BANANA FLIP CAKE

- Line two greased 15x10x1-in. baking pans with waxed paper and grease the paper. Set aside., In a large bowl, combine the cake mix, pudding mix, milk and eggs. Beat on low speed for 30 seconds; beat on medium for 2 minutes., Spread batter into prepared pans. Bake at 350° until a toothpick inserted in the centers come out clean, 12-15 minutes. Cool for 5 minutes before inverting onto wire racks to cool completely. Gently peel off waxed paper., Meanwhile, in a small saucepan, whisk flour and milk until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; cover and cool to room temperature., In the bowl of a heavy-duty stand mixer, cream the butter, shortening and sugar until light and fluffy. Beat in vanilla. Add milk mixture; beat on high until fluffy, 10-15 minutes., Place one cake on a large cutting board; spread top with frosting. Top with remaining cake; sprinkle with confectioners' sugar. Cut into squares. If desired, top with whipped topping and sliced bananas. Refrigerate leftovers.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 9x13 inch pans.
- In a large bowl, stir together the cake mix and instant pudding. Beat in the eggs and 1 1/2 cup of milk. Divide the batter evenly between the two pans.
- Bake in preheated oven for 15 to 17 minutes, or until a wooden toothpick inserted into the cake comes out clean. While the cake is baking, make the filling.
- Stir together the sugar and flour. In a medium bowl, cream together the butter, shortening and sugar mixture. Beat in the milk and banana extract until smooth.
- When the cake is cooled, invert onto a serving tray. Spread filling over the top and cover with remaining layer of cake. Keep chilled until 1/2 hour before serving.

BANANA PANCAKE SANDWICH AND PEANUT BUTTER MAPLE SPREAD

- Whisk together the flour, sugar, baking powder, baking soda, salt and cinnamon in a large bowl. Add the buttermilk and eggs. Whisk together, gradually incorporating the flour mixture, just until combined. Add the banana slices and gently combine; the batter may be slightly lumpy. Let stand 10 minutes.
- Place a griddle pan over medium heat. Add the canola oil and butter. Using a ladle, pour 1/2 cup batter for each pancake, roughly 2 inches apart. When small bubbles appear across the surface of the pancakes and the edges lift from the griddle, flip and continue cooking until the pancakes are golden brown on the second side, about 4 minutes per side. Continue with the remaining batter.
- In a small dish using a rubber spatula, mix the peanut butter and maple syrup until combined. For each sandwich, spread some peanut butter mixture over a pancake, then top with another pancake.
BANANA AND MAPLE FLIP
I've never heard of a flip as a drink before so when I came across this recipe, I had to put it up.

- 1. Put the banana,yogurt,egg and maple syrup in a food processor or blender. Add 2 tbsp chilled water.
- 2. Process the ingredients constantly for about 2 minutes or until the mixture turns a really pal,creamy color and has a nice frothy texture.
- 3. Pour the banana and maple flip into a tall chilled glass and serve immediately. Decorate the glasses with a orange or lime slice, if you like.

- Soak matzos in cold water for 5 minutes. Drain in a colander. Mash banana with maple syrup using a fork. Whisk in oil, egg, and salt. Gently stir in matzos. Heat 1 tablespoon oil in a medium skillet over medium heat. Spread matzo mixture evenly in skillet, pressing gently. Cook until underside is golden, about 4 minutes. Flip using a spatula (mixture will break up). Cook until underside is golden, about 5 minutes. Transfer to plates. Top with banana slices, and drizzle with maple syrup.
