CRANBERRY BANANA TEA LOAF
This delicious and moist banana bread will make a wonderful gift at the holidays ... if you don't eat it all first. This bread is not overly sweet. We loved the cranberry/banana combination. The tart cranberries add a pop of flavor you don't always get with banana bread. Plus, your kitchen smells wonderful while this bakes.

Steps:
- 1. Set oven at 350 degrees. Combine the first 4 ingredients together in a bowl. Mix well. Set aside.
- 2. Cream shortening and sugar in a bowl. Add the two eggs and mix well. Alternately, fold in the dry ingredients, banana, and cranberries, ending with cranberries. Last, fold in the nuts.
- 3. Bake in a prepared loaf pan for 1 hour. Don't overbake.
- 4. I can hardly wait to get it out of the pan before cutting into it and then slathering it with butter! It cuts cleaner and thinner if you can wait until it is completely cool.
BANANA CHOCOLATE-CHIP TEA CAKE

- Heat oven to 350 degrees. Lightly oil a fluted 10-cup Bundt pan. Using an electric mixer, beat together butter and sugar until very soft, pale and fluffy. Beat in eggs one by one, then vanilla.
- Add mashed bananas; batter may look speckled and grainy. Add flour, baking powder and baking soda. Add buttermilk, and mix until smooth. Fold in chocolate morsels.
- Scrape batter into Bundt pan. Place pan on baking sheet in oven and bake until a tester inserted into cake comes out clean (except for melted chocolate), about 45 minutes.
- Cool cake in pan for about 10 minutes, then unmold onto a serving plate. Allow to cool another 15 minutes, then dust with confectioners' sugar passed through a fine mesh sieve. Serve slightly warm or at room temperature.

- Keep aside.
- Cream shortening until light.
- Then, add sugar gradually continuing to cream until fluffy.

- Spoon into a well-greased loaf pan and bake about 1 hr 10 min until loaf pulls slightly from sides of pan and is springy to the touch.

- Preheat oven to 375 degrees F (190C).
- Butter a 9 x 5 x 3 inch loaf pan.
- Cream butter with sugar for 6 minutes, until light.
- Beat in eggs, one at a time; blend in bananas and lemon juice.

- Preheat oven to 350°F.
- Sift together the flour, baking powder, baking soda and salt.
- Cream the shortening or butter, add the sugar gradually and continue working until the batter is light and fluffy.
- Add the eggs and beat well.
- Add the flour mixture alternately with the bananas, a small amount at a time, beating after each addition until smooth.
- Turn into a well-greased bread pan [8-1/2 X 4-1/2 X 3 inches] and bake about one hour and ten minutes.

BANANA COCONUT TEA BREAD
I found this recipe in my old Sunset Cook Book of Breads, Twelfth Printing 1973. Toasted coconut enhances this easy-to-make banana tea bread. The flavors really intensify after 3 to 4 days of mellowing. Keep it tightly wrapped to preserve its moisture content. I usually double this recipe to compensate for the wait. Enjoy!

- In a large mixing bowl, cream together butter and sugar.
- Beat in eggs, one at a time. Stir in milk, lemon juice, and almond extract.
- Sift flour again into mixing bowl along with baking powder, soda, and salt; mix thoroughly.
- Stir in bananas; fold in toasted coconut.
- Pour into a well-greased loaf pan (5 x 9 inches).
- Bake in a moderate oven 350 degrees for 55 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan a few minutes; turn out on wire rack to continue cooling.
- After the loaf is cool, wrap tightly and let it mellow for several days to enhance the flavor. Worth the wait!

- NOTE: To toast coconut sprinkle on a baking sheet and place in a moderate oven 350°F or under broiler until lightly browned, stirring occasionally.

- Line bottom of 8 inch square pan with graham wafers. Beat 1/2 cup butter or margarine, 1/2 cup icing sugar and 1 egg yolk until fluffy. Mix together maraschino cherries, walnuts, banana, lemon juice and coconut. Spread over wafers. Cover with another layer of graham wafers and press down.

HONEY BANANA TEA SANDWICHES
The combination of honey and banana promotes great help with anemia (thanks for that info, Rita!). It also makes a great spread for a tea sandwich! You could use toasted white bread, but I have found that the combo spread on whole wheat bread or pumpernickel is WONDERFUL! It also gives a bit more nutritious value to what you're eating. I don't normally toast the wheat bread for these little treats, but you could. It's also a great recipe to serve to younger tea party guests.
