50 grams (1/4 cup) caster sugar or granulated sugar
1 teaspoon vanilla extract
1 large egg, room temperature
180 grams (3/4 cup) mashed banana, (2-3 overripe bananas)
210 grams (1 and 1/2 cups) plain flour or all purpose flour
1 and 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
120 ml (1/2 cup) buttermilk
115 grams (1/2 cup or 1 stick) butter, room temperature
250 grams (1 and 1/4 cup) full fat cream cheese, room temperature
1 teaspoon vanilla extract
375 grams (3 cups) icing sugar or powdered sugar, sifted
Walnuts, crushed, for decorating

Steps:

  • Line a 12-hole muffin tray with cupcake liners. Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.
  • In a large mixing bowl, add butter and sugars and beat with an electric mixer on medium speed until pale and creamy. Add vanilla and egg and beat briefly just until combined.
  • In a separate bowl, add flour, baking powder, cinnamon and salt and whisk briefly.
  • Add flour mixture to the butter mixture, along with buttermilk and the mashed banana. Gently mix until just combined. The batter will be thick and creamy.
  • Spoon batter into prepared cupcake liners and bake for approximately 18-20 minutes or until the cakes spring back lightly to the touch. Remove cupcake from muffin tray and place on a wire rack to cool completely.
  • To make the cream cheese frosting, add butter and cream cheese (ensuring both are at room temperature) to a large mixing bowl. Beat with an electric mixer on medium speed for 2-3 minutes until smooth and creamy. Add vanilla.
  • Add sugar, 1 cup at a time, and continue to beat on a medium speed until smooth. Transfer frosting to a large piping bag fitted with a large round tip. Pipe frosting onto each cupcake. Scatter over crushed walnuts.

Fill paper-lined muffin cups two-thirds full. , Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., Meanwhile, for filling, in a small saucepan, combine flour and milk until smooth. Bring to a boil. 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine salt
1 stick butter, softened
1/2 cup granulated sugar

2 large ripe bananas, peeled, and mashed
3/4 cup chopped walnuts
4 ounce cream cheese, softened
2 tablespoons butter, softened

Steps:

  • Preheat the oven to 350 F. Line a (12-cup standard) muffin tin with paper cupcake liners.
  • In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, add the butter and granulated sugar. Beat with a hand-held mixer until combined. Add the sour cream and vanilla. Slowly beat in the eggs, one at a time. Did not really turn out like a filling...rather everything kind of mixed throughout the cupcake. Made a wonderful flavor though and kept the cupcakes REALLY moist.

Steps:

  • Make the cupcakes: Preheat the oven to 350˚ F. Line 12 muffin cups with paper liners. Whisk the flour, ground cookies, baking powder and salt in a medium bowl.
  • Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, scraping down the bowl occasionally, 3 to 5 minutes. Beat in the eggs, one at a time. Combine the milk and vanilla in a liquid measuring cup. 3 medium ripe bananas
1 (18 1/4 ounce) package yellow cake mix
1/2 cup vegetable oil

1 (3 ounce) package vanilla pudding mix
3 tablespoons butter
1 teaspoon vanilla extract
1 cup heavy cream
1 tablespoon sugar
2 medium ripe bananas, cut into 24 slices

Steps:

  • Heat oven to 350°F Grease 24 cupcake wells or line with paper liners. Count out 12 vanilla wafers for the garnish and set aside.
  • Place the remaining 24 vanilla wafers flat side down in the bottom of each cupcake well; set pans aside.
  • For the batter, mash the bananas with a fork until smooth, about 1 minute; you will have about 1 1/4 cups.
  • Place the cake mix, oil, milk, eggs, and vanilla in the bowl with the banana puree; blend with an electric mixer on low speed for 30 seconds. Scrape down sides of bowl.
  • Increase mixer speed to medium and beat another 2 minutes, scraping sides of bowl as needed.

  • Meanwhile, make the filling: Place the milk in a medium saucepan. Whisk in the pudding mix until blended.
  • Place pan over medium heat and continue to whisk as the mixture comes to a full boil, 3-4 minutes; remove pan from heat and stir in the butter and vanilla. Pour the pudding into a medium bowl and cool for 20 minutes.
  • While the pudding is cooling, make the topping: Crush the remaining 12 vanilla wafers; set aside.
  • In a large chilled bowl, whip the cream with an electric mixer (chilled beaters also) on high speed until thickened, 1 1/2 minutes. Stop the mixer and add the sugar; beat again until stiff peaks form, 1-2 minutes more.

  • Reduce speed to low. Mix mashed bananas, buttermilk, and vanilla in a bowl. Add dry ingredients to butter mixture in 3 additions, alternating with wet ingredients and ending with dry. Scrape sides of bowl. Stir pecans into batter. Divide batter among muffin cups, filling each 2/3 full.
  • Bake cupcakes until testers inserted into centers come out clean, about 20 minutes. Let cool in tins on wire racks. (Unfrosted cupcakes will keep, covered, for up to 3 days.) Once cupcakes are cool, frost tops with caramel buttercream. Frosted cupcakes will keep, covered and refrigerated, for up to 2 days. Top with banana slices before serving.
