I came up with this bread late one night because I had too many strawberry that were about to go bad. I love it. This works equally well with fresh or frozen strawberries.

3 cups all-purpose flour
1 ½ cups rolled oats
2 cups white sugar
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 ½ cups vegetable oil
4 eggs
1 ¼ pounds fresh strawberries, sliced
¼ cup rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 7x3 inch loaf pans.
  • Stir together the flour, 1 1/2 cups rolled oats, sugar, cinnamon, baking powder, and salt in a large mixing bowl. In another bowl, whisk together the vegetable oil and eggs; stir into flour mixture until just moistened. Fold in strawberries. Pour into the prepared loaf pans, and sprinkle the tops with the remaining 1/4 cup of rolled oats.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool the strawberry bread in the pans for 5 minutes before cooling completely on a wire rack.

Bananas and strawberries play nicely together in this sweet and tart quick bread.

1/2 cup vegetable oil, plus more for greasing the pan
1/2 cup plus 2 tablespoons walnuts
1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon fine salt
2 large eggs
1 teaspoon pure vanilla extract
1/2 teaspoon lemon zest
2 very ripe bananas, mashed
8 ounces strawberries, hulled and cut into 1/4- to 1/2-inch pieces

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- by 5-inch loaf pan.
  • Roughly chop 1/2 cup of the walnuts, and finely chop the remaining 2 tablespoons, keeping them separate.
  • Whisk together the flour, sugar, roughly chopped walnuts, baking powder, cinnamon, nutmeg and salt in a medium bowl.
  • Whisk together the oil, eggs, vanilla and zest. Fold in the bananas and strawberries. Fold the oil mixture into the flour mixture until just combined (it's OK if there are some lumps). Transfer the batter to the prepared pan, and sprinkle the top with the finely chopped walnuts.
  • Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Run a knife around the edges, and let cool completely in the pan on a rack. The bread can be stored at room temperature in an airtight container for up to 3 days.

1 cup brown sugar
¼ cup flax seeds
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 cup vegetable oil
4 eggs
½ cup plain yogurt
1 ¼ pounds sliced fresh strawberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 2 loaf pans with some oil.
  • Stir all-purpose flour, whole wheat flour, oats, white sugar, brown sugar, flax seeds, cinnamon, baking powder, and salt together in a large bowl.
  • Whisk oil, eggs, and yogurt in a smaller bowl. Stir into the flour mixture just until combined, using hands if batter is very thick. Fold in strawberries. Pour into the prepared loaf pans.
