1 3/4 cups unbleached white flour
3/4 cup flax seed meal
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
2 eggs
1/3 cup canola oil
2 -3 medium very ripe bananas
1/2 cup chopped walnuts
1/4 cup light brown sugar (packed)
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven at 350°F
  • Grease a 8-1/2 x 4-1/2-inch bread pan; set aside.
  • Mix together flour, flaxseed meal, sugar, baking powder, baking soda and salt in a bowl.
  • In a separate bowl, beat together eggs and oil.
  • Add dry ingredients and mashed bananas alternately to egg and oil mixture, stirring until dry ingredients are moistened. Pour into prepared pan.
  • Combine topping ingredients and sprinkle over batter in loaf pan. Pat down firmly into batter or swirl topping into batter with knife.
  • Bake 55-60 minutes.

1/2 cup flax seed
2/3 cup mashed ripe banana
1/2 cup sugar
1/4 cup vegetable oil
2 large eggs
1 1/2 cups all-purpose flour
1/4 cup flax seed
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup whole pitted dates, chopped
cooking spray

Steps:

  • Place 1/2 cup flax seeds in a blender, and process until ground to measure 3/4 cup flaxseed meal.
  • Set flax seed meal aside.
  • Preheat oven to 350°.
  • Beat the banana, sugar, oil, and eggs at medium speed of a mixer until well-blended.
  • Lightly spoon flour into dry measuring cups, and level with a knife.
  • Combine flour, flaxseed meal, 1/4 cup flax seeds, baking powder, baking soda, and salt, and gradually add to sugar mixture, beating until well-blended.
  • Stir in chopped dates.
  • Spoon the batter into an 8x4-inch loaf pan coated with cooking spray.
  • Bake bread at 350° for 55 minutes or until a wooden pick inserted in center comes out clean.
  • Cool 10 minutes in pan on a wire rack, and remove from pan.
  • Cool completely on wire rack.
  • Serve and enjoy!

2 tablespoons unsalted butter, melted, plus 1 teaspoon unsalted butter, softened, for pan
1/2 cup whole-wheat flour
3/4 cup all-purpose flour
1/4 cup ground golden flaxseed (from about 2 tablespoons whole)
3/4 teaspoon coarse salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 large egg, plus 1 large egg white
1/2 cup light-brown sugar
1 1/2 teaspoons pure vanilla extract
3/4 cup mashed very ripe bananas (about 2 medium bananas)
1/2 cup walnuts (about 1 3/4 ounces), toasted and coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan, and set aside. Whisk together the flours, flaxseed, salt, baking powder, and baking soda in a medium bowl, and set aside.
  • Put egg and egg white in the bowl of an electric mixer fitted with the paddle attachment, and mix on medium-low speed until well combined, about 2 minutes. Add melted butter, sugar, vanilla, and bananas, and mix until combined. Add the reserved flour mixture, and mix on low speed until well incorporated, about 10 seconds. Stir in walnuts.
  • Pour batter into buttered pan. Bake until golden brown and a cake tester inserted into the center comes out clean, about 35 minutes. Let cool slightly in pan on a wire rack. Invert bread to unmold; reinvert, and let cool completely on rack.

This is the best vegan banana bread ever-super moist and deliciously sweet from the dates.

12 ounces firm silken tofu
1/2 cup light agave nectar
1 cup mashed ripe bananas
1/4 cup unsweetened apple juice
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup canola oil
1 3/4 cups sprouted spelt flour or sprouted whole wheat flour
1 tablespoon baking powder
1 cup pitted dates, chopped
1/2 cup walnuts, chopped
2 tablespoons flaxseeds (optional)

Steps:

  • Preheat the oven to 325°F.
  • Coat a 4- by 8-inch loaf pan with nonstick canola oil spray and flour lightly. In a food processor, combine the tofu, agave nectar, bananas, apple juice, vanilla extract, cinnamon, nutmeg, and canola oil. Blend until smooth and creamy, about 2 to 3 minutes. Sift together the flour and baking powder into a large bowl. Add the tofu mixture and mix with a wooden spoon until just blended. Fold in the dates, walnuts, and flaxseeds.
