King Arthur Flour's Banana Crumb Muffins image

A hearty loaf of banana bread is an excellent way to use up a pile of leftover bananas, but sometimes you want a lighter option. These tender banana muffins are crowned with a delightfully crunchy cinnamon crumb topping that lends to their addictive nature. The easy recipe, which doesn't require any special equipment - just a couple of bowls - was adapted from one originally developed by a 9-year old named Meghan Cwikla. With it, she won the junior division at the 1997 State Baking Contest at the Connecticut State Fair.

Number Of Ingredients 12

1/2 cup King Arthur unbleached all-purpose flour
1/4 cup sugar
1 teaspoon cinnamon
4 tablespoons (1/2 stick) butter or margarine, room temperature
1 1/2 cups King Arthur unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 large, ripe bananas, mashed
3/4 cup sugar
1 egg, slightly beaten
1/3 cup butter or margarine, melted

Steps:

  • For the topping, in a medium bowl, mix flour, sugar and cinnamon. Add butter or margarine and mix with a fork or pastry cutter until crumbly. Put aside while preparing muffin batter.
  • For the muffins, in large bowl, combine dry ingredients. Set aside.
  • In another bowl, combine mashed bananas, sugar, slightly beaten egg and melted butter or margarine. Mix well. Stir into dry ingredients just until moistened.
  • Fill greased muffin cups two-thirds full. (Do not use paper muffin cups!) Using hands, arrange coarse, pea-sized crumbs over muffin batter.
  • Bake at 375 degrees for 18 to 20 minutes or until muffins test done with a cake tester. Cool in pan 10 minutes before removing to a wire rack.

3 large ripe bananas, mashed

TOPPING:
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon cold butter

Steps:

  • In a large bowl, combine dry ingredients. Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups three-fourths full. Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins. , Bake at 375° for 18-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

4 tablespoons dairy-free margarine (or applesauce)

Steps:

  • Preheat oven to 350.
  • In a medium bowl, mash the bananas with oil (or applesauce) and sugar and mix well.
  • In a small bowl, sift salt, baking soda and 2 cups of the flour.
  • Add the dry mixture to the banana mixture and stir by hand until the two are thoroughly combined. Fold in the berries.

1/4 cup margarine (melted or oil)
2/3 cup blueberries
1/4 cup brown sugar
2 tablespoons whole wheat flour
1/8 teaspoon ground cinnamon
2 tablespoons oats
1 tablespoon margarine

Steps:

  • Preheat oven to 375°F.
  • In a large bowl, mix together flour, baking soda, baking powder and salt, cinnamon.
  • In another bowl, beat together bananas, sugar, corn syrup, egg and melted margarine. Stir the banana mixture into the flour mixture just until moistened.
  • Add blueberries. Spoon batter (1/4 cup at a time) into muffins cups.
  • In a small bowl, mix together brown sugar, flour, oats and cinnamon. Cut in margarine. Sprinkle topping over muffins. Makes 10 muffins.
  • Bake for 18 to 20 minute.

3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
6 ripe bananas, smashed
2 eggs, lightly beaten
1 cup melted butter
1 tablespoon vanilla
1/4 cup very cold stick butter
1/2 cup flour
1/8 cup sugar
1 teaspoon cinnamon

Steps:

  • PREHEAT OVEN TO 375.
  • MUFFIN MIX:.
  • 1. In a large bowl, combine the dry ingredients for the MUFFIN MIX.
  • 2. In another bowl, combine the bananas, sugar, egg, vanilla and butter and mix well.
  • 3. Stir the wet ingredients into the dry until combined.
  • 4. Fill (either greased muffin cups or paper lined muffin cups) 3/4 full with mixture.
  • CRUMB TOPPING:.
  • 1. Combine the flour, sugar and cinnamon.
  • 2. Cube the VERY COLD STICK BUTTER and toss into the dry ingredients.
  • 3. Best way to do this is with a pastry blender. They are inexpensive tools that you can find at any store that sells cooking supplies (Walmart, Target, Kmart -- etc.) "CUT" the butter into the dry ingredients until you get a crumb mixture. It's ok to have larger chunks because they will become the best crumbs after they cook. "CUTTING" just means to mash together the butter and dry ingredients. You can do this with the tines of a fork too, but it's harder work ;).
  • 4. Sprinkle crumb topping over the muffins and bake for 25 minutes, or until a toothpick or knife poked in the center of the muffin comes out dry.

Steps:

  • Pre heat oven to 190c
  • Grease a muffin tin with butter
  • Combine all of the muffin ingredients in a bowl and mix well - a food processor will also do a very good job
  • Pour into the muffin tin until each well is 3/4 full
  • Combine the sugar and flour for the topping in a separate bowl and cut in the butter until the mixture goes crumbly (like an apple crumble topping)
  • Add the topping mixture to the top of each muffin
  • Place in the over for 20 minutes or until golden brown
  • Cool on a rack and then serve

TOPPING:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 large egg
1 1/3 cups mashed, ripe bananas (about 2 med-large)
1/4 cup canola or vegetable oil
1/2 cup vanilla yogurt or Greek yogurt (or plain)
3/4 cup sugar
3/4 cup quick-cooking oats, uncooked
1 tablespoon butter, softened slightly
2 tablespoons all-purpose flour
scant 1/4 teaspoon cinnamon
1/4 cup finely chopped pecans
1/4 cup light brown sugar, packed

Steps:

  • Set the butter for Topping out to soften in a small mixing bowl. Grease or paper line the cups of a standard size muffin pan. Preheat oven to 375F. Coarsely mash the bananas. Set aside. In a medium bowl, lightly whisk the egg. Whisk in the mashed bananas, oil, yogurt, and sugar. Add the dry oats, whisking just until incorporated. Set aside for at least 10 minutes. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and nutmeg. To the small bowl with the butter, add remaining Topping ingredients, combine until crumbly with your fingers, fork, or knife. Set aside. Fold the banana mixture into the flour mixture, mixing just until incorporated. Do not overmix. Fill muffin cups 3/4 full. (They don't rise a lot.) Sprinkle tops with the crumb mixture. Bake for 20 - 24 minutes or until center tests done with a toothpick. Cool in pan on a wire rack for 5 minutes; then remove muffins to rack to cool completely.

1/4 teaspoon ground cinnamon
1 tablespoon butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease 12 muffin cups, or line with muffin papers.
  • In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg, vanilla & melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
  • In a small bowl, mix together brown sugar, 2 tablespoons flour, cinnamon & nutmeg. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
  • Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
