Sweet and full of banana flavor! Great with coffee. Warm right out of the oven. Taste great warm or cold. Simply delicious!! Enjoy!!!

Number Of Ingredients 18

1 c sugar
1/2 c brown sugar
1/3 c sour cream
4 oz cream cheese softened
2 eggs
4 ripe bananas
2 tsp vanilla
2 c flour
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp salt
1 c chopped pecans,or walnut's 1 cup of toasted pecans
BROWN BUTTER FROSTING
1/2 c butter
4 c confection sugar
2 tsp vanilla extract
2-4 Tbsp milk
1/4 c toasted whole pecans for garnish

Steps:

  • 1. Toasted pecans in oven on a baking sheet until toasted about 10 minutes. Heat oven 375 degrees. Line 10x15 jelly roll pan or 13x9 pan with parchment paper. or butter the pans. I use parchment paper.If you use 9x13 pan the bars will be thicker like cake.
  • 2. Blend the sugar,sour cream,cream cheese,and eggs together until smooth.
  • 3. blend in bananas,and vanilla until incorporated.
  • 4. add flour,baking soda,salt with spoon. Mix well!!! add pecans and stir until blended.
  • 5. put in to pan and bake for about 30 minutes at 375 degrees or until pick comes out clean.
  • 6. Time to make your frosting. You can frost cake while warm. It actually works better. If frosting is thick add a bit more milk to it,
  • 7. melt butter in sauce pan until golden brown.remove from heat. add confection sugar,vanilla and milk and stir until blended well. If frosting is thick add more milk until you get a smooth frosting.
  • 8. now frost cake while it is warm.if you use the 9x13 pan for the cake use less of the frosting. cool and cut in to bars. I eat one while warm! LOL Enjoy with a cup of coffee or tea.

What to do with those last two bananas? Make these quick and easy cookies! This uses a yellow cake mix as a base and adds lots of goodies on top. This recipe is from Camilla Saulsbury's book Cake Mix Cookies.

Number Of Ingredients 8

1 (18 1/4 ounce) box yellow cake mix
1/3 cup vegetable oil
1 large egg
1 cup nuts, chopped (I used pecans)
1 (14 ounce) can sweetened condensed milk
1 cup banana, mashed (about 2 medium)
1 cup butterscotch chips or 1 cup milk chocolate chips
1 1/3 cups sweetened flaked coconut

Steps:

  • Preheat oven to 350°F
  • Spray the bottom only of a 13 x 9 inch metal baking pan with nonstick cooking spray.
  • In a large bowl beat cake mix, oil and egg until well blended and crumbly.
  • Stir in nuts.
  • Set aside 1 cup of the crumb mixture.
  • Firmly press remaining crumb mixture on bottom of prepared pan.
  • In a small bowl, combine condensed milk and mashed banana; pour evenly over crust.
  • Top with butterscotch chips and coconut; press down firmly.
  • Sprinkle with reserved crumb mixture.
  • Bake 25-28 minutes or until lightly browned.
  • Cool completely.
  • Cut into bars.
