Not sure what to do with those slightly overripe bananas? Make some of these delicious dessert bars! By far the most difficult part will be waiting for the bars to cool completely before diving in. As well as the bananas, the bars feature brown sugar, old-fashioned oats, orange zest, orange juice, and dried cranberries. It's a medley of fruit flavors that are delicious when they're all put together. This recipe is super-easy to make since it basically all comes together in the food processor. It's so fun to bake that you'll find yourself experimenting with different fruits as the seasons change.

1 Tbsp Light butter softened
0.25 cup(s) Unpacked brown sugar
1 cup(s) Uncooked old fashioned oats
0.5 cup(s) All-purpose flour
0.5 tsp Baking powder
2 tsp Orange zest
0.667 cup(s) Unsweetened orange juice
3 Tbsp Dried cranberries
1 large Banana(s) chopped

Steps:

  • Preheat oven to 400°F. Coat an 8 x 8-inch baking pan with cooking spray.
  • Put butter, brown sugar and banana in a food processor and process until smooth. Add oats, flour and baking powder and pulse until blended. Add zest, juice and cranberries and pulse until a smooth batter forms with bits of cranberry throughout.
  • Spread batter in baking pan and smooth top with a wooden spoon. Bake until firm and golden brown, about 35 to 40 minutes. Cool completely before cutting into 8 bars.

2 ½ cups white sugar
1 cup shortening
3 eggs
3 mashed bananas
1 cup cranberry sauce
½ cup milk
1 teaspoon vanilla extract
4 cups all-purpose flour
1 ½ teaspoons baking soda
1 ½ teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
  • In a large bowl, cream together the sugar and shortening until light and fluffy. Beat in eggs, and mix in bananas, cranberry sauce, milk, and vanilla. In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, and nutmeg. Gradually blend flour mixture into the banana mixture. Fold in walnuts. Pour into the prepared loaf pans.
  • Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely.

1 cup butter, softened
1 cup packed brown sugar
2 cups quick-cooking oats
1-1/2 cups plus 2 tablespoons all-purpose flour, divided
2 cups dried cranberries
1 cup sour cream
3/4 cup sugar
1 large egg, lightly beaten
1 tablespoon grated lemon zest
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Combine oats and 1-1/2 cups flour; add to the creamed mixture until blended. Set aside 1-1/2 cups for topping. , Press remaining crumb mixture into an ungreased 13x9-in. baking pan. Bake 10-12 minutes or until lightly browned., Meanwhile, in a large bowl, combine the cranberries, sour cream, sugar, egg, lemon peel, vanilla and remaining flour. Spread evenly over crust. 1 (10 ounce) package yellow cake mix
1 cup mashed banana
3/4 cup dried cranberries
1/4 softened butter
3 eggs
1/3 cup water
1/2 cup finely chopped pecans
powdered sugar

Steps:

  • Spray a 13x9 pan with cooking spray and preheat the oven to 325 degrees. In a large bowl smash your bananas with a fork. Add cake mix, cranberries, butter, eggs and water. Beat at low speed until combined then at medium speed for 1 minute. Put batter in sprayed pan and top with pecans.
  • Bake 20-30 minutes or until edges are light golden brown. Cool completely before removing them from the pan. If you would like sprinkle them with powdered sugar.

1 teaspoon vanilla extract
