BABY FOOD BANANA BREAD
Ah, back in the days when I was a new mother, I had to come up with creative ways to use all the extra baby food I had lying around that my young daughter refused to eat. After several attempts, I finally came up with this version.

Steps:
- Mix together sugar and butter in a microwaveable dish and cook on HIGH heat just long enough for it to soften up- maybe 30 seconds, but not to melt it completely.
- Remove and stir to combine.
- Mix together baby food, over-ripe bananas, lime juice, eggs,vanilla,extract, and buttermilk.
- Mix in the butter mixture gradually, so as not to cook the eggs.
- It will look a little curdly from the lime juice- this is normal and will go away upon baking.
- Combine all dry ingredients together in a large bowl, then add the wet mixture and stir with a wooden spoon just enough to combine the ingredients and moisten them- pressing out any big lumps with your spoon (don't overmix).
- Pour into a greased and floured loaf pan (9x5") and bake in a preheated oven at 350 F (180 C) for about an hour or until a toothpick tests clean.
- Let cool completely before serving or it will fall apart.

BANANA BREAD FOR BABY
A variation on my usual banana bread with added spinach, molasses substituted for sugar & made dairy free. Freezes great in slices for a quick, nutritious breakfast or snack for baby & toddler.

Steps:
- Mix wet ingredients together in blender or food processor, adding oats gradually.
- Stir dry ingredients together in a large mixing bowl. Add wet ingredients & stir.
- Stir batter only enough to completely mix ingredients; don't over mix which will toughen the bread.
- Pour batter into greased pans (sprinkled with granulated sugar if you want a crunchy sweet crust) and bake at 350 for 45 minutes-1 hour-do the knife test to check doneness or until the middle of the loaf is set, being careful not to burn the top and bottom of the loaf.
- Bread will continue to cook in the middle after you take it out of the oven.

KID-APPROVED BANANA BREAD
This bread is moist and delicious, relatively low in fat, and constantly requested by my four kids for snacks or their school lunches. They even avoid eating all the bananas so there are enough left to ripen to black for banana bread! Freezes well too. Just cool fully and place in an airtight bag or container.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease a loaf pan.
- Beat brown sugar and butter together using an electric mixer in a mixing bowl until creamy. Add egg and beat on medium-high speed until mixture is light and fluffy, 1 to 2 minutes. Mash bananas using a fork and add to mixture, beating just until mixture is fairly smooth (some lumps are okay).
- Combine all-purpose flour, whole wheat flour, baking soda, baking powder, and salt in a separate bowl. Blend into banana mixture until just combined. Fold in chocolate chips. Pour into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Remove from the oven and let cool 5 minutes; turn pan over to release loaf and let cool further on a wire rack. Tastes best warm.
