½ cup natural peanut butter
½ cup dark chocolate, melted
1 tablespoon coconut oil

Steps:

  • Place wax paper on a large baking sheet.
  • Slice bananas into ½-inch (1 cm) thick rounds.
  • Spread peanut butter on a slice of banana, then top with another slice.
  • Lay the bites on the prepared baking sheet and freeze until solid, for about an hour.
  • In a small bowl, melt dark chocolate with coconut oil until smooth.
  • Remove frozen banana bites from the freezer. Dip the bites into the melted chocolate, place back on the wax paper.
  • Freeze for an additional hour.
  • Can be stored in an airtight container in the freezer for up to 2 weeks.

1/4 cup packed brown sugar
1-1/2 teaspoons ground cinnamon
BEIGNETS:
2 cups cake flour
3/4 cup sugar
2-1/2 teaspoons baking powder

1 teaspoon salt
1 large egg, room temperature
1 cup mashed ripe bananas (about 2 medium)
1/2 cup 2% milk
2 tablespoons canola oil
Oil for deep-fat frying

Steps:

  • In a small bowl, mix sugars and cinnamon until blended. In a large bowl, whisk the first 5 beignet ingredients. In another bowl, whisk egg, bananas, milk and 2 tablespoons oil until blended. Add to flour mixture; stir just until moistened., In an electric skillet or deep fryer, heat oil to 375°. Drop tablespoonfuls of batter, a few at a time, into hot oil. Fry about 45-60 seconds on each side or until golden brown. Drain on paper towels. Roll warm beignets in sugar mixture.

  • Cover a baking sheet with waxed paper.
  • Spoon a thin layer of peanut butter on top of each banana slice. Insert a toothpick through the peanut butter layer into the banana. Place banana bites onto the prepared baking sheet; freeze for 30 minutes to overnight.
  • Melt chocolate and shortening in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.

¼ cup full-fat coconut milk
2 cups dark chocolate
¼ cup coconut oil
¾ cup crispy rice cereal

Steps:

  • Cut the bananas into slices and place into a freezer safe bag. Freeze until solid.
  • In a food processor or blender, add frozen bananas, vanilla bean or vanilla extract, and coconut milk. Blend until smooth.
  • Line a baking dish with parchment paper. Evenly distribute the banana mixture into the baking dish.
  • Freeze for at least two hours.
  • Before taking out the ice cream, add dark chocolate and coconut oil into a bowl. Microwave for 1 ½ minutes, stirring after every 30 seconds, until fully melted.

6 tablespoons melted unsalted butter, cooled

3 tablespoons Bourbon
2 (8 ounce) blocks cream cheese

  • Spray two large silicone muffin tins with nonstick spray. In a large bowl, combine the vanilla wafer crumbs with the melted butter and 2 tablespoons sugar until evenly incorporated. 3 Kellogg's® Eggo® Homestyle Waffle
5 strawberries
2 canned pineapple rings, drained and cut into 12 total pieces
¾ cup frozen non-dairy whipping topping, thawed
12 slices ripe banana
2 tablespoons chopped pecans
Chocolate ice cream syrup

Steps:

  • 1.Prepare Kellogg's® Eggo® Homestyle waffles according to package directions. Cut each waffle into four triangles.
  • 2.On waffle pieces layer strawberry slices, pineapple pieces and whipped topping. Top each with one banana slice. Drizzle with chocolate syrup. Sprinkle with pecans. Serve immediately.
