BAHAMA MAMA BANANA RUM CAKE



Bahama Mama Banana Rum Cake image

A cake that blends a favorite drink with a rum cake and pound cake. This is dense, but not heavy, and the spicy molasses kick from the dark rum enhances the banana flavor. You may use light or dark brown sugar.

1/2 cup unsalted butter
1/4 cup water
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1/2 cup dark rum
1 1/2 cups chopped pecans, toasted
1 1/2 cups unsalted butter
2 cups granulated sugar
1 cup firmly packed brown sugar
5 large eggs, room temperature
1 cup mashed banana, very ripe
2 teaspoons vanilla extract
3 tablespoons dark rum
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3/4 cup sour cream

Steps:

  • TO MAKE THE GLAZE.
  • Combine the butter, water, and sugars in a heavy-bottomed saucepan over medium-high heat and bring to a boil. Reduce heat to medium-low and simmer for 5 minutes. Remove from heat and stir in the rum. Set aside and keep warm.
  • TO MAKE THE CAKE.
  • Position a rack in the middle of the oven and heat to 350°F Spray a 10-cup tube pan with nonstick cooking spray. Sprinkle the pecans in the bottom of the pan and set aside.
  • In a large bowl, use an electric mixer to beat together the butter and sugars until light and fluffy.
  • One by one, beat in the eggs, taking care to mix well between each addition.
  • Beat in the mashed bananas, vanilla, and rum.
  • Sift the flour, baking soda, baking powder, and salt over the batter and fold in using a rubber spatula, just until no streaks of flour remain.
  • Fold in the sour cream.
  • Spoon the batter into the pan and spread to the pan using the back of a rubber spatula.
  • Bake about 60-80 minutes, or until a toothpick inserted in the center comes out clean. Transfer to a wire rack and allow to cool for 5 minutes. Use a wooden skewer to poke holes all over the cake and pour 1/4 cup glaze over the cake.
  • Allow to cool for 5 more minutes. Place a serving platter over the pan and invert to release the cake. Spoon the remaining glaze over the cake, little by little, and let stand until the glaze is completely absorbed by the cake. If the glaze starts to pool at the base of the cake, use a small metal spatual to spread it up and around the sides of the cake. As the glaze cools, it will form a rummy, sugary shell.
  • Allow to cool completely before serving.

  • In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer.
  • Using another bowl, combine the cream cheese and condensed milk together and mix until smooth.
  • Fold the whipped topping into the cream cheese mixture.
  • Add the cream cheese mixture to the pudding mixture and stir until well blended.

  • Make pudding according to directions on box for pie filling, but do not let set. Mix in Cool Whip & Eagle Brand. Slice bananas into desired thickness. In a large bowl, starting with pudding mixture, layer pudding, then cookies, then bananas. Repeat until all pudding mixture is used and top with cookies. Cover & refrigerate 3-4 hours until set.

1 box vanilla wafers
1 cup sugar
2 tablespoons flour
2 eggs
2 cups milk
1 teaspoon vanilla

Steps:

  • In a large bowl, place one layer of sliced bananas, then a layer of wafers until bowl is filled, making sure top layer is wafer. Set aside. In a medium saucepan beat eggs, add sugar and mix well, add flour, milk, vanilla. Bring to boil, pour over bananas and wafer mixture. Chill and Serve.
  • TIP: FRIED PLANTAINS
  • To peel easily, soak in cold water and peel off skin with knife. Cut into 2-inch diagonal slices and fry in 380 degree oil until golden.

2 1/2 cups sugar
6 tablespoons all-purpose flour
Pinch salt
Two 12-ounce cans evaporated milk
4 egg yolks
1/2 stick butter, cubed
1 teaspoon vanilla extract
1 box vanilla wafers, plus more for garnish, crumbled
5 bananas, sliced
Whipped cream

Steps:

  • In a 3-quart heavy saucepan on low heat, add sugar, flour and salt. Pour in the evaporated milk and stir constantly. The mixture will thicken slowly, about 15 minutes.
  • Lightly beat the egg yolks in a medium size bowl. Add a ladleful of the thickened milk mixture to the eggs and whisk, to temper the eggs. Add the egg mixture into the saucepan and continue to whisk and cook until incorporated, roughly 2 to 3 minutes.
  • Remove the saucepan from the heat and stir in the butter and the vanilla extract. Place the pudding into a bowl and cover with plastic wrap. Let cool in refrigerator for 2 1/2 hours.
  • Into a large bowl or trifle dish, add a layer of vanilla wafers, a layer of sliced bananas, and top with pudding. Add the whipped cream and then repeat the layers. Garnish with crumbled cookies on top.

This recipe was one of my favorites passed down from my mother. Whether on a rainy day with a hot cup of warm cocoa, or waking up to eat for breakfast, this bread is an instant classic!

2/3 c sugar
1/2 tsp salt
1 tsp baking powder
1/4 tsp baking soda
1/2 c butter, softened
2 eggs, beaten
1 c mashed bananas (2 medium ripe bananas)
1/2 c pecans or walnuts, chopped (optional)

Steps:

  • 1. Preheat oven to 350*. Grease and flour 9x5 loaf pan. In large bowl, use a whisk and mix all dry ingredients.
  • 2. With a pastry blender, cut in shortening until mixture resembles course crumbs. With a fork, stir in mashed bananas & eggs until blended. (Also add nuts here if desired).
  • 3. Spread batter evenly in pan. Bake 55 minutes to 1 hour until toothpick inserted in center comes out clean.

My family absolutely loves when I make this! It looks complicated, but it's really not. I got this out of a Paula Deen magazine. Just a few hints...I use flexible cookware when I bake and the first time I made this I had to use 3 regular sized loaf pans. The next time I used two flexible bunt pans it turned out great! I couldn't find one on here that used brown sugar in place of white. So I thought I would share this one. I don't know how many servings this makes, all I know is that it will feed my brood and then some. **Note: I have substituted Splenda Brown Sugar and light sour cream as well; it still turns out fantastic! 1/8 teaspoon(s) salt
1/3 cup(s) butter, melted
3/4 cup(s) sugar
3 - bananas, very ripe
1 - egg, beaten
1 teaspoon(s) vanilla
1 teaspoon(s) baking soda
1/2 cup(s) walnuts, chopped

Steps:

  • Preheat oven to 350 degrees. Lightly butter a 9 x 5 inch loaf pan.
  • In a bowl, Mach the bananas until smooth. Stir the melted butter into the mashed bananas.
  • Mix in the baking soda and salt.
  • Stir in the sugar, egg and vanilla.
  • Mix in the flour. Then stir in the nuts.
  • Pour into the prepared loaf pan.
  • Bake for 1 hour or until done. A toothpick inserted into the middle should come out clean.
  • Remove from oven and cool on a wire rack. When cooled, remove from the pan and slice.

1 mashed ripe banana
1 c pecans,chopped

  • 1. Cake:combine all ingredients.Pour into 2(8inch)round greased and floured cake pans.Bake at 375degrees for 25 minutes.Or if using a bundt pan 350 degrees for 45 minutes until tested done.Let cool before inverting.

1 box french vanilla instant pudding. (lg box)
1 can(s) eagle brand condensed milk
3 c cold milk
12 oz cool whip
1 box cinnamon sugar graham crackers or vanilla wafers
4 large bananas
1 can(s) crushed pineapple (drained) optional.

Steps:

  • 1. Prepare pudding by pkg directions. Stir in EagleBrand milk and 3/4 of cool whip. Line bottom of 9x13 dish with graham crackers or vanilla wafers. Cover with pudding mixture and sliced bananas. Continue to layer crackers, pudding, bananas etc til you use it all. Top with cool whip and crushed crackers or wafers.
  • 2. If you use the pineapple, layer it with the bananas.

1 - regular size tub of non dairy whipped topping
1 - medium tub of sour cream
2 cup(s) cold milk
4-5 - bananas
1 box(es) vanilla wafers

  • Mix together pudding, whipped topping (reserving enough to cover the top), sour cream & milk. Refrigerate at least 1 hour before assembling.
  • Before serving make about 3 layers of filling, sliced bananas & vanilla wafers in a serving bowl. Spread remaining whipped topping on top.
  • For garnish crush some wafers on top of whipped topping and arrange some slices of banana. Serve immediately or bananas will brown and become runny.

4 bananas, sliced
3 cups milk
1 box Nilla Wafers
2 small boxes instant French vanilla pudding
1 package (8 ounce) cream cheese
1 can (14 ounce) sweetened condensed milk
1 container (12 ounce) Cool Whip

Steps:

  • Line the bottom of a 9"x13" with Nilla Wafers. The original recipe called for Pepperidge Farm Chessmen cookies. It tasted really good with the Chessmen cookies, I just prefer the Nilla Wafers. Slice your bananas and layer evenly on top of the wafers. The original recipe called for 6-8 bananas and when I first made it, I think I used about that much. I personally don't like A TON of bananas in my banana pudding (I know, weird). I think four is the magic number...not too many, not too few. Just PERFECT. Combine the milk and pudding mix and blend using a handheld mixer. I've found that using the two small boxes & the 3 cups of milk makes an awesome consistency for the pudding. It sets just PERFECTLY! In a separate bowl, mix together cream cheese & condensed milk until smooth. Gradually fold in whipped cream. Add the cream cheese mixture to the pudding mix & stir until well blended. Pour the mix evenly over the bananas. OMG...SO YUMMY!!! But wait!!.. Layer the remaining Nilla Wafers on top of the mix to top it all off! Looks heavenly, right?! That would be an understatement!!! I made this the weekend my family came to visit and it was a HIT! We practically licked the pan clean!
