2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, at room temperature
2/3 cup granulated sugar
2/3 cup packed light brown sugar
1 teaspoon vanilla
1 egg
1 cup mashed ripe banana
2 cups semi-sweet chocolate chips
1 cup walnut pieces

Steps:

  • Preheat oven to 350°F Grease a 13x9 inch metal baking pan.
  • In a medium bowl, combine flour, baking powder and salt.
  • In a large bowl, using electric mixer, beat butter and granulated and brown sugars until light and fluffly. Beat in vanilla. Add eggs and bananas, beating well. Add flour mixture and beat just until combined. Fold in chocolate chips and walnuts.
  • Spread batter in prepared pan. Bake in preheated oven for 30 to 35 minutes or until light golden brown and starting to pull away from sides of pan. The center will be slightly soft to the touch.
  • Let cool completely in pan or rack. Cut into bars.

BLONDIES
1 1/2 c sugar
1 c sour cream
1/2 c butter, softened
2 eggs
3 1/2 - 4 very ripe bananas, mashed
2 tsp vanilla
2 c flour
1 tsp baking powder
3/4 c chopped pecans
BROWN BUTTER VANILLA FROSTING
3/4 c butter
6 c powdered sugar
2 1/4 tsp vanilla
4 1/2 Tbsp milk, plus more if needed

Steps:

  • 1. Preheat oven to 375 degrees. Spray 9x13 pan with non-stick spray.
  • 2. For the blondies: Beat together sugar, sour cream, butter and eggs until creamy. Blend in bananas and vanilla. Add flour and baking powder and mix until just combined. Stir in walnuts. Pour into prepared pan and bake 25-30 minutes or until wooden pick inserted comes out clean.
  • 3. For the frosting: A few minutes before the blondies are done, start making the frosting. Place butter in a large saucepan. Melt butter over medium heat and bring to a boil, whisking, until the butter turns a golden brown color. Remove from heat immediately. Whisk in powdered sugar, vanilla and milk. You can add additional milk if frosting is too thick.
  • 4. Pour and spread the warm frosting over the warm blondies. Allow to cool at least two hours before cutting and devouring.

2 1/2 sticks unsalted butter (1 1/4 cups), more for greasing pan
200 grams chocolate wafer cookies (to make about 3 cups crumbs)
55 grams light brown sugar (about 1/4 cup)
3 grams fine sea salt (about 1/2 teaspoon), plus a pinch
2 ripe bananas, mashed
2 large eggs
455 grams dark brown sugar (about 2 1/2 cups)
2 tablespoons dark rum or 1 teaspoon vanilla extract
130 grams all-purpose flour (about 1 cup)
80 grams toasted walnuts, chopped (about 1/2 cup)
Flaky sea salt, for sprinkling (optional)

Steps:

  • Heat oven to 375 degrees. Line a 9-by-13-inch baking pan with parchment, and grease with butter.
  • Melt 1 stick of butter in a saucepan over low heat or in microwave. Put the chocolate wafer cookies in the bowl of a food processor and process to make fine crumbs. Add the light brown sugar, melted butter and a pinch of salt. Process until the mixture is the consistency of damp sand. Dump the mixture into the pan and press it into an even layer. Bake for 7 to 10 minutes, or until the surface is firm. Remove the pan and set aside.
  • Reduce oven heat to 350 degrees.
  • In a large skillet over medium heat, melt 12 tablespoons butter, then let it cook until the foam subsides and butter turns a deep nut brown, about 5 minutes. Cool.
  • In a large bowl, whisk together bananas, eggs, dark brown sugar and rum. Whisk in brown butter. In a separate bowl, whisk together flour and fine salt. Fold into batter along with the toasted walnuts. Pour the mixture over the prepared crust and spread evenly. Sprinkle top with flaky salt if using.
  • Transfer pan to oven and bake until the top is firm and a toothpick inserted in the center emerges with a few crumbs attached (or clean) but not wet, 45 to 55 minutes. Cool completely on a wire rack; cut into 24 bars.

I found this recipe on a blog, it was actually a cake, I played with it a little bit because I was looking for more of a brownie texture...or Blondie! :) They are super Yummy! Enjoy! *This recipe could easily be halfed and put in a 8x8 square pan, bake 25-30 min then.

2 1/2 c flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 c sugar
1/2 c brown sugar
2/3 c butter, softened
2 tsp vanilla
2 eggs
2-3 medium bananas, mashed with 1 t lemon juice, do not add more that 1c of mashed bananas
1 1/2 c semi sweet chocolate chips

Steps:

  • 1. Preheat oven to 350. Spray a 9x13 pan and set aside. In a medium size bowl, sift together flour, soda, powder salt and set aside. In a large bowl cream together sugars, butter and vanilla. Add eggs and bananas, mix until smooth. Add dry ingredients to wet and mix until just mixed, stir in chips evenly. Pour into the prepared pan and bake 35-40 minutes. Cool in pan on wire rack. Sprinkle powdered sugar over the top if desired.

These are fudgy and rich! I've used peanut butter for ease but you can replace with cashew or almond butter as long as they're quite liquidy ones. I like to decorate them with a sliced banana on the top before baking but it's not necessary if you don't want to put them on there.

3/4 cup unsalted butter
1/4 cup plus 3 tbsp peanut butter or 1/4 cup other nut butter
1 cup granulated sugar
1/2 cup light brown sugar
2/3 cup mashed banana
1 teaspoon vanilla extract
2 2/3 cups whole wheat pastry flour
4 ounces dark chocolate, chopped into large chunks
2 whole bananas

Steps:

  • Preheat the oven to 350oF, line an 8-inch square brownie tin with baking paper.
  • Melt the butter and peanut butter together in a large pot over a low heat, stirring often. Once melted, take off the heat, and stir in the sugar, mashed banana and vanilla. Mix in the flour and pour into the prepared brownie tin.
  • Top with the chocolate chunks. Peel the whole bananas and cut in half lengthways. Place cut-side up on top of the batter as well.

I loved the idea of combining peanut butter, coconut milk and some sort of chips into a decadent yet not too sinful dessert, so I played with the recipe and this is my version. 3/4 cup whole wheat flour
1/4 cup flour
3/4 teaspoon baking powder
1 pinch salt
1/8 cup peanut butter chips
1/8 cup cinnamon baking chips
1/4 cup semi-sweet chocolate chips
1 banana (ripe)
1 tablespoon ground flax seeds
4 tablespoons water
1/8 cup water
1/4 cup coconut milk
1 1/2 tablespoons peanut butter (for swirling)

Steps:

  • In a large bowl combine all of the dry ingredients including the three types of chips.
  • In a microwave safe bowl microwave the banana for about 2 minutes on high or until slightly melted and fragrant. Add the flax seeds and the 4 tbs of water. Microwave again for 45 seconds. Stir to combine making sure to mash up the banana (I used a fork for this). Add coconut milk and remaining 1/8 cup of water.
  • Add wet ingredients to the dry and stir until a thick batter has formed (you might need to add a tad more water, but it should be quite stiff).
  • Fill batter into a brownie tin or standard muffin tin that holds six muffins. Top either the dough in the brownie tin or each muffin with a bit of the peanut butter and swirl that into the batter.
  • Bake in the preheated oven at 175°C/350°F for about 20 minutes or until nicely browned and almost set. Baked in a brownie tin this will take longer, probably up to 30 minutes.
  • Allow to cool in the tin for 5 minutes, then remove to a wire rack to cool completely.
