Number Of Ingredients 15

3/4 cup firmly packed brown sugar
3/4 cup butter
2/3 cup mashed ripe banana
1 large egg
2 teaspoons fresh grated orange zest
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons butter
3 tablespoons firmly packed brown sugar
3 tablespoons whipping cream
1 cup powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • Heat oven to 350°.
  • In large mixing bowl, mix 3/4 cup brown sugar & 3/4 cup butter.
  • Beat at medium speed, scraping your bowl often until mixture is creamy 1-2 minutes.
  • Add in the bananas, egg, orange zest & 1/2 tsp vanilla extract.
  • Continue beating batter until well mixed 1-2 minutes.
  • Reduce speed to low & add the flour, baking powder, baking soda & salt.
  • Beat until well mixed again, 1-2 minutes.
  • By round teaspoons, drop the dough 2-inches apart onto ungreased cookie sheets.
  • Bake 8-10 minutes or until edges have slightly browned.
  • On medium heat, melt 2 Tbsp butter in 1-quart saucepan, adding 3 Tbsp brown sugar & cream.
  • Continue to cook, while stirring occasionally until mix comes to a boil 1-2 minutes.
  • Remove from heat & add powdered sugar & remaining vanilla, beat until well mixed.
  • When cookies have cooled, frost them with icing.

You can all nut or peanut butter to the batter if desired even a few mini chocolate chips. Do your own thing. 3/4 cup(s) real butter,softened
3/4 cup(s) brown sugar, firmly packed
2 medium over ripe bananas, mashed with a fork
1 large egg
2 teaspoon(s) freshly grated orange zest
1/2 teaspoon(s) vanilla
2 cup(s) all purpose flour
1/2 teaspoon(s) each of baking powder and soda
1/4 teaspoon(s) salt
ICING:
2 tablespoon(s) real butter
3 tablespoon(s) brown sugar, firmly packed

1 1/4 cup(s) powdered sugar

- orange zest grated for garnish

Steps:

  • Heat oven to 350^. Combine butter, and brown sugar in a large bowl. Beat at medium speed, until creamy. Add bananas, egg, orange zest and vanilla, continue beating until well mixed.
  • Reduce speed to low; add flour, baking powder, soda and slat. Beat until well mixed. Mix in any add in's if desired. Blend well. Chill dough in refrigerator for 30 minutes.
  • Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake for 8-to 12 minutes or until edges are lightly browned. Cool completely before icing them.
  • Icing: Melt butter in a 1 quart saucepan over medium heat . Add the brown sugar and cream. Cook and stir until mixture comes to a boil. Remove from heat. Add powdered sugar and vanilla; beat until well mixed; cool slightly. Frost cooled cookies and garnish with grated orange zest. Let frosting set.

2-1/2 cups Master Cookie Mix

4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup mashed ripe banana
½ cup sour cream
1 teaspoon vanilla extract
1 cup margarine

½ cup unsalted butter
1 cup brown sugar
¼ cup milk, or more as needed
2 ½ cups powdered sugar, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
  • Combine flour, baking powder, and salt in a large bowl. Stir mashed banana, sour cream, and vanilla together in another bowl.
  • Cream margarine and sugar in a large bowl with an electric mixer. Beat in eggs. Mix in banana-sour cream mixture until incorporated. Add dry ingredients until well combined. Stir in nuts.
  • Drop small spoonfuls of batter onto the prepared cookie sheet; cookies do not expand much in the oven.

Another great banana cake but with a blast of citrus; gives it an added zing! It is lower in fat than some and I quite often make it without the icing so it is not too sweet either. I often add something extra as well...often a handful of dried cranberries really sets it off. I usually bake it in a tube pan but that is my personal preference. This recipe originated in "Lighthearted Everyday Cooking" by Anne Lindsay.
