I live alone, eating a whole banana bread to myself is... well... pure gluttony. So, to my great pleasure, there is no willpower needed here! I am very proud of how it came out. It is very moist and the buckwheat gives it a nice flavour. If you are used to regular store-bought over-sweetened cakes, I recommend you increase the amount of sugar in the recipe or, you can use these tricks: use over-ripened bananas (they are sweeter), use sweetened applesauce and/or vanilla yogurt instead of plain.

2 teaspoons kosher salt (optional)

6 ounces strawberry banana Greek yogurt (Chobani's Strawberry Banana)
1 cup strawberry, diced

Steps:

  • Preheat oven to 375 degrees. Start by combining flour, baking powder, and salt in a large mixing bowl.
  • In a separate bowl, mash bananas with a fork until they are gooey and liquid-like.
  • Add eggs and sugar... mix thoroughly.
  • Add greek yogurt.
  • Whisk until everything is well combined and there are no lumps.
  • Pour the wet ingredients into the dry ingredients, and mix until just combined. At this point, fold in the fresh strawberries!

1 cup mashed bananas (about 3 bananas) ($0.42)
1 cup plain yogurt ($0.67)
2 large eggs ($0.46)
1/2 cup sugar ($0.40)
4 Tbsp butter, melted ($0.52)
1 tsp vanilla extract ($0.30)
1.5 cups all-purpose flour ($0.23)
1 tsp baking powder ($0.02)
1/2 tsp baking soda ($0.02)
1/2 tsp salt ($0.02)

Steps:

  • Preheat the oven to 350ºF. Rub a little butter on the inside of a loaf pan to coat the bottom and sides.
  • Mash the banana well, then add it to a large bowl along with the yogurt, eggs, sugar, melted butter, and vanilla. Whisk these ingredients until they're well combined.
  • In a separate bowl, stir together the flour, baking powder, baking soda, salt, and nutmeg until well combined.
  • Pour the dry ingredients into the bowl of wet ingredients and stir together just until there is no dry flour left on the bottom of the bowl (a few lumps are okay, just be careful not to over stir). Gently fold in the chopped walnuts.
  • Pour the batter into the prepared loaf pan, then bake in the preheated 350ºF oven for 60 minutes, or until the bread is brown, cracked open on top, and a toothpick inserted in the center comes out clean (a few moist crumbs are okay, just no raw batter).
  • After baking, let the banana bread cool in the pan for about 15 minutes. Once it's slightly cooled it will have pulled away from the bread pan slightly. Run a knife along the sides between the bread and pan, then gently turn the loaf out onto a wire rack to finish cooling. Once cool, slice and serve.
