1 cup coconut milk, divided
1 lime, juiced, divided
1/2 cup sugar, divided
6 cups ice, divided
4 ounces white rum, optional, divided

Steps:

  • Into a blender add 1 banana, 1/2 cup coconut milk, 1/2 of the lime juice, 1/4 cup of the sugar, and 3 cups of ice and add 2 ounces of rum if desired. Blend until smooth, about 1 minute. Pour into 2 tall glasses, and repeat for 2 more drinks.

  • Combine strawberry nectar, bananas, and rum in a blender. Blend until smooth. Stir in strawberries.
  • Divide mixture between small ice pop molds. Freeze for 8 hours, or overnight. Run molds under cold water for 10 to 15 seconds to release pops.

  • Do ahead: In a blender, purée the entire can of peaches. Set peach purée aside in a separate bowl/pitcher. Rinse blender bowl and return to base. To make 2 cocktail drinks: Juice two limes, and pour juice into blender. Add rum, 5 ounces (1/3 of the purée from the 15-ounce can) peach purée, strawberries and sugar.
