A southern recipe that gives you another option for a sweet potato casserole. We love the combination of flavours and always make this one for the holidays.

4 medium sweet potatoes
1/2 cup chopped pecans (your favourite) or 1/2 cup walnuts (your favourite)
4 tablespoons butter (margarine will work too)
3/4 cup brown sugar
1/2 cup coconut
4 bananas, mashed
1 cup corn flakes, crushed
2 tablespoons butter, melted or 2 tablespoons margarine
1/4 cup brown sugar

Steps:

  • Cook potatoes in small amount of water until tender.
  • Mash and beat.
  • Add nuts, 4 tablespoons butter, sugar and coconut. If the mixture is dry, add either a little cream or orange juice to moisten.
  • Pour 1/2 of the sweet potato mixture into a buttered casserole.
  • Cover with mashed bananas and then top with rest of sweet potato mixture.
  • Combine crushed corn flakes, 2 tablespoons butter and brown sugar.
  • Cover top of sweet potatoes.
  • Bake at 350 degrees for 20 minutes.

4 lbs sweet potatoes
1 teaspoon salt
6 medium bananas, about 2 1/2 lbs
1/4 cup orange juice
1/2 cup light brown sugar, firmly packed
1/2 teaspoon cinnamon
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Scrub potatoes; place in large saucepan with salt. Add boiling water to cover; bring to boil over high heat. Cover pan and reduce heat to low; simmer 30-35 minutes or until potatoes are tender. Drain, peel and cut potatoes crosswise into 1/4" thick slices.
  • Preheat oven to 375. Using butter, margarine or solid vegetable shortening, thoroughly grease a 2 qt deep casserole dish.
  • Peel bananas; cut into 1/4" thick slices. In medium bowl, place bananas and orange juice; toss to coat. In small bowl, mix brown sugar with cinnamon. Set aside.
  • In bottom of prepared casserole dish, arrange 1/3 of the potato slices in a single layer, overlapping the slices slightly. Top with half of the banana slices and sprinkle with 1/3 of the sugar mixture. Dot with 1/3 of the butter.
  • Repeat layering with another 1/3 of the potato slices and the remaining bananas, reserving some bananas for the top. Sprinkle with 1/3 of the sugar mixture and 1/3 of the butter. Top with remaining potato slices; arrange several banana slices on top. Sprinkle with remaining sugar mixture; dot with remaining butter and pour on rest of orange juice. Bake 45 minutes or until bubbly.

SWEET POTATO PUREE WITH CARAMELIZED BANANAS AND ORANGES



Sweet Potato Puree with Caramelized Bananas and Oranges image

Kosher salt and freshly ground black pepper
2 pounds sweet potatoes, peeled and thickly sliced
8 tablespoons unsalted butter
2 allspice berries
1 vanilla bean, split
1 cinnamon stick
1 piece star anise
1 orange, quartered
1 banana, sliced
3 tablespoons maple syrup
1/2 cup heavy cream

Steps:

  • Bring a pot of salted water to a boil. Add the sweet potatoes and cook until very soft, about 20 minutes. Drain the potatoes, then cover and keep warm.
  • Meanwhile, melt 2 tablespoons of the butter in a large skillet over medium heat. Add the allspice, vanilla bean, cinnamon and star anise. Toast the spices, stirring occasionally, until fragrant, about 3 minutes. Add the orange quarters and banana slices, raise the heat to medium high and cook, flipping the fruit once, until slightly brown, about 2 minutes per side. Add the maple syrup to the skillet, cover, remove from the heat and set aside to allow the flavors to meld for about 30 minutes.
  • Squeeze the juice from the orange quarters into the syrup mixture and discard the peels. Remove and discard the spices, being careful not to lose any of the syrup.
  • Puree the warm sweet potatoes in a food processor, slowly adding the cream and remaining 6 tablespoons butter. Add the banana-syrup mixture and puree until fully incorporated. Season to taste with salt and pepper and serve warm.

5 medium sweet potatoes, scrubbed
4 bananas, unpeeled
1 cup (2 sticks) unsalted butter, at room temperature
1/4 cup honey
Kosher salt
1/2 cup all-purpose flour
3/4 cup dark brown sugar
1 1/2 cups pecans, chopped

Steps:

  • Preheat the oven to 375 degrees F.
  • Prick the sweet potatoes all over with a fork, put them in a roasting pan and roast for 30 minutes. Toss the bananas into the pan and continue roasting for 10 to 15 minutes, until both the bananas and potatoes are very soft. Remove the pan from the oven but don't turn the oven off.
  • When the potatoes are cool enough to handle, scoop out the flesh into a large mixing bowl. Peel the bananas and add them to the bowl along with 1 stick of the butter, and the honey. Season with salt and beat vigorously with a wooden spoon until everything's well combined and the mixture is fluffy. Spoon into an oven-proof serving bowl and smooth the top.
  • In a separate mixing bowl, use your fingers to rub together the remaining stick of butter, the brown sugar, flour, and pecans until the mixture is the consistency of coarse crumbs. Sprinkle the crumb mixture over the sweet potatoes and return to the oven. Cook for about 20 minutes, until the crumbs are golden. Serve hot.

1 teaspoon salt
6 bananas, peeled
1/2 cup brown sugar, firmly packed

Steps:

  • Preheat oven to 375°F .
  • Scrub, peel and slice your sweet potatoes 1/4" thick. Boil potatoes in salted water until fork tender, drain and set aside.
  • Using some butter, grease a 2 quart casserole dish. Cut the peeled bananas into 1/4" slices. In a medium size bowl add the bananas and orange juice, mix to coat. In another small bowl mix together the brown sugar and the cinnamon.
  • In the bottom of the prepared casserole dish layer 1/3 of the potatoes, then 1/2 of the bananas, sprinkle 1/3 of the sugar mixture and use 1/3 of the butter. Repeat layering reserving 12 slices of bananas for the top. Finish the third layer with the remaining potatoes and the 12 banana slices and the rest of the sugar mixture and butter. If there is any orange juice remaining in the bowl pour it on top.
  • Bake 45 minutes or until bubbly. Yum Yum!

4 teaspoons cornstarch
1/2 teaspoon salt

2 tablespoons grated orange zest
1/2 cup chopped walnuts

Steps:

  • Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Drain. When potatoes are cool, peel and cut into 1/2-in. slices. Arrange in a greased shallow 3-qt. baking dish; set aside., In a large saucepan, combine the brown sugar, cornstarch, salt and cinnamon.
