A delicious banana coffee cake made with ripe mashed bananas and a crisp, crumbly, streusel topping!

6 Tablespoons butter melted
1 1/4 cup all-purpose flour
1/2 cup light brown sugar tightly packed
1/3 cup sugar
3/4 teaspoon ground cinnamon
¾ cup unsalted butter (softened to room temperature)
3/4 cup sugar
3 very ripe bananas (mashed (1 ½ cups))
2 large eggs (lightly beaten (room temperature preferred))
1½ teaspoon vanilla extract
2 Tablespoons sour cream
1 1/3 cup all-purpose flour
¾ teaspoon baking powder
1/2 teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon salt
1/2 cup powdered sugar
2-3 teaspoons milk

Steps:

  • Preheat oven to 350F and lightly grease and flour a 9x13 baking pan. Set aside.
  • Combine butter and sugar in the bowl of a stand mixer (or in a large bowl and use an electric mixer). Beat until well-combined, then stir in mashed bananas.
  • Add eggs, stirring well after each addition, and then add sour cream and vanilla extract and stir well.
  • In a separate, medium-sized bowl, whisk together your flour, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to wet, stirring until completely combined (be sure to scrape down the sides and bottom of the bowl). I prefer to do this with a spatula to avoid over-mixing the batter.
  • Pour batter evenly into prepared 9x13 pan. Prepare Streusel.

1 1/4 cups cake flour (not self-rising)
1 cup unsweetened cocoa powder (not Dutch-process)
1 teaspoon baking soda
3/4 teaspoon salt
2 very ripe bananas, mashed
1/2 cup sour cream
1 stick (1/2 cup) unsalted butter, softened
1 cup granulated sugar
1/2 cup firmly packed light brown sugar
2 extra-large eggs
1 tablespoon coffee extract, or 1 tablespoon instant espresso powder dissolved in 1 tablespoon hot water
1 teaspoon vanilla extract
Garnish: confectioners' sugar

Steps:

  • Preheat oven to 350°F. and grease and flour a 10-inch (3-quart) bundt pan, knocking out excess flour.
  • Into a large bowl sift together flour, cocoa powder, baking soda, and salt. In a small bowl stir together bananas and sour cream. In another large bowl with an electric mixer beat together butter and sugars until light and fluffy and add eggs, 1 at a time, beating well after each addition. Beat in coffee extract (or espresso) and vanilla. Beat in flour mixture in batches alternately with banana mixture, beginning and ending with flour mixture, until batter is just combined.
  • Spoon batter into pan and bake in middle of oven 50 minutes, or until a cake tester comes out clean and cake pulls away from side of pan. Cool cake in pan 10 minutes and invert onto a rack to cool completely. Let cake stand, wrapped tightly, at room temperature overnight.
  • Dust cake with confectioners' sugar.

2/3 cup granulated sugar

2 2/3 cups Original Bisquick™ mix
3/4 cup chopped walnuts or pecans
1 cup Original Bisquick™ mix
1/2 cup chopped walnuts or pecans
1/2 cup packed brown sugar
6 tablespoons butter, cut into small pieces
Maple syrup

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray.
  • In large bowl, stir mashed bananas, granulated sugar, milk, oil, cinnamon and eggs. Stir in 2 2/3 cups Bisquick mix and 3/4 cup walnuts; fold in banana slices. Pour mixture into pan.

1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1-1/4 cups sugar
2 eggs
1 cup mashed ripe bananas (about 2 to 3 medium)
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
TOPPING:
1 cup chopped pecans
2 tablespoons sugar
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, beat the cream cheese, butter and sugar until blended. Add eggs, one at a time, beating well after each addition. Add the bananas and vanilla. Combine flour, baking powder and baking soda; gradually add to the creamed mixture. Combine topping ingredients; add half to batter. , Transfer to a greased 13x9-in. baking pan.
