2 cups all-purpose flour
1 cup rolled oats
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup butter, room temperature
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups bananas, mashed
3/4 cup buttermilk

Steps:

  • In medium bowl mix together flour, rolled oats, baking powder, baking soda, salt and nutmeg.
  • In large bowl, with electric mixer, cream together butter and sugar until light and fluffy.
  • Add eggs and vanilla, beating well.
  • Add dry ingredients alternately with bananas and buttermilk, mixing lightly after each addition.
  • Pour batter into greased 13 x 9 inch (32 x 23 cm) cake pan.
  • Bake at 350 F ( 180 C) for 35 - 40 minutes or until toothpick inserted in centre comes out clean.
  • Cool completely on cake rack.
  • Ice with Caramel Fudge Frosting.
  • Frosting: 1/3 cup butter 1 cup lightly packed brown sugar 1/4 cup milk, 2% 2 cups sifted icing suga r Melt butter in saucepan.
  • Stir in brown sugar.
  • Heat to boiling, stirring constantly.
  • Boil and stir over low heat 2 minutes.
  • Stir in milk.
  • Heat to boiling.
  • Remove from heat. Gradually stir in icing sugar.
  • Spread on cooled cake. Yield: 24 servings Garnish plate with a sliced strawberry and banana slices that have been dipped in orange or lemon juice.

2 cups flour
1 cup oatmeal
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup shortening
1 cup sugar
2 eggs, beaten
1 teaspoon vanilla
1 1/2 cups bananas, ripe (3 - 5)
3/4 cup buttermilk
1/4 cup shortening
3/4 cup brown sugar, lightly backed
1/3 cup evaporated milk
1 1/2 cups coconut
3/4 cup walnuts

Steps:

  • In a bowl, combine the flour, oatmeal, baking powder, salt, nutmeg and the shortening. Cream the shortening with the sugar and eggs.
  • Add the dry ingredients to the wet alternating with the banana and buttermilk. Spread into a 9 x 11 baking dish.
  • Bake in a 350 oven for 35 - 40 minutes.
  • Topping: Combine all the ingredients in a small saucepan. After the cake has cooked for 40 minutes, spread the topping over the cake. Broil with the oven door partially open for 2 minutes. Watch carefully as it could burn.

½ cup butter, softened
⅔ cup packed brown sugar
2 eggs
1 cup mashed bananas
1 teaspoon vanilla extract
¾ cup all-purpose flour
1 ⅓ cups rolled oats
¼ teaspoon salt
1 teaspoon baking soda
¾ cup rolled oats
⅓ cup packed brown sugar
2 tablespoons butter, melted
2 tablespoons chopped walnuts
½ teaspoon ground cinnamon

Steps:

  • Stir together flour, 1 1/3 cups oats, salt, and baking soda.
  • In a large bowl, cream 1/2 cup butter or margarine with 2/3 cup brown sugar. Beat in the eggs, then the bananas and vanilla. Beat the flour mixture into the banana mixture. Turn the batter into a greased and floured 8 inch square pan.
  • Mix 3/4 cup oats, 1/3 cup brown sugar, melted butter or margarine, walnuts, and cinnamon together until crumbly. Sprinkle evenly over the top of the batter.
  • Bake in preheated oven at 350 degrees F (175 degrees C) for 40 to 45 minutes, or until it tests done. Transfer to a rack to cool.

1 cup firmly packed brown sugar
1 large egg
1 cup mashed ripe banana (2 to 3 medium)
1 3/4 cups quick oats (not instant or old fashioned)
1 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon nutmeg
1/2 cup coarsely chopped walnuts
2 tablespoons Butter Flavor Crisco
1/4 cup mashed banana
1 teaspoon lemon juice
2 cups confectioners' sugar
finely chopped walnuts (optional)

Steps:

  • Heat oven to 350°F.
  • Grease baking sheet; set aside.
  • Cream 3/4 cup Crisco and brown sugar in large bowl at medium speed until well blended.
  • Beat in egg.
  • Add one cup mashed banana.
  • Mix until creamy.
  • Combine oats, flour, salt, cinnamon, baking soda and nutmeg.
  • Stir into creamed mixture.
  • Mix in one half cup nuts.

2 teaspoons baking powder
3/4 teaspoon ground cinnamon

ICING:
1/2 cup packed brown sugar
1/4 cup butter, cubed
1/4 cup fat-free milk
1/2 teaspoon vanilla extract

Steps:

  • In a small bowl, pour boiling water over oats; let stand 10 minutes. , Meanwhile, preheat oven to 350°. In a large bowl, beat butter and sugars until crumbly, about 2 minutes.
