3/4 cup wheat bran
1 cup all-purpose flour
3/4 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 pinch salt
1 teaspoon cinnamon
1 cup buttermilk
3/4 cup brown sugar
1/3 cup melted butter
2 eggs
3 ripe bananas
2 tablespoons orange juice
1 tablespoon grated orange rind
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)

Steps:

  • To make buttermilk if fresh is not available, combine 1 tbsp (15 ml) of white vinegar with milk.
  • Preheat oven to 350 °F (180 °C).
  • In a large bowl, stir together bran, both flours, baking powder, baking soda, salt and cinnamon; set aside.
  • In a medium bowl, beat together buttermilk, brown sugar, butter, eggs, bananas, orange juice and peel.
  • Fold into dry ingredients just until moistened.
  • Stir in raisins and walnuts and spoon batter into a buttered 9"x 5" (23 x 13 cm) loaf pan.
  • Bake for 55 to 60 minutes or until a toothpick inserted in the centre comes out clean.
  • For the adventurous:Add dried cranberries instead of raisins.

I made this yesterday from the recipe on the All-Bran packet. I just love this banana bread! It has a great taste and is low fat and high fibre! Perfect for morning tea or a snack. I like mine with just a little jam or peanut butter spread and served warm.

1 cup all-bran cereal
3/4 cup whole wheat flour
2 teaspoons baking powder
1/4 teaspoon bicarbonate of soda
1/4 cup 1% low-fat milk or 1/2 teaspoon powdered dry milk
1/2 cup caster sugar
1 egg
2 tablespoons water
1 cup mashed banana (approx 2 bananas)

Steps:

  • Preheat oven to 180 degree C.
  • Combine dry ingredients and add egg, water, milk and banana.
  • Mix until well combined.
  • Spoon into a greased loaf tin.
  • Bake in oven for 30-45 minutes or until cooked when tested.
  • Note- the original recipe says to cook for 45 minutes but mine was done at 30 minutes, so I suggest testing at 30 minutes so it dosn't overcook.

¼ cup canned pumpkin
1 very ripe banana, mashed
1 egg
2 egg whites
1 cup maple syrup
⅓ cup raw sugar, such as turbinado or demerara
1 tablespoon vanilla extract
2 cups grated unpeeled zucchini
2 cups whole wheat pastry flour
1 cup unprocessed bran
1 teaspoon salt
1 teaspoon baking soda
¼ teaspoon baking powder
1 tablespoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon ground ginger
¼ teaspoon ground allspice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan.
  • Stir together the pumpkin, banana, egg, and egg whites in a large bowl. Beat in maple syrup, sugar, and vanilla; the batter should be a bit frothy. Stir in zucchini; set aside.
  • Mix flour, bran, salt, baking soda, baking powder, cinnamon, nutmeg, cloves, ginger, and allspice in a separate bowl. Gradually add the flour mixture to the zucchini mixture, stirring just to moisten all ingredients. Over-mixing the batter will make it tough.

1 cup All-Bran
1 cup flour
1/3 cup sugar
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda

2 pieces eggs
1/4 cup butter / margarine
1 teaspoon Vanilla
1/2 cup walnuts

Steps:

  • Preheat oven to 350
  • Soften butter / margarine
  • Beat eggs and vanilla together
  • Mash bananas and mix in All-Bran, eggs, and vanilla. Set aside 5 minutes for cereal to soften.
  • Sift or stir flour, baking powder, baking soda, salt, and sugar in a bowl and set aside
  • Grease loaf pan
  • Add half of banana cereal mixture to flour & sugar. After stirring in add the other half and stir to thoroughly mix and moisten

1/2 cup unsalted margarine
3 eggs, well beaten
2 cups mashed bananas
2 cups shredded zucchini
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
2 cups all-purpose flour
1/2 cup wheat bran
2 teaspoons sodium-free baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup semi-sweet chocolate chips
6 tablespoons milk
1/2 tablespoon vinegar

Steps:

  • In large bowl, cream together sugar and margarine.
  • Add beaten eggs, bananas, zucchini, and vanilla.
  • In a separate bowl, combine flours, bran, baking powder, salt, cinnamon and nutmeg; add to creamed mixture and mix thoroughly.
  • Fold in chocolate chips.
  • Combine milk and vinegar in a small bowl to make sour milk and add to batter.

This is a nice high fiber, disgustingly healthy, bread but is also quite good. It is based on "Very Moist Banana Bread" - the best banana bread ever. This recipe is lighter and healthier and almost as tasty. Some banana tips: This bread is best with very ripe, black bananas. Put ripe bananas in the freezer. They will ripen a little more and stay usable for several months. The frozen bananas will thaw in less than an hour at room temperature. You can also ripen a banana in the microwave. Start with 30 seconds. Add 15 more seconds, continue until ripe.

5 bananas, very ripe
3 large eggs
1 teaspoon vanilla
3/4 cup unsweetened applesauce
1 cup sugar
1/2 teaspoon salt
1 cup Kellogg's all-bran cereal, original
1 1/4 cups flour
1/2 teaspoon cinnamon
1 1/3 teaspoons baking soda
1/4 cup low-fat buttermilk or 1/4 cup sour milk
1 cup pecans

Steps:

  • Heat oven to 350 degrees. Grease or spray 2 8" x 4" loaf pans.
  • In a large bowl, mash bananas.
  • Add eggs, vanilla, and applesauce and blend.
  • Mash the bran cereal (not flakes) and mix with flour.
  • Add remaining dry ingredients (except baking soda) and stir well.
  • Dissolve baking soda in milk. Put this in a container bigger than one cup. It will foam up a lot. [make sour milk by adding 1/2 teaspoon of vinegar].
  • Add milk mixture to rest of ingredients and mix well.
  • Fold in nuts and pour into greased pans.
  • Bake for about 1 hour and 5 minutes depending on your oven. Start checking for doneness at 55 minutes. (especially with Pyrex pans)
  • For a moist bread, a toothpick should come out almost clean. Totally clean will mean a dryer loaf.
  • After removing from oven, let cool for 15 minutes and remove from pans. Bread will freeze nicely.

1/4 cup egg substitute
1/2 cup unsweetened applesauce
1 cup all-bran cereal (not bran flakes)
3 teaspoons vanilla extract
3/4 cup whole wheat flour
3/4 cup all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3-1/2 cup sugar

Steps:

  • Beat together banana, egg substitute, applesauce, bran cereal, and vanilla.
  • Set aside.
  • In another bowl, mix whole wheat flour, all purpose flour, baking powder, baking soda, salt, and sugar.
  • Combine wet and dry ingredients, sitrring only until moistened.
  • Spoon batter into greased loaf pan.
