1/2 cup creamy peanut butter
4 whole wheat or regular flour tortillas (8 to 10 inches in diameter)
1/4 cup honey
2 small bananas, sliced
1/4 cup miniature semisweet chocolate chips, if desired

Steps:

  • Spread 2 tablespoons of the peanut butter evenly over each tortilla. Drizzle 1 tablespoon of the honey over each tortilla. Top with banana slices and chocolate chips.
  • Roll up tortillas. Secure with toothpicks.

My daughter loves bananas, and I made a way for her to get a good breakfast by adding some simple things and of course FUN! Even kids as young as a year old can help make these! Other things can be added. Have fun with it. If needed, you can subtract the peanut butter and use more honey.

¼ cup shredded coconut
½ cup granola
1 banana, peeled and halved lengthwise
2 large whole wheat tortillas

Steps:

  • Stir together the peanut butter and honey in a bowl until smooth. Mix in the coconut and granola. Divide the mixture in half, and spread half over each tortilla. Place a banana half in the center of a tortilla, and roll up. Slice the rolls in half to serve.

A fruit wrap infused with all the great flavor of a PB&J sandwich. A favorite of mine that I made to have as a quick lunch in college. I'm thinking of trying other fruits like kiwi or blackberries in place of strawberries to see if they're just as great as this combination. Or if you're feeling more adventurous, you could try changing the type of jam.

1 Sandwich wrap
2 -4 fresh strawberries
1 banana
1 tablespoon creamy peanut butter
1 tablespoon strawberry jam
granola cereal (optional)

Steps:

  • Lay out the wrap and all the ingredients.
  • Spread the peanut butter as the first layer on the wrap, the thickness depending on your preference. Leave about a centimeter or two around the outside edges not covered.
  • Next spread the jelly on top, leaving spaces to place the strawberries.
  • Clean and slice the strawberries and place them in the gaps of jelly.
  • Sprinkle the granola over the PB&J layers on the wrap.
  • Peel the banana and place it whole near one edge of the wrap.
  • Roll the wrap up tightly around the banana and enjoy!

1/2 c coconut
1/2 c pecans
1 box pillsbury® refrigerated pie crust, softened as directed on box
1/4 c sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
4 firm ripe bananas (5 to 6 inch)
1/3 c semisweet chocolate chips
1 jar(s) (12 oz) hot caramel ice cream topping, heated
whipped cream, if desired
vanilla ice cream, if desired

Steps:

  • 1. Heat oven to 350°F. Spread coconut and pecans separately on ungreased cookie sheet. Bake 5 to 8 minutes, stirring occasionally, until light golden brown; set aside
  • 2. Increase oven temperature to 450°F. Remove pie crust from pouch; place flat onto work surface. With rolling pin, roll crust until 12 inches in diameter
  • 3. In small bowl, mix sugar, cinnamon and nutmeg. Reserve 1 tablespoon sugar mixture; sprinkle remaining sugar mixture evenly over crust. Cut crust into 4 wedge-shaped pieces
  • 4. Place 1 banana lengthwise on each crust wedge, about 3/4 inch from curved edge (if banana is too long, trim ends to fit within crust, at least 1/4 inch from each edge). Push about 1 rounded tablespoon chocolate chips, points first, into top and sides of each banana.
  • 5. Bring curved edge and point of each crust wedge up over banana to meet; pinch seam and ends to seal, shaping crust around banana. Sprinkle tops of wrapped bananas with reserved 1 tablespoon sugar mixture; place on ungreased cookie sheet

  • 7. Bake 10 to 14 minutes or until golden brown. Immediately remove from cookie sheet. Cool 5 minutes

Top each with baked banana, whipped cream and additional caramel topping, if desired. Sprinkle coconut and pecans over top of each, if desired. Serve with ice cream

2 firm bananas (not overly ripe or green)
4 (8 inch) flour tortillas
12 large strawberries
1/2 cup low-fat cream cheese (room temp)
2 tablespoons powdered sugar

Steps:

  • Remove stems & puree strawberries with 1 tbsp powdered sugar. Set aside.
  • Combine room temp low-fat cream cheese with 1 tbsp powdered sugar & set aside.
  • Peel & halve the bananas, then split each half again -- but lengthwise.
  • Begin to assemble the tortilla wraps by 1st placing 2 banana quarters side-by-side in the center of ea flour tortilla.
  • Fold the 2 side edges of the tortillas over to encircle the banana halves.
  • Fold the open ends in slightly & then the entire end back over any exposed tortilla edges to form a wrap with all edges on 1 side.
  • Place the wraps (exposed edges down) in a dry skillet & brown the tortilla over med heat, turning several times. (The 1st browning will "seal" the edge side & keep the tortillas in a uniform shape as you continue to brown.).
  • Transfer tortillas to dessert plates. Spoon 1/4 of the strawberry puree over each tortilla & 1/4 of the cream cheese in the center. Serve warm.
  • NOTE: This dish was created for a friend & written to be low-fat. You can dress it up by adding choc chips &/or nuts to the inside of the wrap w/the bananas or other options your imagination might envision.

1 can(s) refrigerated crescent rolls
cinnamon sugar

Steps:

  • 1. Cut the bananas in half, the long way.
  • 2. Spread peanut butter on one side and sprinkle with chocolate chips.
  • 3. Put the other half back on the banana and wrap crescent rolls around it until it is covered.
  • 4. Then roll the dough in the cinnamon sugar mixture.
  • 5. Bake in the oven per the crescent package directions.
  • 6. Cut in half to share, or enjoy it on your own!
