Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
- In a large bowl, cream together the margarine, brown sugar and white sugar. Beat in the egg and vanilla. Combine the flour, baking soda, salt, cinnamon, nutmeg and cloves; stir into the creamed mixture until well blended. Stir in the oats, bananas, raisins and coconut, one at a time using a wooden spoon. Drop by rounded spoonfuls 2 inches apart onto the prepared cookie sheet.
- Bake for 11 to 13 minutes in the preheated oven. Allow cookies to cool on baking sheet for 1 minute before removing to a wire rack to cool completely.

SUGAR-FREE OATMEAL BANANA RAISIN COOKIES
I was searching for something sugar-free to take to a bake sale, and came across a recipe similar to this online. This is my modified version of that recipe. These sold quickly at the bake sale! They have a granola-like appearance and are soft and chewy. A little cinnamon added in might be good, too.

Steps:
- Preheat oven to 350°.
- Mash bananas in a large bowl. Stir in the rest of the ingredients and combine well.
- Drop by teaspoonfuls onto a cooking sheet sprayed with baking spray.
- Bake for 15 minutes or until lightly browned.

A twist on peanut butter cookies and oatmeal raisin cookies. The first time I made these I used peanuts, I will most likely use walnuts next time. But if you really like peanuts, use them, they go great with this recipe. Pecans would also be good.

- Combine shortening, peanut butter and brown sugar.
- Mix in egg, milk and vanilla.
- Sift and combine flour, cinnamon, salt, nutmeg and baking soda mix in well to wet misture.
- Mash and add banana, mix well.
- Stir in quick oats, fold in raisins and nuts of your choice.
- Place round tablespoonfuls on greased baking sheet spaced 1-2-inches apart.
- Bake at 375° for 12-13 minutes or until done.

- 1. Before you begin baking, mix together the beaten egg and vanilla. Stir in the raisins, and allow to soak in the egg mixture for an hour or two, stirring periodically.
- 2. Preheat oven to 350. In a small bowl, whisk together flour, baking powder, baking soda, and salt.
- 3. In a separate bowl, cream together the butter, sugars, and banana until combined. Add in the egg, vanilla, and raisin mixture. Gradually add in the flour mixture until thoroughly mixed. Stir in the oats. (Dough will not be very stiff.)
- 4. Drop dough by tablespoonfuls onto a baking sheet lined with parchment paper. Bake for 11-14 minutes until set and lightly brown. (mine only took 11) Let the cookies cool for about 5 minutes on the pan, then transfer to a wire rack to cool completely. Best if stored in the fridge.

- 2. Stir in the oatmeal and raisins. Drop by spoonfuls onto prepared cookie sheet and bake 10 to 12 minutes.
