3 teaspoons plus 3 cups sugar, divided
1 cup butter, softened
6 large eggs, room temperature
1 cup mashed ripe bananas (about 2 medium)
1-1/2 teaspoons vanilla extract
1/2 teaspoon lemon extract
3 cups all-purpose flour
1/4 teaspoon baking soda
1 cup sour cream
GLAZE:
1-1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
3 to 4 teaspoons 2% milk

Steps:

  • Grease a 10-in. fluted tube pan. Sprinkle with 3 teaspoons sugar; set aside. , In a large bowl, cream butter and the remaining 3 cups sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Stir in bananas and extracts. Combine flour and baking soda; add to the creamed mixture alternately with sour cream, beating just until combined., Pour into prepared pan (pan will be full). Bake at 325° until a toothpick inserted near the center comes out clean, 75-85 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely., In a small bowl, whisk glaze ingredients until smooth; drizzle over cake. Store in the refrigerator. May be frozen for up to 1 month.

3 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 cup butter
½ cup vegetable shortening
2 cups brown sugar
1 cup white sugar
4 ripe bananas, mashed
5 eggs
2 teaspoons vanilla extract
½ cup milk
1 cup chopped pecans
½ cup butter
¼ cup brown sugar
¼ cup white sugar
1 teaspoon vanilla extract
¼ cup heavy cream

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Combine flour, baking powder, baking soda, and salt in a bowl. Set aside. Grease and flour a fluted tube pan.
  • Beat 1 cup of butter, shortening, 2 cups of brown sugar, and 1 cup of white sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the bananas, followed by the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in 2 teaspoons of vanilla extract with the last egg. Pour in the flour mixture alternately with the milk, mixing until just incorporated. Fold in the pecans; mixing just enough to evenly combine. Pour the batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour and 20 minutes.
  • Meanwhile, prepare the glaze. Heat 1/2 cup of butter, 1/4 cup of brown sugar, 1/4 cup of white sugar, 1 teaspoon of vanilla extract, and heavy cream in a saucepan over medium heat. Stir continuously until the sugars have dissolved, then gently simmer for 1 minute. Pour over baked cake while still in the pan. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

After a whole lot of research, I found just what I was looking for: a decadent, rich, and sinful cake with the amazing flavors of the ever so inviting banana. I found it on the Taste Of Home Website and I couldn't be more thankful that I did. The Recipe originally called for a simple powdered sugar glaze, but being me, I decided to take it to the next level by glazing it with my "French Vanilla Cream Cheese Glaze." 1 tablespoon sugar, plus
3 cups sugar, divided
1 cup butter, softened
6 eggs
3 mashed bananas

  • Preheat oven to 325 degrees and grease a bundt pan with cooking spray.
  • Sprinkle tablespoon of sugar onto pan. Set aside.
  • In a large bowl, beat butter and sugar until fluffy, about 5 minutes.
  • Once fluffy, add eggs, one at a time, beating well after each addition.
  • Add mashed bananas and extracts.
  • In a seperate bowl, mix together flour and baking soda.
  • Add flour mixture alternatley with the sour cream to the butter mixture.

2 cups butter (softened)
3 cups sugar (sifted)
3 bananas (softened and slightly brown)
3 cups cake flour (without salt and baking powder)

6 large eggs (room temperature)

Steps:

  • Preheat oven to 350 degrees.
  • Add Butter, Sugar and Cream Cheese to mixing bowl and mix until smooth and creamy (60 sec).
  • Mash the Bananas then add to the mixing bowl and mix well (15 sec).
  • Add Vanilla Extract to the mixing bowl and mix well (15 sec).
  • Add Eggs one at a time, ensure that each Egg is mixed well before adding the next Egg (10 sec per egg).
  • Sift the Cake Flour and Baking Powder together.
  • Add Cake Flour/Baking Powder into the mixing bowl and mix well until the mixture is smooth throughout (90 sec).
  • Grease and Flour at tube pan 10-in or 12-in.
  • Pour cake mixture to pan, put pan into oven and immediately reduce heat to 325 degrees.
  • Bake cake at 325 degrees for 1 hour and 30 minutes or until a wooden tester comes out clean.
  • Cool in pan for 10 minutes, then cool on wire rack.
  • Serve with Vanilla Bean Ice Cream and enjoy!

2 cups sugar
4 large eggs
2 cups mashed ripe bananas
1/3 cup buttermilk
1 teaspoon vanilla extract
3 cups all-purpose flour
1 1/4 teaspoons baking soda

1/2 cup chopped pecans

Steps:

  • Beat the shortening at medium speed for 2 minutes or until creamy.
  • Gradually add the sugar, beating 5 to 7 minutes.
  • Add the eggs one at a time, beating just until the yellow disappears.
  • Combine the bananas, buttermilk and vanilla in a medium bowl.
  • Combine the flour, baking soda and salt together.

You can use homemade pound cake for this recipe, but I have listed store bought for ease of preparation. This recipe comes from Mrs. Wilkes' Dining Room in Savannah, Georgia. Prep and Cook time does not include the 6 hours of chilling time!

4 cups half-and-half
4 egg yolks (save the whites for later use in the meringue)
1 1/2 cups sugar
1/4 cup cornstarch
1/4 teaspoon salt
3 tablespoons butter
2 teaspoons vanilla extract
1 (1 lb) butter pound cake, cubed (I use Sara Lee frozen All Butter Pound Cake)
4 large ripe bananas, sliced
1/4 cup sugar
1/8 teaspoon salt
4 egg whites
1/4 teaspoon vanilla extract

Steps:

  • Whisk together 4 cups half-and-half, 4 egg yolks, 1 1/2 cup sugar, 1/4 cup cornstarch, and 1/4 tsp salt in a saucepan over medium-low heat; cook, whisking constantly, 13 to 15 minutes or until thickened. Remove from heat; stir in 3 tbsp butter and 2 tsp vanilla until butter melts.
  • Layer half of pound cake cubes, half of bananas, and half of pudding mixture in 1 3-qt round baking dish. Repeat layers. Cover pudding, and chill for 6 hours.
  • Remove pudding mixture from the refrigerator. Preheat oven to 375 degrees.
  • Combine 1/4 cup sugar and 1/8 tsp salt.
  • Beat 4 egg whites and 1/4 tsp vanilla at high speed with an electric mixer until foamy. Add sugar mixture, 1 tbsp at a time, and beat 2 to 3 minutes or until stiff peaks form and sugar dissolves.
  • Spread meringue over pudding.
  • Bake at 375 degrees for 15 minutes or until golden brown.

15 1/4 oz yellow cake mix
13 oz strawberry gelatin jello
3/4 c vegetable oil
4 large eggs
1/3 c sprite or 7-up, can use water
1 1/2 c chopped pecans, divided
3 Tbsp flour
1 tsp vanilla extract
1 tsp lemon extract optional
1 c very ripe bananas, diced small
1 c strawberries, fresh, diced small and sweetened with 2 tablespoons sugar and 1 tablespoon water
CREAM CHEESE GLAZE
4 oz cream cheese, softened
1 Tbsp butter softened
1 tsp vanilla extract
2 c powdered sugar
2 Tbsp milk or half and half

Steps:

  • 1. Preheat oven to 350.
  • 2. In a large mixing bowl combine the cake mix, jello, eggs, oil, sprite, vanilla and lemon extracts.
  • 3. Toss one cup of the nuts with 3 tablespoons flour. Fold the nuts, strawberries and bananas into the cake mixture until well combined.
  • 4. Pour mixture into a 12 cup bundt pan that has been sprayed liberally with nonstick baking spray or greased and floured.
  • 5. Shake the pan around on a level surface to be sure the batter is evenly distributed.
  • 6. Place in the oven and bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
  • 7. Do not overbake. Remove from oven and allow to sit for about 20 minutes before turning it onto a cake plate.
  • 8. While it cools prepare the cream cheese glaze. Beat the cream cheese and butter with an electric mixer until fluffy.
  • 9. Add the vanilla and the powdered sugar. Add the milk or cream and beat until smooth.
  • 10. When it has cooled completely pour the cream cheese glaze over all and sprinkle with the other 1/2 cup of chopped pecans

1 (8 ounce) container Cool Whip

Steps:

  • Slice each pound cake into 4 slices and place in the bottom of a 9 X 13 inch pan.
  • Slice the bananas and place them on top of the pound cake slices.
  • In a medium sized bowl, combine the 2 pudding mixes and the 3 cups milk and mix well.
  • Stir in the sweetened condensed milk and mix well.

I am not a huge fan of packaged cake mixes, but this is really a life saver when you need something fast and have bananas. I've brought it to a number of potluck, where it's been a real crowd-pleaser.

3 large bananas, peeled and mashed
2 large eggs
1/3 cup milk

Steps:

  • Preheat oven to 350 deg. Grease two loaf pans or a 9x13 inch pan.
  • Mix all ingredients together, beating for about three or four minutes until thoroughly mixed. Pour into greased pan.
  • Bake until done, about 40-45 minutes for large pan, perhaps 35 minutes for loaf pans.

I used a basic recipe from "Cooking for the Children's Miracle Network" cookbook and doctored it up a bit. It turned out great. Cookbooks are available from JAP member:tiffani ross [tiffani29] I made this cake again tonight and added a cup of chunky peanut butter in place of the pecans. I had to bake it about 10 minutes longer...

  • 6. stir with a large spoon until well mixed.
  • 7. pour mixture into a well greased large tube cake pan. I use spray like Pam to grease pan.
  • 8. Bake at 350 degrees F. for 45 minutes. Adjust cooking time according to your oven, but be sure cake is done. A steak or paring knife stuck in middle of cake should come out clean.
  • 9. Let cake cool after baking, run a knife around inside and outside edges and remove cake from outside shell. Run knife under cake and turn out onto cake plate.
  • 10. Prepare Caramel Icing while cake is cooking. Ingredients: 2 tablespoons of margarine 1 cup of brown sugar (packed) 1/8 teaspoon salt 1/3 cup milk 1 teaspoon pure or 1 tablespoon imitation vanilla flavoring 1 and 1/2 cups of powdered sugar Melt butter and brown sugar in a small sauce pan until sugar is dissolved. Add milk and salt, cook for 3 minutes stirring constantly. Remove from burner and allow to cool. add vanilla and powdered sugar and beat for two minutes with mixer on low speed. Allow caramel icing to cool in refrigerator until it stiffens up somewhat. Ice cake after it has cooled down.

1 cup banana, mashed
1 (18 ounce) box yellow cake mix
1 (3 1/2 ounce) box instant vanilla pudding
1/4 cup vegetable oil
3/4 cup water
4 eggs
1/2 cup butter
1 cup sugar
1/4 cup water

Steps:

  • Preheat the oven to 325 degrees.
  • Mix together the mashed bananas, yellow cake mix, pudding mix, vegetable oil, 3/4 cup water, and the eggs. Mix well.
  • Pour into a bundt pan (that has been sprayed generously with non-stick cooking spray.).
  • Bake for 1 hour.
  • Meawhile, in a saucepan, melt the butter, then add 1 cup sugar and 1/4 cup water.
  • When the cake is removed from the oven, pour the sauce on over slowly (with the cake STILL in the pan).
  • Let sit at least 20 minutes to absorb the sauce.

3 tablespoons dry breadcrumbs
3 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground mace
1 cup mashed ripe banana
1/2 cup nonfat milk
1/2 cup banana liqueur
3/4 cup butter or 1/2 cup margarine, softened
2 cups granulated sugar
1 1/2 teaspoons vanilla extract
3 large eggs
1 tablespoon powdered sugar

Steps:

  • Preheat oven to 350°F.
  • Coat a 10-inch tube pan with cooking spray; dust with breadcrumbs.
  • Lightly spoon the flour into dry measuring cups, and level with a knife.
  • Combine the flour, baking powder, salt, and mace in a bowl, and stir well with a whisk.(Very important step - flour needs to be whisked.)
  • Combine the mashed banana, milk, and banana liqueur in a bowl.
  • Beat the butter in a large bowl at medium speed of a mixer until light and fluffy.
  • Gradually add the granulated sugar and vanilla extract, and beat the mixture until well-blended.
  • Add the eggs, 1 at a time, beating well after each addition.
  • Add the flour mixture to the sugar mixture alternately with the banana mixture, beating at low speed, beginning and ending with the flour mixture.
  • Spoon the batter into prepared pan.
  • Bake cake at 350° for 1 hour or until a wooden pick inserted in center comes out clean.
  • Cool in pan 10 minutes on a wire rack; remove from pan.
  • Cool completely on wire rack.
  • Sift powdered sugar over top of cake.
  • Note: To freeze extra pound cake, let cake cool completely on a wire rack; then cut into individual slices. Place unglazed slices in a heavy-duty zip-top plastic bag. Remove excess air from the bag; then seal and place it in your freezer for up to four months. To thaw, let it stand at room temperature.
  • Note: You can use a 12 cup Bundt pan instead of the 10-inch tube pan. Just reduce the oven temperature to 325º.

One of the many recipes pulled from my Granny's good ol' country cookbooks! I've been making this since I got married (in 1995). I recently misplaced it (obviously found it now) and tried in vain to find the recipe elsewhere. I tried several different recipes and none came close to this one. Could be sentimentality, but I think it's the best one out there! I often substitute some unsweetened applesauce for some of the shortening and whole grain flour for all purpose, but for the best pound cake texture and, if it's for a treat - go all out and make it as written! If it lasts long enough, the flavor gets better with each day that passes. I have tried in the past to wrap it and let it sit for a few days, but with my houseful of hungry little beggars, that rarely happens. As soon as they smell it baking, they're waiting with hands outstretched....

  • Pour into a greased and floured tube pan and bake for 1 hour and 10-20 minutes or until cake tests done.
  • Yield: 20 servings.
  • **NOTE**.
  • To prevent overbrowning of the top, I lay a piece of aluminum foil over the cake after it turned golden brown. Don't tighten it around cake; just lay it loosely over.
