So easy, you might decide pancakes are just convenient enough to eat for dinner. For a change of taste, you can add fruit, like berries or bananas, and still make light and fluffy pancakes.

Yield Makes nine 4-inch pancakes

Number Of Ingredients 7

1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 large egg, lightly beaten
1 cup milk
2 tablespoons unsalted butter, melted, plus 1/2 teaspoon for griddle

Steps:

  • Heat griddle to 375 degrees or griddle pan over medium-high heat. Whisk flour, baking powder, salt, and sugar in bowl. Add egg, milk, and 2 tablespoons butter; whisk to combine. Batter should have small to medium lumps.
  • Heat oven to 175 degrees. Test griddle by sprinkling a few drops of water on it. If water bounces and spatters off griddle, it is hot enough. Using pastry brush, brush remaining 1/2 teaspoon butter onto griddle. Wipe off excess.
  • Using a 2-ounce ladle, about 1/4 cup, pour pancake batter in pools two inches away from each other. When pancakes have bubbles on top and are slightly dry around the edges, 2 1/2 minutes, flip over. Cook until golden on bottom, 1 minute.
  • Repeat with remaining batter, keeping finished pancakes on heat-proof plate in oven.

QUICK SOURDOUGH PANCAKES



Quick Sourdough Pancakes image

This is a great way to use some of your starter without waiting overnight. I made about 4 different recipes to come up with this recipe. I added and subtracted till I got the mix that I likes not to thin not to thick. Hubby is hard to please and even he likes it.

1 cup sourdough starter
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons melted butter (if using salted omit extra salt)
1 egg
2 tablespoons sugar
3/4 cup milk

Steps:

  • mix flour,baking soda, sugar and salt.
  • add starter,butter.milk and the egg.
  • Mix well - Some lumps are fine.
  • let sit for a minute or two while heating your skillet. I use a cast iron skillet lightly oiled.
  • when pan is hot drop by 1/8 c amounts
  • cook until bubbles appear and then flip after about 45 seconds they are done.
  • remove from pan and serve as you like with syrup or fruit.

Pancakes that can be stirred up as fast as a mix. As a young cook, I tried mixes but most called for an egg and oil. So I thought since I had to get these out anyway, I may as well skip the mix and use my own flour and milk also. This is what I came up with.

Yield 6-8 medium pancakes, 4 serving(s)

Number Of Ingredients 5

1 1/2 cups self rising flour
1 tablespoon sugar
3 tablespoons vegetable oil
1 large egg
1 cup milk

Steps:

  • Place flour, sugar, oil, and egg in a bowl. Whisk in milk until smooth.
  • Pre-heat a non-stick skillet over medium heat. Lightly oil or grease skillet with vegetable shortening.
  • Test skillet by using a small amount of batter. It should gently puff up after about 30 seconds.
  • Discard test piece and ladle about 1/2 cup batter into skillet.
  • I like to think that I am actually baking on top of the stove. If the skillet is too hot, the outside will burn before the middle is done enough to turn.
  • Let cook until bubbly on top and under side is a golden brown. flip and cook till golden brown.
  • I have fun with this by making my childrens initials (thick block style letters). Also, you can drizzle a design on the hot skillet and then ladle pancake batter over this. When flipped, the drizzle design will show up. You can put the batter in a squeeze bottle to really be precise. This really delights small children and lets your 'almost grown' teen-agers know that they will always be your babies.
