NILLA WAFERS ORIGINAL BANANA PUDDING

3/4 cup granulated sugar
1/3 cup all-purpose flour
1 dash salt
4 eggs, separated, at room temperature
2 cups milk
1/2 teaspoon vanilla extract
35 -45 shortbread cookies (like "Nilla wafers", reserve 10 to 12 for garnish)
5 -6 medium bananas, sliced (fully riped)

Steps:

  • Combine 1/2 cup sugar, flour and salt in top of double boiler.
  • Stir in 4 egg yolks and milk; blend well.
  • Cook, uncovered, over boiling water, stirring constantly until thickened.
  • Reduce heat and cook, stirring occasionally, for 5 minutes.
  • Remove from heat; add vanilla.
  • Spread small amount on bottom of 1 1/2 quart casserole; cover with layer of Nilla Wafers. Top with layer of sliced bananas.
  • Pour about 1/3 of the custard over bananas. Continue to layer wafers, bananas and custard to make 3 layers each, ending with custard.
  • Beat egg whites until stiff but not dry; gradually add remaining 1/4 cup sugar and beat until stiff peaks form. Spoon on top of pudding, spreading to cover entire surface and sealing well to edges.
  • Bake at 425 degrees for 5 minutes or until delicately browned.
  • Cool slightly or chill.
  • Just before serving, garnish with banana slices, then stand Nilla Wafers upright around edge of dish.

3/4 cup sugar, divided
1/3 cup flour
1 dash salt
3 eggs, separated
2 cups milk
1/2 teaspoon vanilla
45 vanilla wafers, divided
5 ripe bananas, sliced (about 3-1/2 cups)

Steps:

  • MIX 1/2 cup of the sugar, flour and salt in top of double boiler.
  • Blend in 3 egg yolks and milk.
  • Cook, uncovered, over boiling water 10 to 12 minutes or until thickened, stirring constantly.
  • Remove from heat; stir in vanilla.
  • RESERVE 10 of the wafers for garnish.
  • Spread small amount of custard on bottom of 1-1/2-quart baking dish; cover with layers of 1/3 each of the remaining wafers and sliced bananas.
  • Pour about 1/3 of the remaining custard over bananas.
  • Continue to layer wafers, bananas and custard to make a total of 3 layers of each, ending with custard.
  • BEAT egg whites on high speed of electric mixer until soft peaks form.
  • Gradually add remaining 1/4 cup sugar, beating until stiff but not dry.
  • Spoon over custard; spread evenly to cover entire surface of custard and sealing well to edge.
  • BAKE at 350°F for 15 to 20 minutes or until lightly browned.
  • Cool slightly or refrigerate several hours until chilled.
  • Top with reserved wafers just before serving.
  • Garnish with additional banana slices, if desired.

Banana Cream pudding my favorite. This dessert is one of my favorites but I don't make this that often cuz my bf doesn't like bananas. I only make it on special occasions but it is a family favorite & my neices love it! Great kid snack!

1/3 c sugar
1 Tbsp cornstarch
1/4 tsp nutmeg
1/8 tsp salt
1 1/2 c half and half
2 egg yolks
1 Tbsp unsalted butter
1 tsp vanilla
3-4 bananas, sliced
24 vanilla wafer, crushed
whipped cream (for serving)

Steps:

  • 1. Whisk together sugar, cornstarch, nutmeg and salt in a medium saucepan, then whisk in half and half and egg yolks. Place over medium heat and cook, whisking constantly, until pudding thickens and begins to boil, 5-8 minutes. Remove from heat and add butter and vanilla. Whisk until butter has melted. Transfer pudding to a bowl and refrigerate until cold, about 3 hours.
  • 2. In your preferred serving dish (I used individual parfait glasses. You could also use ramekins or even a casserole dish if serving a bigger crowd), create two sets of layers using the bananas, 1/3 of the pudding and Nilla wafers. Top with the remaining 1/3 of the pudding.
  • 3. Before serving, top with whipped cream and additional banana slices and Nilla wafers, if desired. ENJOY!!
