BANANA-PECAN SHEET CAKE
A dear friend of mine gave me this recipe, and I make it often, especially for potlucks. Sometimes I make it ahead, freeze the cake and then frost it before the party. -Merrill Powers, Spearville, Kansas

Steps:
- Preheat oven to 350°. Coat a 15x10x1-in. baking pan with cooking spray., In a large bowl, beat butter and sugar until blended. Add eggs, one at a time, beating well after each addition. Add bananas, mixing well (mixture will appear curdled)., In another bowl, whisk flour, baking powder, salt and baking soda; add to butter mixture alternately with buttermilk, beating well after each addition. Fold in pecans., Transfer to prepared pan. Bake 20-25 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack., For frosting, in a large bowl, combine butter, confectioners' sugar and vanilla. Add enough milk to achieve desired consistency. Frost cake. Sprinkle with toasted pecans.

BANANA SHEET CAKE WITH PASSION-FRUIT FROSTING
This banana-and-passion-fruit creation takes you to the tropics by way of Italy, where the vine-ripened fruit is used in sodas and all kinds of desserts. About a cup of mashed ripe banana adds moisture to the cake, while passion-fruit juice goes into the cream-cheese frosting for a fresh and naturally tart flavor.

- Cake: Preheat oven to 350°F. Brush a 9-by-13-inch or 8-by-12-inch baking pan with butter. Line with parchment, leaving a 2-inch overhang on long sides. Butter parchment.
- Whisk together flour, baking powder, baking soda, and salt. Combine eggs and granulated sugar in the bowl of a mixer fitted with the whisk attachment. Beat on high speed until thick and pale, about 4 minutes. Add flour mixture; beat just to combine. Add butter, bananas, cinnamon, and vanilla; beat to combine. Add sour cream; beat until smooth.
- Scrape batter into prepared pan, smoothing top with a spatula. Bake until top springs back when lightly touched and a tester inserted in center comes out clean, 30 to 35 minutes (for 9-by-13-inch) or about 40 minutes (for 8-by-12).
- Let cool in pan on a wire rack 10 minutes. Using parchment overhangs, lift cake out of pan and let cool completely on rack. (Cake can be made to this point and stored at room temperature, wrapped in plastic, up to 1 day.)
- Frosting: Beat together cream cheese, butter, confectioners' sugar, and passion-fruit juice on medium-high speed until smooth and fluffy, about 5 minutes. Spread over top of cake; drizzle with passion-fruit pulp. Frosted cake is best the day it's assembled, but can be refrigerated, wrapped in plastic, up to 1 day. Return to room temperature before serving.

- 1. In large bowl mix all dry ingredients
- 2. In a small bowl mix sour cream and milk together
- 3. In yet another bowl cream together butter and sugar till fluffy. then add eggs one at a time and beat after each addition. After final egg, add vanilla and banana extracts and blend together.
- 4. Beginning and ending with dry ingredients, add 1/3 dry ingredients, then 1/3 sour cream mixture to creamed butter and sugar mixture repeat until all combined. (remember start and end with dry ingredients.)
- 5. To this batter add the mashed bananas and mix well.
- 6. Spray sheet cake pan with non stick cooking spray and pour batter into pan. (or if using smaller deeper you may have to adjust baking time)
- 7. Bake in 350 degree preheated oven for 25 to 30 minutes. I checked mine after 20 minutes. (done when toothpick comes out clean.
- 8. Allow cake to cool completely and then frost with Banana frosting
- 9. BANANA FROSTING:Mash lemon juice into already mashed bananas, in a mixing bowl.Add butter and vanilla and banana extract and cream with mixer. Beat in confecctioners sugar a little at a time until frosting is creamy. Add a bit of milk if it gets too stiff or thick.

- Cream together shortening and the sugars.
- Add eggs, one at a time, beating well after each addition.
- Mix in bananas and vanilla.
- Combine flour, soda and salt in a separate bowl, then add to the creamed mixture alternately with buttermilk.
- Stir in nuts.
- Pour into a vegetable oil-sprayed 13x9" pan.
- Bake at 350 degrees for 25-30 minutes, or until a toothpick inserted near the center comes out clean.
- Cool before frosting.
- TO PREPARE FROSTING: Combine brown sugar, butter and milk in a saucepan.
- Bring to a boil for 2 minutes, stirring constantly.
- Remove from heat.
- Cool a bit.
- Gradually beat in powdered sugar till frosting reaches spreading consistency.

- In a large bowl, beat cake mix, bananas, water, oil, eggs and almond extract with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes.
- Stir in chopped toffee bars or chopped nuts and pour into a greased and floured 13 X 9 inch baking pan.
