I've been on an Oatmeal kick lately...makes everything chewy and yummy...these soft cookies remind me of a banana muffin...so yummy... a great way to use up ripe banana's...enjoy!

3/4 c crisco
1 c sugar
1 egg
1 tsp vanilla
2 large ripe banana's or 1 cup ( mashed )
1 1/2 c all purpose flour
1/2 tsp salt
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp nutmeg
2 c quick oats
1 - 1 1/2 c chocolate chips - i use semi-sweet

Steps:

  • 1. Preheat oven to 375 degree F. Cream shortening and sugar until light and fluffy. Beat in egg and vanilla.
  • 2. Combine the flour, salt, baking soda, cinnamon and nutmeg.
  • 3. Add to creamed mixture and mix well. Stir in bananas, oats and chocolate chips.
  • 4. Drop tablespoon size portions onto greased cookie sheet and bake for 10 - 12 minutes.
  • 5. Remove immediately to wire racks to cool.

Number Of Ingredients 14

1/4 cup unsalted butter, at room temperature
1/2 cup brown sugar
1 medium banana
1 large egg, at room temperature
1 teaspoon vanilla extract
1/2 teaspoon apple cider vinegar
1 cup old fashioned oats
1 cup oat flour (or create your own by grinding 1 1/4 cups of rolled oats in a blender)
1/4 cup flax seed meal
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 pinch nutmeg
1/2 teaspoon salt
1/2 cup semi-sweet chocolate chips (optional)

Steps:

  • Preheat the oven to 350°F.
  • Cream butter, brown sugar and banana.
  • Beat in the egg, vanilla and apple cider vinegar.
  • In a separate bowl, combine oats, oat flour, flax seed meal, baking soda, cinnamon, nutmeg and salt.
  • Add dry ingredients to wet ingredients until just combined. Do not overmix.
  • Fold in chocolate chips.
  • Drop batter by heaping tablespoonfuls 2 inches apart onto a baking sheet lined with parchment or a silicone baking mat.
  • Bake for 10-12 minutes, until browned around the edges.
  • Cool the cookies on the baking tray.
