A very old banana nut cake recipe which has been handed down through my family.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
- Separate the eggs and set aside.
- Stir the baking soda into the buttermilk. Cream 1/2 cup of the butter or margarine with the white sugar. Add the egg yolks, and vanilla, beating well. Add flour alternately with the mashed bananas. Stir in the buttermilk mixture.
- Beat the egg whites until stiff. Stir the pecans into the cake batter then fold in the egg whites. Pour batter into prepared pans.
- Bake at 350 degrees F (175 degrees C) for 25 minutes or until cakes test done. Let cakes cool in pans.
- To Make Icing: Cream 3 tablespoons butter or margarine with the confectioners' sugar. Stir in the heavy cream until well blended. Spread icing on to cooled cake layers. Top with pecan halves if desired.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®).
- Combine 1/4 cup sugar and cinnamon in a small bowl and mix in pecans. Sift flour, baking powder, baking soda, and salt together in another bowl.
- Beat 1 cup sugar and shortening together with an electric mixer in a large bowl until light and fluffy. Beat in banana, eggs, and vanilla extract. Add sour cream and mix until just blended. Add flour mixture and beat until blended.
- Sprinkle 2 tablespoons of sugar-nut mixture into the prepared cake pan. Top with 1/2 of the cake batter. Follow with remaining nut mixture and cake batter.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes. Cool for 5 minutes in the pan and then turn the cake out onto a wire rack to finish cooling.
- Melt butter in a saucepan over low heat. Add brown sugar and milk. Bring to a boil; continue to boil for 1 to 2 minutes. Remove from heat and add vanilla extract; mix in powdered sugar gradually. Top the cooled cake with the frosting.

- Grease and flour 2 loaf pans or 1 large bundt pan.
- Mix all ingredients together until well blended and pour into pan(s).

BANANA-NUT BUTTERMILK BUNDT® CAKE

- For the cake, cream the shortening and sugar together until fluffy; add eggs, one at a time, beat after each.
- Blend dry ingredients and add alternately with buttermilk; stir in bananas and walnuts.
- Bake at 350°F in two greased 9 inch cake pans for 35 or 40 minutes.
- Wait 10 minutes to remove from pan.
- Let cool completely before frosting.
- For the frosting, melt the butter in a saucepan, stir in the brown sugar and bring to boil.

- 1. Preheat oven to 350 degree F. Spray and flour a 10 inch bundt cake pan, ( I use bakers joy. ) Combine flour, salt, baking powder, baking soda in a small bowl Set aside. Make nut crumble: Mix together brown sugar, cinnamon and nutmeg, with a pastry blender cut in the butter until crumbly. Stir in nuts. Set aside. 2 In a large bowl, beat butter and sugar until fluffy. Beat ion the eggs and vanilla. Alternate adding the flour mixture with the pureed bananas, ending with flour. Stir in raisins if using.
- 2. Spread half the batter into the prepared pan and top with half of the nut mixture, as evenly as you can.
- 3. Spread remaining batter and evenly crumble remaining nut mixture.
- 4. Bake for 45 - 50 minutes or until pick comes out clean.
- 5. Cool on rack for 10 minutes, then remove from pan and continue cooling on rack.
- 6. I made a cinnamon drizzle using about 3/4 cup confectioners sugar, a few sprinkles of cinnamon and heavy cream until was my preferred consistency. Drizzle over cooled cake if preferred.

- Butter and flour 3 (9-inch) round cake pans; set aside. Preheat oven to 350°F.

CARAMEL BANANA NUT POKE CAKE RECIPE

- Make yellow cake according to the box directions for a 9x13 cake. Let cool. Using a fork, poke holes all over the top of the cake. Pour sweetened condensed milk and caramel sauce over the top of the cake, letting them soak into the cake.
- In a mixing bowl, whisk together banana pudding mix and milk for two minutes, until it begins to thicken. Fold in Cool Whip until completely combined. Spread Cool Whip/pudding mixture over the top of the cake.
- Sprinkle on nut topping and drizzle with any leftover caramel. Store in the refrigerator until time to serve.

- Grease and flour oblong pan, 9x13x2 inches, or three 8-inch or two 9-inch round layer pans.

- 1. Cream butter and sugar, add egg yolks and mashed bananas. In separate bowl, pour boiling water over pecans and set aside. Add lemon juice to banana mixture. Sift flour and baking powder together and add to batter alternately with butter milk and soda mixture. Add pecans.
- 2. Beat egg whites with salt until stiff peaks form. Fold in egg whites.
- 3. Bake in two 9 inch layer cake pans at 300 for 35, until golden brown and done in center. Remove from oven and cool completely before spreading with fill/frosting.
- 4. Filling/Frosting-Mix butter and sugar until creamy. Add bananas, nuts and juice( may need additional confectioners sugar if you like thicker frosting). Spread between layers and on sides and top of cake.
